- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Line bottom of prepared baking dish with bread cubes. Beat eggs, milk, 2 tablespoons sweetener, 1 teaspoon cinnamon, and vanilla extract together in a bowl; pour mixture over bread cubes. Let stand 10 minutes (or refrigerate up to overnight if desired).
- Combine remaining 2 tablespoons sweetener with remaining 1 teaspoon cinnamon; sprinkle mixture over the casserole.

- Cut out the tree shapes in the bread using a cookie cutter. You can also free-form the tree shape by hand if you do not have a cookie cutter.
- Grease your 8- or 9-inch cast iron pan (or any round baking dish).
- Line up the trees in the pan with a bit of an overlap, so they are standing up.
- In a mixing bowl, beat together the eggs, milk, jam, sugar and cinnamon until smooth and well-combined.
- Pour the egg mixture over the bread. Being sure to soak the tips of the trees as well as the bases.
- Place in the fridge for at least 2 hours, or overnight. This is to ensure the mixture is soaked up by the bread.
- When ready to bake, preheat the oven to 375 degrees F.
- Dust with powdered sugar and serve warm with fresh fruit, maple syrup and butter or your prefered toppings.

I got this recipe from a friend when looking for something different to serve for a holiday brunch. We like ours with fruit and honey. Goes really well with cheesy ham cups that I've also posted. The prep time is putting it together along with refrigerate time.

- Set oven to 350 degrees F (set oven rack to lowest position).
- Generously grease an 8 x 8-inch baking pan.

- Nonstick spray a 913 inch or any 3-4 quart oven-safe dish. Cut the bread into 1 inch cubes after slicing it. Half of the cubes should be placed in the prepared baking pan.
- Beat the room temperature cream cheese on medium-high speed with a handheld or stand mixer fitted with a whisk attachment until completely smooth. Combine the confectioners' sugar and 1/4 teaspoon vanilla extract in a mixing bowl. Spoon spoonfuls of the cream cheese mixture onto the bread. On top of the cream cheese, layer the remaining bread cubes. (I like to leave some cream cheese exposed on top for appearances.) Set aside.
- Whisk together the eggs, milk, cinnamon, brown sugar, and remaining vanilla extract until there are no brown sugar lumps. Pour over the bread in an even layer. Refrigerate the pan for at least 3-4 hours and up to 24 hours, wrapped tightly in plastic wrap. Overnight is ideal.
- Preheat the oven to 350 degrees Fahrenheit (177 degrees Celsius). Take the pan out of the refrigerator.
- To make the crumb topping, combine the brown sugar, flour, and cinnamon in a medium mixing bowl. Using a pastry blender or two forks, cut in the cold cubed butter. Evenly distribute the topping over the soaked bread.
- Bake uncovered for 45-55 minutes, or until the top is golden brown. Because I prefer it softer, I usually bake it for 45 minutes. Drizzle with maple syrup, if desired, or dust with confectioners' sugar. Serve hot.
- Refrigerate leftovers for 2-3 days, tightly wrapped in plastic wrap.

- Butter a 9-by-13-inch baking dish.
- For the casserole: Trim the ends from 1 loaf day-old brioche (about 1 pound) and cut into ten 1-inch thick slices. Cut each slice in half diagonally to make two triangles from each piece. (If the bread is fresh, dry it out a bit. Place the slices in a single layer on a baking sheet and bake at 300 degrees F for 10 minutes, flipping halfway through.)
- Whisk together the eggs, cream, milk, brown sugar, vanilla, cinnamon, nutmeg and 1/4 teaspoon salt in a large bowl until well blended. Dip each triangle of bread in the custard, lightly coating each side. Shingle the pieces in the prepared pan, overlapping slightly.

Turn off the heat and add the sliced bananas, stirring to coat evenly. Spoon the desired amount of the banana-syrup mixture over the casserole and serve any additional on the side.

- 1. French Toast Casserole: Spray 9 X 13 inch dish with Pam. Cut or tear bread into cubes and arrange in the bottom of dish.
- 2. Cut up two 8 oz packages of low fat cream cheese into 1 inch cubes. Drop cubes of cream cheese over the bread pieces. Sprinkle 1 cup blueberries over the top.
- 3. In mixing bowl, combine 12 eggs, 2 cups low fat milk, 1/3 cup sugar free syrup and if you want add 1 teaspoon of maple extract. Pour this mixture over the bread, cream cheese and blueberries. Cover with foil and refrigerate overnight.
- 4. Blueberry Sauce: You can make this ahead of time and refrigerate, then warm up before serving.
- 5. Stir together 1 cup Splenda and 2 Tbls cornstarch in a medium sauce pan. Add 1 cup water and stir until smooth. Stir well so cornstarch won't be clumpy. Heat to boiling and stir 2-3 minutes until thickened.
- 6. Add 1 cup blueberries, simmer for 8-10 minutes, stirring occasionally until blueberries start to burst. Don't let them all burst. I like some of the blueberries whole.
- 7. Turn heat off the blueberry sauce and stir in 1 Tbls butter or margerine. Store in plastic or glass container and refrigerate until ready to use.
- 8. The next morning preheat oven to 350 degrees. Take casserole out of the refrigerator. Place covered cassrole in a 350 degree oven and bake for 30 minutes. Then uncover and bake for another 25-30 minutes or until top is a golden brown and the center is set.
- 9. While the casserole is baking, you can heat up the blueberry sauce on top of the oven or microwave until warm. Serve over top of casserole.
- 10. Prep time: 30 min to put everything together 8-24 hours - refrigerate several hours or overnight until bread is soaked through with egg, milk mixture. Cook time: 1 hour
- 11. Sauce alternative: this is what I call cheating but its very good. Take some sugar free jam or preserves, any flavor you want, add 2 tbls cornstarch. Put in sauce pan and stir until smooth, heat until warm and thickened. At this point you can add some fresh or frozen fruit, warm up a little longer. Serve.
- 12. Apparently for some people this is very soggy so please just add a little milk at a time to the bread and cream cheese. You do not want the bread to be real soggy just enough milk so the bread soaks it up. If it's soggy then after you bake it it will still be soggy!!!!
