CHICKEN MILANO



Chicken Milano image

A delicious pasta and chicken dish with garlic, sun-dried tomatoes and fresh basil. Use the dry packaged sun-dried tomatoes instead of the tomatoes packed in olive oil. The sauce can be kept, covered, for one day in the refrigerator; heat again over low heat. Try it with some crusty bread if desired.

1 tablespoon butter
2 cloves garlic, minced
½ cup sun-dried tomatoes, chopped
1 cup chicken broth, divided
1 cup heavy cream
1 pound skinless, boneless chicken breast halves
salt and pepper to taste
2 tablespoons vegetable oil
2 tablespoons chopped fresh basil
8 ounces dry fettuccini pasta

Steps:

  • In a large saucepan over low heat, melt butter; add garlic and cook for 30 seconds. Add the tomatoes and 3/4 cup of the chicken broth; increase to medium heat and bring to a boil. Reduce heat and simmer, uncovered, for about 10 minutes or until the tomatoes are tender. Add the cream and bring to a boil; stirring. Simmer over medium heat until the sauce is thick enough to coat the back of a spoon.
  • Sprinkle the chicken with salt and pepper on both sides. In a large skillet over medium heat, warm oil and saute chicken. Press on chicken occasionally with a slotted spatula. Cook for about 4 minutes per side or until the meat feels springy and is no longer pink inside. Transfer to a board; cover and keep warm. Discard the fat from the skillet.
  • In the same skillet, over medium heat, bring 1/4 cup chicken broth to a boil; stirring the pan juices. Reduce slightly and add to the cream sauce; stir in basil and adjust seasonings to taste.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Add fettuccine and cook for 8 to 10 minutes or until al dente; drain, transfer to a bowl and toss with 3 to 4 tablespoons of the sauce.
  • Cut each chicken breast into 2 to 3 diagonal slices. Reheat the sauce gently if needed. Transfer the pasta to serving plates; top with chicken and coat with the cream sauce; serve.

Always looking for new zucchini ideas and my kids like Italian sweet (mild) sausages. I add 1 box of cooked penne and split the portions into 2 aluminum containers and froze them. I will defrost it and reheat it in the oven. When it is warmed through, add cheese on top then until melted. This recipe as described makes 2 "dinners" for about 5. You can serve it all at once for about 10.

3 lbs Italian sausage, whatever you kind you like, about 14-16 large sausages
2 medium onions, cut into wedges and separated
6 -8 large zucchini, cut into coins
2 (1 lb) jars tomato sauce
1/2 teaspoon salt (or more to taste)
pepper, to taste
1 teaspoon garlic powder
1 teaspoon oregano
1/2 cup mozzarella cheese, grated
1 (1 lb) box penne

Steps:

  • Fry the sausages in a large skillet until lightly browned. Remove the sausages and set aside, leaving about 2 tablespoons of the grease in the pan.
  • Meanwhile, boil the pasta; drain; set aside.
  • Fry the zucchini and onion in the pan grease until slightly tender. Add remaining ingredients, except the cheese. Cook over low heat for 20 minutes, covered, stirring a bit.
  • Add the pasta to the sauce and vegetables and blend.
  • Place the mixture in a large baking dish and put in the sausages; or divide the mixture into 2 baking dishes for 2 separate dinners with half the amount of sausages in each.
  • If you want to freeze for future use, do so now; add the cheese when you reheat.
  • If making to eat now, add the cheese to the top and bake in 350 degree F. oven until cheese melts.

Steps:

  • Combine all ingredients well, chill.

6 slices bacon, finely chopped
2 tablespoons olive oil
2 tablespoons minced shallots
1/2 teaspoon dried oregano
1/2 cup thinly sliced prosciutto
Salt and freshly ground black pepper
12 baby zucchini or 6 small zucchini, trimmed
1/4 cup chopped flat leaf parsley

Steps:

  • Preheat the oven to 350 degrees.
  • In a small skillet render the bacon. When almost crisp, add the olive oil and heat up. When the olive oil is hot, add the shallots and cook for a few minutes or until tender. Add the oregano and prosciutto and simmer for a minute. Remove the skillet from the heat and season to taste with salt and pepper.
  • Cut the baby zucchini in half. If you are using small zucchini, then cut them in half horizontally, then each half in quarters lengthwise. Set them in a lightly oiled gratin dish, skin side down. Sprinkle with the bacon mixture and scatter parsley on top. Cover and bake or 20 minutes.

4 cups sliced zucchini
1 medium onion, sliced into rings
2 medium tomatoes, sliced
1 lemon, quartered
1-1/2 teaspoon Italian seasoning
3/4 teaspoon crushed red pepper flakes
1 tablespoon butter

Steps:

  • In a greased 2-1/2-qt. casserole, layer on-third of the zucchini, onion and tomatoes. Squeeze one lemon quarter over all. Sprinkle with 1/2 teaspoon Italian seasoning and 1/4 teaspoon red pepper flakes. Repeat layers. Dot with butter. Squeeze remaining lemon over all. Cover and bake at 350° for 1 hour or until vegetables are tender. Serve immediately.

1/4 cup canola oil
1 1/2 cups chopped onions
1 1/2 teaspoons salt
1/4 teaspoon garlic salt
1/4 teaspoon pepper
1/4 teaspoon oregano
2 (28 ounce) cans tomatoes or 3 cups chopped tomatoes

Steps:

  • Remove ends from zucchini& cut in half lengthwise.
  • Cut each half in thirds crosswise.
  • Place cut side down in hot oil in a large skillet.
  • Add onion& cook until zucchini is lightly browned.
  • Sprinkle zucchini with salt& spices and top with tomatoes.
  • Cover and simmer for 15 mnutes.
  • Uncover and simmer 20 minutes oruntil squash is tender and a fairly thick sauce is formed.
