This peach cobbler doesn't get any easier, and you only need one dish. Instead of cake mix, we used corn muffin mix for a savory, buttery flavor that takes this cobbler to the next level!

Nonstick cooking spray
Two 15-ounce cans sliced peaches
1 teaspoon cinnamon
Kosher salt
Two 8.5-ounce boxes corn muffin mix, such as Jiffy
3 tablespoons light-brown sugar
1 1/2 sticks (3/4 cup) unsalted butter, diced and chilled
1/2 cup toasted pecans, chopped
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 375 degrees F. Spray a 9-by-13-inch baking dish with cooking spray.
  • Add the peaches with their juices, the cinnamon and 1 teaspoon salt to the baking dish. Stir to combine. Top evenly with the corn muffin mix and then the brown sugar. Dot evenly with the butter.
  • Bake until golden brown and set, about 45 minutes. Let cool for 20 minutes. Top with the pecans and serve with ice cream.

1 cup evaporated milk
1 cup flour (I use self-rising)
1 cup granulated sugar
1 cup pie filling, your choice. This fruit or 1 cup berries, must be prepared by cutting proper size sweetening and thickening them if called for. In Pie Filling
2 teaspoons of good quality vanilla
1/2 cup butter

Steps:

  • Heat oven to 375.
  • Place the butter in the baking pan and allow it to melt in the warming oven.
  • The butter should be bubbly before batter is added.
  • Mix well, the milk, flour, sugar, and the vanilla.
  • Pour batter into the buttery pan. Close oven.
  • In about 10 minutes or so, open the oven and pull out pan on the oven rack.
  • Carefully spoon the fruit or berries you've chosen evenly throughout the Cobbler Cake.
  • Most of these spoons will sink a good bit into the batter, and that's good. You may even help the sinking of the more stubborn.

Steps:

  • Preheat oven to 350 degrees.
  • In a medium baking dish, add the fresh or frozen cherries. If cherries are frozen they do not have to be thawed. Set aside.
  • In a mixing bowl, add the dry cake mix. Pour in the melted butter and mix together with a fork until crumbly.

2 to 2 1/2 cups Sprite (or other clear pop)
1 box white cake mix

Steps:

  • Preheat oven to 350F.
  • Spread frozen fruit in a 9×13 baking pan.
  • Sprinkle cake mix evenly over top of fruit. Tip: Gently massage the cake mix while still in the bag to break up any lumps.

2 sticks of butter or you can use a can of sprite

Steps:

  • Spray the pan with nonstick spray first and pour filling into bottom of a 8x11 casserole pan.
  • Pour dry cake mix over filling.
  • If using the butter, melt the butter first and pour on top of cake mix. If using sprite, pour sprite over cake mix until covered well.
