This colorful chicken salad is ideal as a luncheon favorite or can be easily packed for a picnic. The combination of flavors is refreshing...one of our family's favorite summer entrees.

- In a large bowl, combine the chicken, cucumber, grapes, carrots and walnuts. Combine mayonnaise and ranch dressing. Pour over chicken mixture; toss to coat. , Line pita halves with lettuce; spoon about 1/2 cup chicken salad into each. Refrigerate until serving.

Steps:
- In a large bowl, combine the first 7 ingredients. In a small bowl, combine the ranch dressing, mayonnaise, Italian dressing, garlic powder and pepper; pour over chicken mixture and toss to coat. Fill each pita half with a scant 1/2 cup chicken mixture.

MAGGIE'S SUPER HEALTHY CILANTRO LIME CHICKEN SALAD PITA SANDWICH
I threw this together on a warm night when I didn't feel like cooking and wanted something cool and healthy but also filling. I was amazed at how low calorie this turned out and also how much I enjoyed it. I hope you do, too! You can easily substitute the pitas with tortillas to make these more like wraps, and there's plenty of flexibility to add or subtract ingredients (like maybe red onion or fresh basil for example - warmed up with a little feta cheese melted inside is not at all bad, either, I've learned). With the 4 servings, each serving will either stuff a half of a pita super full or be just enough for 1 whole pita cut in two filled not quite so full. Your choice.

- Combine mayonnaise, cooked chicken, celery, sweet onion, grapes, walnuts, lemon juice, Dijon mustard, fine sea salt and white pepper in a large mixing bowl. Stir to combine.

Trying to eat healthy? Throw together this quick and flavorful cold chicken salad-with a Mexican flavor! I served this warm flat bread, folded like a taco, but this would be delicious on bread in traditional sandwich form, or even on top of some dark leafy greens with a drizzle of salsa. - Run your knife through the chicken breast to break up the larger chunks. Place this mixture in a large bowl.
- Add cheese, onion, corn (thawed, but not heated), tomato, salsa and jalapeño.
- Drizzle avocado with juice of 1/2 lime, then add avocado to the bowl.
- Add 1/2 tsp salt, 1/2 tsp pepper and 2 tsp taco seasoning to the bowl, then toss to mix well.
- Assemble your meal by warming a piece of flat bread, then adding a layer of lettuce shreds before topping with 1/4 mixture. Fold and enjoy taco-style.
- **These are pretty large, filling serving sizes. If I was serving this with other dishes, I would probably estimate this would serving 5 or 6, depending on how hungry you are.

- Bring 2 cups water, chopped celery, onion, carrot, thyme, and salt to a boil in a medium saucepan. Reduce heat to a simmer. Add chicken; cover and simmer until cooked through, about 15 minutes. Transfer chicken to a bowl; let cool, then shred with 2 forks. Discard contents of pan.
- Stir together mayonnaise, lemon juice, and mustard in a medium bowl. Season with salt and pepper. Stir in chicken, sliced celery, and almonds. Gently fold in orange segments.
- Cut 1 inch from top of each pita to open pocket. Fill each pita with 1 lettuce leaf and 1/2 cup chicken salad.

- Prep ingredients by cooking, and then shredding or chopping 1/2 large chicken breast, chop 1-2 stalks celery to get 1/4 c chopped celery, quarter a handful of grapes to get 1/4 cup quartered grapes, prepare lettuce by washing/chopping it if needed. Also prepare nuts by chopping them if needed, making 1 Tbsp chopped nuts.
- Make chicken salad by adding shredded/chopped chicken to a small mixing bowl, then add 1/4 c Greek yogurt, 1/4 c mayo, 1/4 tsp garlic salt, 1 tsp Dijon mustard. Mix together well. Once all incorporated, add in 1/4 c chopped celery, 1/4 c quartered red grapes, and 1 T chopped mixed nuts. Stir together.
- Fill pita with chicken salad mixture and lettuce. Enjoy. Store chicken salad in airtight container for up to 5 days.
