¼ cup Dijon mustard
8 (4 ounce) pieces round steak, pounded 1/4 inch thick
½ cup minced onion
2 teaspoons paprika
2 teaspoons salt
2 teaspoons freshly ground black pepper
8 slices bacon
3 tablespoons canola oil
1 (12 ounce) can beef broth
1 ¼ cups water
2 tablespoons cornstarch
1 cup warm water
¼ cup sour cream

Steps:

  • Spread 1/2 tablespoon mustard over one side of each piece of meat. Sprinkle the onion, paprika, salt, and pepper evenly over the steaks. Lay one slice of bacon on each piece. Roll the steaks jelly-roll style and secure with toothpicks.
  • Heat the canola oil in a skillet over medium heat. Cook meat on all sides until browned. Add the beef broth and water; bring to a boil. Reduce heat to medium low; cover and simmer until tender, about 30 minutes.
  • Remove the meat rolls. Strain the broth mixture and return liquid to the skillet. Whisk together the cornstarch and 1 cup of water. Slowly pour the cornstarch slurry into the skillet, stirring continually until the sauce has thickened, 2 to 3 minutes. Stir in the sour cream. Return rolls to the sauce; serve immediately.

5 strips bacon
1 medium yellow onion, sliced
2 cups fresh spinach
5 chicken breasts
2 teaspoons salt
1 teaspoon pepper
10 slices ham
12 slices swiss cheese
3 cups all-purpose flour
8 large eggs, beaten
3 cups panko breadcrumbs
fresh parsley, chopped, for sprinkling
3 tablespoons butter
2 cloves garlic, minced
3 tablespoons flour
2 cups milk
¼ cup dijon mustard
salt, to taste
pepper, to taste
1 cup shredded parmesan cheese

Steps:

  • In a medium cast iron skillet or pan, cook the bacon until almost brown, about 5 minutes.
  • Add the onions and cook, stirring, until caramelized, about 10 minutes.
  • Add the spinach and cook until wilted, about 3 minutes. Remove the pan from the heat.
  • Place a chicken breast on a piece of plastic wrap. Cover with more plastic wrap and pound until thin. Repeat with remaining chicken breasts.
  • Lay out a large piece of plastic wrap and layer the chicken on the plastic so the edges are overlapping slightly.
  • Season with salt and pepper.
  • Layer the ham, Swiss cheese, and bacon-carmelized onion mixture over the chicken.
  • Roll the chicken into a log tightly wrap in plastic, twisting the ends to seal.
  • Refrigerate for 1 hour to set.
  • Add the flour, eggs, and panko to 3 separate baking sheets or other wide, shallow dishes. Roll the chicken in the flour, then in the egg, and finally in the panko. Coat once more in the egg, then panko.
  • Transfer the chicken roll to a greased baking sheet and bake at 375° (190 celsius) for 40 minutes, until golden brown.
  • Make the creamy Dijon sauce: in a small pot over medium heat, melt the butter. Add the garlic and cook until aromatic. Add the flour and cook until starting to brown. Whisk in the milk, then add the mustard and season with salt and pepper. Add the Parmesan and cook until the sauce is thickened.
  • Slice the chicken roll and serve with the sauce and fresh parsley.

  • Me and my dear friend Pete Begg have two very different approaches to the institution that is the perfect bacon sarnie. The only thing we agree on is that bacon ain't bacon unless it's smoked, but that's pretty much where the similarities end.
  • We do both use two 1½cm-thick slices of simple standard white crusty loaf, but I favour a bloomer and Pete tends to go for a tin loaf. Pete's a 3 rashers of streaky-bacon boy; I'm a back-bacon boy. He cooks it in a frying pan, starting out from cold with a little drizzle of olive oil and gradually bringing the temperature up to medium-high so the fat renders out, placing something flat and heavy on top to ensure super-even crispy bacon. I, on the other hand, put the grill on full whack, rub a tray and 3 rashers of back bacon with olive oil, then blast it until golden and crisp, which encourages the fat end of the bacon to curl up, creating a little pond of delicious bacon juice in the middle.
  • Pete butters his bread, then lays the bacon on side-by-side, like floorboards. I skip the butter, but push the bacon to the side of my tray and lay the bread in the fat for a few seconds before assembling, letting the bacon rashers sit on the bed of bread like spooning lovers. At this point, Pete goes into another gear and displays a little trick his dad taught him as a boy, sandwiching his creation together and placing it back in the pan of smoky bacon fat to lightly toast on both sides, again with a little weight on top. And it doesn't finish there - Pete stipulates that if the bacon runs north to south it must be cut east to west into 3 thin sandwiches, so you get 3 bacon soldiers in each, from which he gets 3 perfect bites. Genius. I simply cut mine diagonally from corner to corner and get it in my gob as quickly as possible .
  • Having been brought up in Essex I have a loyal commitment to HP sauce, but Pete pulls yet another trick out of the bag, treating his plate like an artist's palette with 60% ketchup, 30% English mustard and 10% green chilli sauce, feathered together with a knife, to ensure 9 erratic, beautiful-tasting mouthfuls. Wow.
  • These two sandwiches are both delicious, but most importantly, this is how I like mine and Pete likes his. How do you like yours?

1 (1 pound) loaf white bread, crusts trimmed
1 (8 ounce) package cream cheese, softened
1 pound sliced bacon, cut in half

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut each slice of white bread in half horizontally. Spread with cream cheese. Tightly roll each piece of bread with half a piece of bacon. The bacon should be on the outside of the bread. Secure with toothpicks.
  • Arrange roll ups in a single layer on a medium baking dish. Bake in the preheated oven 30 minutes, or until bacon is no longer pink and bread is lightly browned. Serve warm.

2 pounds beef brisket, or rump, thinly sliced
1 to 2 gherkins, or sour pickles, or 1 dill pickle
1 onion
2 slices bacon
2 tablespoons mustard
1/2 tablespoon clarified butter
1/2 tablespoon oil
1 carrot, diced
1 to 2 stalks celery, diced
1/2 cup dry red wine
1 bay leaf
1/2 teaspoon salt, or to taste
Freshly ground black pepper, to taste

Steps:

  • Gather the ingredients.
  • Slice the beef about 1/4-inch thick across the large surface (horizontally). This can be done with a slicing machine, by the butcher, or by hand with a very sharp knife . This works best when the meat is partially frozen. You should be able to get 4 to 6 slices from the meat. Lay beef out flat.
  • Cut pickle lengthwise into strips and dice the onion and bacon very finely and set aside.
  • Spread each beef slice with mustard; fill one end with 2 slices of pickle, 1 to 2 tablespoons of onion, and some diced bacon.
  • Roll up from the filled end and tie with string (tie like you are wrapping a present or use a modified blanket stitch), or use turkey lacers (in Germany they are called rouladennadel ) to keep the rolls tightly closed.
  • Melt the butter and oil in a saucepan or Dutch oven and brown the outside of the roulades in it. Remove the roulades to a plate.
  • Add the diced carrot and celery, which is known as a suppengrün or mirepoix , to the same pan the rolls were braised in. Sauté for a few minutes, until soft.
  • Place the beef rolls back on top of the vegetables, add the red wine and a little water, to make about 1/2-inch of liquid in the pan.
  • Add the bay leaf , 1/2 teaspoon of salt (depends on how salty the bacon is), and some grinds of pepper.
  • Cover and braise over low heat for 2 hours, or until beef is tender.
  • Remove beef roulades and keep warm.
  • Purée sauce and thicken (optional) with a little cream, sour cream, or Wondra flour (known as sossenbinder in Germany). Season to taste with more salt and pepper as needed.
  • Place roulades back in the sauce until serving time.
  • Serve with boiled potatoes ( dampfkartoffeln or parsley potatoes) or spaetzle noodles and red cabbage .

1 pork tenderloin
6 bacon strips
Carolina Mustard Sauce
1 cup finely chopped pecans
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Cut the tenderloin lengthwise into 6 long strips approximately 1/4 inch thick. Lay the slices on a cutting board; they should be the same size and shape as the bacon strips. Place a strip of bacon on top of each piece of tenderloin. Starting at one end, roll the tenderloin into a pinwheel medallion. Secure with two toothpicks.
  • Set aside 1 cup of the Carolina Mustard Sauce and apply remaining sauce to the outside of the pinwheels. Stir together the pecans, salt, and pepper, and coat the tenderloin pinwheels with the pecan mixture. Cut each of the pinwheels through the equator to make two thin pinwheel medallions.
  • Build a charcoal and/or wood fire for direct grilling. Place the medallions on the grill over medium-high heat (375 to 400°F) and cook for 7 to 8 minutes on each side or until the edges of the bacon start to crisp. Serve with the reserved sauce drizzled over each pinwheel.

This is my version of Chicken Cordon Bleu. Just a bit different. I love the original recipe, but didn't like it with a bread coating every time. So for me, the gruyere adds just a notch up, the hickory bacon and then a simple mustard white wine sauce makes a very elegant dinner. Serve with some very simple wild rice or rice pilaf and green beans. Nothing fancy needed for this. VERY Classic eats.

4 chicken breasts, pounded thin
4 slices prosciutto ham (or you can use any good baked ham)
3/4 cup gruyere cheese, shredded (or you can use 4 slices of swiss)
8 slices of hickory bacon (don't use thick sliced, just regular)
1 teaspoon italian seasoning
1 tablespoon kosher salt
1 teaspoon ground black pepper
2 teaspoons olive oil
2 teaspoons butter
1/2 cup diced onion (I prefer shallots, but a regular onion will work fine)
1/2 cup chicken broth
1/2 cup white wine (if you don't want to use wine, just use all chicken stock or broth)
3/4 cup heavy cream (or you can use evaporated milk or even light cream and even milk, I just like the consistency of hea)
2 tablespoons Dijon mustard (I love to mix dijon and ground mustard but if you only have dijon, that if just fine, If you like mo)
1/2 teaspoon fresh parsley
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper

Steps:

  • Chicken -- Now you can buy your chicken breasts scallopini and pounded for you, and pay a pretty price. Or you can just buy a "regular" chicken breast and put them between some saran wrap and pound away. I use a meat mallet, but use a rolling pin or a can of vegetables, brick, back of a frying pan or pot. Anything will work. Just pound thin.
  • Stuff the chicken -- season well with salt, pepper and Italian seasoning. Then then lay a slice of the ham down and then some shredded gruyere or slices or swiss cheese. Either works just fine and then roll up. Wrap 2 slices of bacon around the chicken roll and secure with a tooth pick.
  • In a oven proof saute pan melt the butter and olive oil and bring to a medium hight heat. Then add the chicken and saute on each side until lightly brown, and the bacon begins to get crisp. Then transfer the chicken to the oven to finish cooking at 400 for about 10-12 minutes is all. Just makes sure the bacon is crisp and done. It doesn't take long. Remove and transfer to a plate and cover. It will continue to cook.
  • Sauce -- get everything ready. This is a quick sauce. Once the chicken comes out just transfer the pan back to the stove top. On medium heat, add the onion to the pan and cook just a minute. Add the wine, broth and let reduce just a minute or so. Reduce the heat and remove when you add the cream, mustard and seasoning and herbs. Return to the heat and just stir and let reduce just a bit on medium low and heat to combine all the ingredients and naturally thicken. It takes 3-4 minutes if that.
  • Dinner is served -- chicken is done and sauce is perfect. Serve the chicken roll with the creamy mustard sauce. As I said, I love some wild rice or rice pilaf with the sauce and some green beans on the side, but use anything you enjoy.

  • While your pizza dough is rising, begin prepping your ingredients. Cook the ground beef with onion in a skillet over medium-low heat until no longer pink. Season with salt and pepper. Cook the bacon until it is a little less done than you normally like it.20 minutes before the dough is done rising, preheat your oven to 450ºF (230ºC). Place a pizza stone (or heavy, flat stainless steel cookie sheet) in the oven to preheat.Roll the dough out on a sheet of parchment paper to a 10-inch circle. Spread the butter all over the dough, right out to the edge. Spread the ketchup over the dough for the sauce. Sprinkle with the cheese, ground beef, bacon, and pickles. These are very easy to make for a buffett or appetizer party. I usually double this, because they go fast! Note: The last time I made these, I fried the bacon after I cut it into thirds until it was almost done, cooled slightly on paper towels then wrapped around the water chestnuts and secured with toothpicks. The sauce was a lot less greasy. I cooked for about 5 minutes less. Enjoy!

1/3 cup finely chopped onion
1 tablespoon butter
3 cups cubed day-old bread
1/4 teaspoon celery salt
1/4 teaspoon garlic powder
1/8 teaspoon salt

1 large egg, lightly beaten
10 bacon strips

Steps:

  • In a small skillet, saute onion in butter until tender. In a large bowl, combine the bread cubes, celery salt, garlic powder, salt, pepper and onion mixture; toss to mix evenly. Add egg; toss to coat bread cubes. Roll into ten 1-1/4-in. balls. Wrap a bacon strip around each ball. Secure with a toothpick. 1 tube crescent dough sheet
3/4 lb. Boar's Head SmokeMaster™ Black Forest Ham (thinly sliced)
12 slices swiss cheese (thinly sliced)
1/2 cup butter (melted {I use salted})
1 Tbsp. poppyseeds
1 & 1/2 Tbsp. yellow mustard
1 Tbsp. dried minced onion
1/2 tsp. Worcestershire sauce

Steps:

  • Preheat oven to 350ºF and grease a 9x13 inch baking dish with cooking spray.
  • Roll out your crescent dough and and press into an approximately 13x18 inch rectangle. Top with ham and cheese.
  • Starting on the long side, roll the dough up tightly. Pinch the ends together and place with the seam facing down. Cut into 12 pieces.
  • Place your rollups in your baking dish, evenly spaced.
  • Meanwhile, in a small bowl, combine the butter, poppyseeds, mustard, onion, and Worcestershire sauce. Pour the sauce evenly over the rollups.
  • Bake, uncovered, for 25 minutes until lightly browned.

SPRING CHICKEN ROLL-UPS WITH LEMON DIJON PAN SAUCE

These bundles are a healthy twist to a Cordon Bleu chicken - ham and cheese stuffed breast meat breaded and sauteed.

2 (6-ounce) pieces boneless, skinless chicken breast
Salt and freshly ground black pepper
4 thin slices provolone cheese
4 thin slices prosciutto cotto
12 thin spears asparagus, trimmed of tough stems and blanched in salted water 2 minutes, drained
1 tablespoon extra-virgin olive oil
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup chicken stock or vegetable stock
1 tablespoon Dijon mustard
1/2 lemon, zested and juiced
1/4 cup chopped, flat-leaf parsley, a handful

Steps:

  • Halve the chicken breasts horizontally separating each into 2 cutlets.
  • Place each halved cutlet in an individual freezer plastic storage bag (with slider tab). Add a tablespoon of water to each bag and pound into1/8-inch thick cutlets.
  • Arrange the 4 cutlets on work surface. Season cutlets with salt and pepper on the side facing up. Cover each piece of chicken with 1 slice cheese and 1 slice ham. Starting on 1 side of the breast, place a small bundle of 3 asparagus spears. Wrap and roll the chicken around the asparagus. Wash hands.
  • Heat about 1 tablespoon extra-virgin olive oil, a turn of the pan, in a nonstick skillet over medium heat. When hot, using tongs, add the chicken roll-ups to skillet with seam side down. Season the roll-ups with salt and pepper. Cover the pan loosely with tin foil and cook 4 to 5 minutes, turn roll-ups over and cook and other 4 to 5 minutes. Remove cooked roll ups to a serving plate. Add 2 tablespoons of butter and 2 tablespoons flour Stir in the chicken stock and Dijon mustard, scraping up any drippings from the bottom of the pan, and simmer 1 minute. Remove from the heat, add the lemon zest, lemon juice and parsley and spoon over chicken.
