EASY BLUEBERRY HAND PIES

Flour, for dusting
One 14.1-ounce box refrigerated pie crust (2 crusts total)
2 cups blueberries
3 tablespoons sugar
2 teaspoons lemon zest, plus 1 tablespoon fresh lemon juice
1 large egg
Sanding sugar, optional

Steps:

  • Preheat the oven to 425 degrees F and line 2 rimmed baking sheets with parchment or silicone baking mats.
  • Lightly flour your work surface then unroll the pie crusts. Cut out as many circles as possible from each crust using a 3- to 4-inch round cookie cutter, rerolling the dough scraps if necessary.
  • Arrange half of the circles on the baking sheets, spacing them at least 1 inch apart (these are the bottom crusts). Set aside the remaining circles (these are the top crusts).
  • Stir together the blueberries, sugar, lemon zest and lemon juice in a medium bowl. Divide the blueberry mixture among the bottom crusts, leaving a 1/4-inch border around each circle.
  • Top each bottom crust with 1 of the top crusts and crimp the edges together with a fork. Cut small slits in each top crust to vent steam. (Alternatively, cut out shapes with a smaller cookie cutter from each top crust.)
  • Beat the egg with 1 tablespoon water then brush onto the top crusts. Sprinkle sanding sugar on top then bake the hand pies until golden brown and the blueberry juice is bubbling, about 15 minutes.

2-4 tablespoons cold water
3 cups apples, peeled and cubed, the smaller the better, or 2 large apples ((approximately))
1/2 teaspoon cinnamon (optional)
1/4 cup brown sugar
1/2 teaspoon cinnamon, ground
1 cup blueberries, strawberries, raspberries or blackberries
1 tablespoon sugar
1 tablespoon corn starch
1/3-1/2 cup your favorite jam works in a pinch too!
butter, melted
egg white, beaten
water
coarse sugar or cinnamon sugar (optional)
3 tablespoons sugar
1 1/2 teaspoons cinnamon, ground
2-3 tablespoons coarse sugar

Steps:

  • Get out and measure all of your ingredients.
  • Make pie crust by cutting and mashing together flour, butter and salt. Add cold water (1 tbsp at a time until you have a gravel like texture.
  • Then, using your hands, quickly knead into a ball.
  • Wrap dough ball in plastic, then refrigerate for 20 to 30 minutes.

3 tbsp butter
4 tbsp demerara sugar
2 small eating apples , peeled, cored and diced
pinch each ground allspice and cinnamon
75g blueberry
500g pack puff pastry
little plain flour for rolling
1 egg , beaten

Steps:

  • First make the filling: melt the butter and 3 tbsp of the sugar in a medium saucepan. Stir in the apples and spices and cook for 5 mins, until the fruit is slightly softened but not cooked. Remove from the heat and stir in the blueberries.
  • Roll the pastry out on a lightly floured surface to £1 coin thickness. Cut out 8 x 11cm squares. Prick the squares all over with a fork and transfer to a baking tray.
  • Divide the filling between the pastry squares, spooning it into the centre of each square. Bring the four corners into the centre of each square and pinch together edges using a little of the egg to help stick. Brush all over the danishes with the rest of the egg. They can be covered and chilled for a few hours now.
  • Heat oven to 220C/200C fan/gas 7. Dust with the remaining demerara and cook for 20 mins until the pastry is golden. Don't worry if they pop open while cooking - they look even prettier.

3 cups blueberries
1/2 cup granulated sugar
3 tablespoons cornstarch
2 teaspoons lemon zest plus juice of 1/2 lemon
1 teaspoon vanilla extract
3 sheets frozen puff pastry (from two 17.3-ounce packages, such as Pepperidge Farm), thawed
1 large egg beaten with 2 tablespoons water
2 cups powdered sugar
1/2 teaspoon vanilla extract

Steps:

  • For the filling: Combine the blueberries and granulated sugar in a medium saucepan over medium heat. Bring to a boil, reduce the heat and cook, stirring, until the sugar is melted and the berries have started to burst, a few minutes. Stir together the cornstarch and lemon juice in a small bowl until combined, then add to the blueberry mixture. Add the lemon zest and vanilla and continue to cook until glossy and thickened, 2 to 3 minutes. Remove from the heat and let cool completely. Cover and refrigerate until ready to use.
  • For the pastry: Preheat the oven to 400 degrees F. Line 2 baking sheets with parchment.
  • To make the pies, unfold the thawed pastry and roll out to 10-inch squares if necessary. Cut each square in quarters, making four 5-inch squares from each. Spoon 1 1/2 tablespoons of cooled filling onto one corner of each square. Brush around the squares with the egg wash. Fold the pasty over the filling on each to make a triangle, pressing lightly to remove any air pockets. Crimp the edges shut with a fork. Put the pies on the prepared baking sheets. Brush the tops of the pies with the egg wash. Bake until golden brown, about 20 minutes. Transfer to a cooling rack set over a baking sheet.
  • For the glaze: Mix the powdered sugar, vanilla and 1/3 cup cold water in a bowl until smooth. Drizzle the glaze over the pies and let set until dry.

1/4 cup granulated sugar
1-1/2 tsp fine sea salt
1-1/4 cups (2-1/2 sticks) unsalted butter, very cold, cubed
1/3 cup all-vegetable shortening, very cold or frozen, cut into small pieces
6-7 Tbsp ice water
5 cups diced apples, peeled
2 Tbsp unsalted butter
1/2 cup (packed) brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/3-1/2 cup heavy whipping cream
demerara sugar (or other coarse sanding sugar)

Steps:

  • In a food processor fitted with a metal blade, pulse together the flour, sugar and salt until well-combined. Add the butter and shortening to the flour mixture and pulse a few times until the butter and shortening pieces are evenly dispersed, with the largest pieces about the size of large peas. Be careful not to over-mix.
  • Add the ice water, a tablespoon or two at a time, and pulse to combine, until the dough is evenly moistened. Pinch a bit of dough together between two fingers to test - the dough should stick together. If the dough seems dry, add a few more teaspoons of water and pulse again.
  • Transfer the pastry to a clean, well-floured work surface, and divide the dough in half. Gather each half of dough into a ball, then flatten into a round, disk, and wrap tightly in plastic wrap. Refrigerate for at least an hour before you begin to roll out the dough.
  • Heat a large skillet over medium-heat. Add the diced apples, butter, brown sugar and spices to the pan and stir to combine.
  • Cook until the butter is melted and the apples are just soft, but not mushy, about 2 minutes. Remove from the heat, and transfer the apple filling to a mixing bowl to cool. Set aside and let come to room temperature.
  • Preheat the oven to 375 ℉. Line two sheet pans with parchment paper. Set aside.
  • Remove one of the dough disks from the refrigerator. Roll the dough out on to a generously-floured piece of parchment paper, until it is about 1/8-inch thick.
  • Using a 5-inch-diameter cookie cutter or saucer (my preferred method), cut out six circles. Re-roll the dough as necessary to achieve all six.
  • Lay the pastry circles on one of the sheet pans and top with half of the apple mixture, being sure to reserve as much of the apple liquid as possible. Adding too much liquid to the pies will get messy, quickly.
  • Fold the dough circles in half, and use your fingers to gently press the edges together. Using the back of a fork, gently press down to create a fluted seal along the edge.
  • Lightly brush the top of each pastry with the cream, and sprinkle generously with the demerara sugar. Cut a small x-shaped slit in the top of each pie, and repeat these steps with the second dough disk.
  • Bake for 20-30 minutes, until the pies are golden brown and cooked through. Let cool for 10 minutes on a baking rack. Serve warm with a scoop of vanilla ice cream. Enjoy!!

Steps:

2 cooking apples , peeled, cored and cut into small pieces
50g golden caster sugar
150g blackberries
1 tbsp cornflour
1 tbsp honey
1 tsp cinnamon
2 x 320g shortcrust pastry sheets
1 egg , beaten
1 tbsp white caster sugar
custard , to serve (optional)

Steps:

  • Put the apples and golden caster sugar in a saucepan with 2 tbsp water and cook, covered, for 6 mins or until the apples are soft, stirring once or twice. Tip the mixture into a shallow dish and spread out to cool slightly, then tip in the blackberries and stir. In a separate bowl, mix the cornflour with the honey and cinnamon, then stir it into the fruit mixture.
  • Unroll the pastry sheets and, using a 10cm round cutter, cut out 12 circles. Spoon the fruit filling onto half of the pastry circles, leaving a border of about 1cm around the edge. Brush the beaten egg around the edges and place a plain pastry disc on top to encase the filling, then make a little dent in the top and bottom to form an apple shape. Seal the edges all the way around using the prongs of a fork, then brush with egg. Use the pastry off-cuts to cut out little leaf shapes and stalks, then stick them on with beaten egg. Poke a steam hole in the top with a skewer. Repeat with the remaining pastry and filling. Arrange the pies on a baking sheet lined with baking parchment and chill for at least 30 mins, or up to 24 hrs. Can be frozen unbaked for up to 2 months.
  • Heat oven to 200C/180C fan/gas 6. Bake the pies for 20 mins, or until the pastry is golden and the filling is bubbling through the hole. If cooking from frozen, bake for an extra 5 mins. Sprinkle with the sugar, then leave to cool for at least 20 mins before serving with custard.

2-9″ Pie Dough Disks (1 batch)
3-1/2 cups (about 16 ounces) frozen wild blueberries (see note about fresh)
⅓ cup (70 grams) sugar
2 tablespoons (15 grams) cornstarch
2 tablespoons (15 grams) lemon juice
2 teaspoons lemon zest
1 teaspoon vanilla extract
2 tablespoons (25 grams) cold unsalted butter, diced (optional)
1 large egg
1 teaspoon water
Raw sugar (for the tops of the hand pies, optional)

Steps:

  • Make pie crust and rest in the refrigerator preferably overnight, or at a minimum of 4 hours.
  • Add blueberries, sugar, and cornstarch to a large bowl and toss to coat. Mix in lemon juice and zest. Let sit until the sugars have started to dissolve, about 15 minutes.
  • Transfer all ingredients to a large pot.
  • Turn the heat on to medium and cook, stirring frequently until the filling is bubbling throughout. Turn off the heat and stir in vanilla extract and butter.
  • Pour into a shallow container and let cool completely (this will take several hours or overnight).
  • Make egg wash by whisking together the egg and the water together in a bowl.
  • Line a 12x18" sheet pan with a piece of parchment.
  • Roll out 1 disk of pie dough to about ⅛" thickness. Stamp out at least six 4" circles from the dough. Pile the dough scraps on top of one another and roll out one more time, enough to get at least 1-2 more circles. Repeat this process with the other dough disk to yield roughly 16-18 dough circles.
  • Brush the egg wash around the edges of 1 circle of pie dough. Place about ¼ cup of cooled blueberry filling in the middle. Place a circle of pie dough over the top and press down on the edges to seal the two pieces together. Crimp the edges of the bottom to the top to further seal the pie and to add a decorative touch.
  • Place the pies on the sheet pan. Repeat with the remaining dough circles. When finished, place the sheet pan inside a freezer to chill, while the oven preheats.
  • Preheat the oven to 400ºF and set a rack to the second-lowest position in the oven. Remove the pies from the freezer, brush the tops with an egg wash and sprinkle with raw sugar.
  • Bake in the oven for 30-40 minutes, or until the pie dough is lightly golden all over.

2 boxes prepared frozen puff pastry
6 apples
1 lemon, juiced
2 tablespoons butter
1/4 cup honey
Pinch salt
3/4 cup fresh blueberries
1 egg
1 teaspoon ground cinnamon
2 tablespoons sugar
All-purpose flour, for dusting work surface

Steps:

  • Preheat oven to 450 degrees F.
  • Thaw the sheets of puff pastry as per the box instructions.
  • Peel and core the apples and cut into quarters. Toss the apples in the lemon juice so they do not brown while you are dicing them. Cut each quarter into about 2 to 3 (1-inch) pieces.
  • In a large saute pan over medium heat, melt the butter until lightly browned. Add the apples and saute for about 3 to 5 minutes until lightly browned. Add the honey and a pinch of salt and toss to mix in well, transfer to the oven and roast for about 15 minutes until apples are soft. Mash with a fork while still warm. Let the apples cool to room temperature and gently fold in the berries.
  • Turn the oven down to 400 degrees F.
  • In a small mixing bowl beat 1 egg. In another small bowl, mix together the cinnamon and sugar.
  • Lay the thawed puff pastry sheets out flat on a floured work surface. Cut large circles out of the pastry with a ring cutter, about 4 per pastry sheet. Brush with the egg-wash on the outer edge of half of the circle. Spoon 2 tablespoons of the apple berry mixture in the center of each round of pastry dough. Fold the dough over to cover the filling, making a semi-circle and sealing the edges.
  • Place pies on a buttered oven tray. Repeat with the rest of the pastry dough. When all of the pies are on a sheet tray cut air holes in the top of each pie and brush the tops with egg wash. Sprinkle with the cinnamon sugar. Bake for about 20 to 25 minutes until puffed and nicely browned.

LEMON BLUEBERRY HAND PIES

2 cups fresh blueberries
1/4 cup granulated sugar
2 tablespoons tapioca
1/8 teaspoon kosher salt
1 lemon, zested and juiced
1 egg whisked with 1 tablespoon water
Demerara sugar, for topping
1 cup confectioners' sugar

Steps:

  • For the hand pies: Preheat the oven to 400 degrees F.
  • Cut each pie crust in half through the middle, then in thirds in the other direction, creating 6 pieces (square off the edges to make rectangles or strips).
  • Place the blueberries, granulated sugar, tapioca, salt and 1 tablespoon of the lemon juice (save the remaining lemon juice for the glaze) in a small saucepan over medium heat. Simmer and stir until the blueberries release their juices and burst, 4 to 5 minutes. Remove from the heat, add the lemon zest and allow the mixture to cool, about 10 minutes.
  • Dollop 1 tablespoon cooled blueberry filling on each pie piece. Brush the egg wash along the edges and fold the pie crust; crimp with a fork to seal. Brush each pie with the egg wash and sprinkle with demerara sugar.
  • Bake on a parchment-lined baking sheet until golden, 15 to 20 minutes. Set aside to cool.
  • For the glaze: Whisk together the confectioners' sugar and 2 tablespoons of the lemon juice, 1 tablespoon at a time, until a pourable glaze forms. Keep at room temperature until ready to use.
  • When serving, use a spoon to swizzle the top of each hand pie with the lemon glaze.

  • Remove one dough round from the refrigerator and allow it to rest at room temperature for about 10 to 15 minutes. Lightly flour a clean work surface. Unwrap the dough and place on the floured counter top. Sprinkle the top of the dough with flour. Using a rolling pin, roll out the dough to 1/8th or up to 1/4th-inch thick. If the dough starts to split while rolling, allow it to warm another minute or two and try again.
  • Once all pies are cooled, mix together 1 cup of powdered sugar and 1 tablespoon fresh lemon juice. Add more powdered sugar or lemon juice as needed to reach the desired consistency. Drizzle the icing on top of the pies before serving. You can also brush a thin glaze over the pies. Simply add more lemon juice to the icing to thin and lightly brush on each pie. Allow the glaze to set before serving. Glazed pies should be refrigerated for best results.
