HOUSE FIRE STEAK AND SUGAR-GRILLED ASPARAGUS
Steps:
- Preheat the grill to medium-high heat.
- Cut the cedar shingles down to size, about 10 by 5-inches, large enough for a steak to sit on it as a cooking surface. Spay shingles with water, so shingles are moist but not saturated. Oil the steaks and season with steak seasoning. Place each steak on a moist cedar shingle and place on grill. Close grill and let shingles smoke under steaks. If you don't have a covered grill, use a metal bowl to cover steak. Be careful, bowl will get burning hot. Cook steak until desired temperature and top each with 1 tablespoon Herb Butter. Serve on the cedar shingle with Sugar Grilled Asparagus.
- Mix garlic and herbs into the softened butter. Put in refrigerator for later use.

- Preheat a grill.
- Place asparagus on a plate. Drizzle oil over the asparagus and turn spears until they are coated. Sprinkle with salt and turn again.
- Grill asparagus for 5 minutes over a hot grill. Each minute or so, roll each spear 1/4 turn. Asparagus should begin to brown in spots (indicating that the natural sugars are caramelizing) but should it not be allowed to char. Dripping oil may cause flare-ups. Keep a glass, or spray bottle of water handy to spritz on coals, if necessary.
- Remove from grill and serve immediately (eating spears with your fingers enhances the experience).
ASPARAGUS BUNDLES
Steps:
- Preheat the oven to 400 degrees F. Divide the asparagus spears into 12 bundles. Carefully wrap 1 piece of bacon around each bundle, starting about 1/2 inch from the bottom of the tips. Secure the bacon-wrapped spears with a toothpick. Lay the bundles in a low-sided casserole dish. In a medium saucepan, combine the brown sugar, butter, soy sauce, garlic salt and pepper. Bring the mixture to a boil. Pour the hot sugar mixture over the asparagus bundles. Transfer the dish to the oven and roast until the spears have begun to wilt and the bacon looks fully cooked, about 25 minutes. Remove the toothpicks before serving.
BROWN SUGAR ASPARAGUS
I just made this recently and my fiance loved it. He normally is a much better cook than I am so it was nice to hear him raving about something I made. It's really easy too and results in a slightly sweet asparagus.

- Snap off the thick woody ends of the asparagus spears and discard.
- Heat the butter in a large skillet over medium-high heat until melted. Stir in brown sugar. Cook, stirring continually until brown sugar dissolves.
- Add the asparagus to the brown sugar mixture, turning to coat. Sauté for 2 minutes.
- Add the chicken broth to the skillet. Bring to a boil; reduce heat. Simmer, covered, until the asparagus is crisp-tender, about 8 minutes. Transfer the asparagus with a slotted spoon to a serving platter, reserving the pan juices in the skillet. Cover asparagus to keep warm.

- Sprinkle melted butter over asparagus.
- Sprinkle lemon juice over asparagus and butter.

- If using wooden skewers, be sure to soak them in water for at least a couple hours prior to assembling kebabs. I prefer to soak them overnight, if possible. These are my favorite wood skewers - they're somewhat heavy-duty and are flat, which means the food won't spin around on them!
- First, blanche the asparagus. Prepare an ice bath in a medium size bowl by filling partway with ice and then adding cold water; set aside. Fill a large skillet half-way with water and bring to a boil on the stovetop. Add asparagus spears and turn heat down a bit so the water is at a low boil. Boil for 2 minutes, until asparagus is softened yet still firm. Remove asparagus immediately to the ice bath, to stop cooking the asparagus. Once asparagus is thoroughly chilled, remove to a colander.
- Cut asparagus spears into 1-1/4" lengths. Add asparagus and onion pieces to a medium size bowl. Drizzle with one tablespoon of the olive oil. Sprinkle with kosher salt and black pepper, to taste.
- Place beef in a medium to large bowl. Drizzle with remaining tablespoon of the olive oil. Fold to coat. In a small bowl, stir together sugar, Lawry's, kosher salt, and black pepper. Sprinkle half of the sugar mixture over the beef. Stir beef to coat. Sprinkle remaining sugar mixture over the beef and stir again to coat.
