BREAKFAST BISCUITS

Breakfast Biscuits image

Provided by Ree Drummond : Food Network

Time 55m

Yield 8 to 12 servings

Number Of Ingredients 15

3 cups all-purpose flour, plus more for dusting
1/3 cup powdered milk
5 teaspoons baking powder
1 tablespoon sugar
2 teaspoons cream of tartar
2 teaspoons kosher salt
1 teaspoon cayenne pepper
1 stick cold salted butter, cut into bits, plus 1/2 stick (4 tablespoons) salted butter, melted
1/2 cup shortening
1 cup grated Cheddar
1 1/2 cups buttermilk
8 to 12 breakfast sausage patties
8 to 12 large eggs
Hot sauce, to taste
8 to 12 slices white Cheddar

Steps:

  • For the biscuits: Preheat the oven to 450 degrees F.
  • Whisk together the flour, powdered milk, baking powder, sugar, cream of tartar, salt and cayenne pepper in a medium bowl. Using a pastry cutter, cut the butter bits and shortening into the dry mixture until blended thoroughly. Mix in the cheese, then fold in the buttermilk until the dough comes together.
  • On a lightly floured surface, turn out the dough and press into a circle 1 to 1 1/2 inches thick. Cut out circles with a biscuit cutter or a glass. Place the biscuits in cast-iron skillets, then brush the tops with the melted butter. Bake until golden brown, 10 to 12 minutes, then set aside to cool a little.
  • For the sandwiches: Next, add the sausage patties to a skillet over medium heat and fry until cooked through. Set aside and keep warm. In the same skillet, fry the eggs, turning them over to cook the yolks through.
  • Now make a sandwich by cutting a biscuit in half. Put a sausage patty on the bottom half. Top with an egg, some hot sauce and a slice of cheese. Cover with the top and eat, or wrap in foil to keep warm.

Black Pepper Biscuits and Sausage Gravy image

Categories     main-dish

Time 1h15m

Yield 10 to 12 servings

Number Of Ingredients 13

2 1/4 cups all-purpose flour
2 1/4 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
6 tablespoons unsalted butter, cold, cut into small pieces
1 cup buttermilk
3 tablespoons heavy cream
Pinch freshly ground black pepper
1 pound breakfast sausage with sage, casings removed
3 tablespoons unsalted butter, room temperature
3 tablespoons all-purpose flour
1 1/2 to 2 cups milk
Salt and freshly ground black pepper

Steps:

  • For the biscuits: Preheat the oven to 450 degrees F.
  • In a large bowl, sift together the flour, baking powder, salt and baking soda. With your fingers, work the butter into the flour until the mixture resembles large crumbs. Mix in the buttermilk, stirring just until a dough forms.
  • Turn the dough out onto a lightly floured work surface and pat into a 1-inch-thick disk. Cut out 10 to 12 biscuits using a 2 1/2-inch cutter or a glass of equal size. Reuse the scraps.
  • Arrange the biscuits on a parchment-lined baking sheet. Brush the tops with heavy cream and sprinkle with black pepper. Bake until golden brown and cooked through, 10 to 12 minutes.
  • For the gravy: Heat a large skillet over medium heat. Add the sausage and cook until browned, breaking it up into small pieces, 10 to 12 minutes. Transfer the sausage to a bowl using a slotted spoon.
  • Add the butter and flour to the skillet and cook, stirring, for about 1 minute. Pour in the milk, bring to a simmer, and cook until thickened, stirring and scraping the bottom of skillet constantly, about 5 minutes. Season with salt and pepper. Add the reserved sausage and mix until fully combined.

Time 22m

Yield 12 serving(s)

Number Of Ingredients 9

2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon sea salt
1 tablespoon finely chopped fresh sage
1/4 teaspoon cayenne pepper
1/4 teaspoon fresh ground black pepper
3/4 cup unsalted butter, cold, cut into small pieces
1/2 cup cold milk
1 large egg

Steps:

  • Preheat oven to 425°F.
  • Blend flour, baking powder, salt, sage, cayenne and black pepper in food processor or large bowl.
  • Add cold butter and pulse, or quickly blend with your fingertips, until mixture resembles coarse cornmeal.
  • In a small bowl, whisk together milk and egg until blended. Add to flour mixture and process just until moist clumps begin to form. Do not overmix or you'll have "rubber" biscuits!
  • Transfer dough to a floured surface and knead until it holds together, about 6 turns.
  • Roll out or pat dough to 1/2" thickness. Using a floured 2" biscuit or cookie cutter, cut out biscuits. Reroll scraps and cut remaining biscuits.
  • Transfer biscuits to a large nonstick baking sheet.
  • Bake until golden brown, about 12 minutes.

BLACK PEPPER BISCUITS

Beautiful, easy to make biscuits. This is Bobby Flay's recipe that he presented on his "Throwdown" show. Posting here so I can keep up with the recipe.

Time 40m

Yield 16 biscuits, 16 serving(s)

Number Of Ingredients 9

4 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
12 tablespoons unsalted butter, cold, cut into small pieces, plus
4 tablespoons unsalted butter, melted
1 1/2 cups buttermilk, cold
1/2 cup heavy cream
2 teaspoons fresh ground black pepper, not super fine and not course, somewhere in between

Steps:

  • Preheat the over to 450 degrees F.
  • Combine flour, baking powder, baking soda and salt in a large bowl. Using a pastry cutter, combine until ingredients are incorporated. Scatter the cold butter pieces over the top of the flour mixture and continue to combine until the mixture resembles coarse meal. Add the buttermilk and combine until the mixture just begins to come together.
  • Scrape the dough onto a lightly floured counter. Pat the dough into a 10 by 12-inch rectangle about 3/4 inch thick. Use a 3 inch round cutter to cut out the biscuits. Press together the scraps of dough, and repeat process. Place the biscuits on 2 baking sheets lined with parchment paper, brush the tops with cream and sprinkle with black pepper. Bake the biscuits for 12 to 15 minutes or until lightly golden brown. Remove from the oven and brush the tops with the melted butter.

  • Combine the dry ingredients (flour, baking soda, baking powder, salt, black pepper, and sage) in a large bowl and whisk together.
  • Add the cold butter pieces into the dry ingredients and cut into the flour, using a pastry cutter or a fork, until it resembles coarse meal.
  • Add the cold buttermilk into the bowl and stir with a spoon or a rubber spatula JUST until combined. This should only take a few turns. The dough will be pretty wet and sticky.
  • Turn the dough out onto a lightly floured board. With floured hands gently pat out (do NOT roll with a rolling pin) the dough out until it's about 1/2" thick. Add a tiny bit of flour over top if needed and fold the dough over itself about 5 times, gently pressing down in between each fold. Gently pat the dough out to a 1 inch thick.
