TUNA TAPENADE

Steps:
- Blend all the ingredients, except the tuna, in a food processor until smooth but still chunky. Transfer to a medium serving bowl. Drain the tuna but do not rinse. Flake the tuna with a fork. Add to the olive mixture, blending gently with a fork. Season with salt and pepper, to taste. Serve with Crostini.
- Crostini:
- Preheat the oven to 350 degrees F.
- Slice the baguette, on the bias, into thin slices. In a small bowl, mix the oils and salt and pepper, to taste. Using a pastry brush, lightly coat 1 side of bread slices with the oil. Arrange on a sheet tray and bake until golden brown, about 8 to 10 minutes.
- Yield: about 24 slices
CREAM CHEESE AND OLIVE PARTY SANDWICHES
A quick and easy way to get ready for your party! In addition to sandwiches this flavorsome spread makes a pretty appetizer on top of crackers. Cutting the sandwiches into quarters will yield 24 servings.

Steps:
- Let cream cheese soften to room temperature.
- In a bowl mix cream cheese with mayonnaise.
- Add chopped olives and mix well.
- Spread mixture onto 6 bread slices and top with remaining 6 bread slices to make sandwiches. Cut crust edges off and slice each sandwich into quarters.
TUNA AND OLIVE SALAD SANDWICH
Steps:
- Make tuna salad:
- Whisk together mayonnaise and lemon juice in a large bowl. Add remaining salad ingredients and stir together gently. Season with salt and pepper.
- Assemble sandwiches:
- Cut baguette into 4 equal lengths and halve each piece horizontally. Brush cut sides with oil and season with salt and pepper. Make sandwiches with baguette, lettuce, and tuna salad.
ARTICHOKE AND TUNA PANINI WITH GARBANZO BEAN SPREAD

- To make the Garbanzo Bean Spread: Combine all the ingredients in a food processor. Pulse until the mixture is smooth. Transfer to a small bowl and set aside.
- To make the Panini: Combine the black olives, olive oil, salt, pepper, tuna, and artichokes in a bowl.
- Lay out the sliced baguettes. Spread the Garbanzo Bean Spread on both halves of the baguettes. Spoon the tuna mixture over the bean spread. Top with the arugula and close the sandwich. Wrap 1 end of the sandwich in parchment paper to make it easier to eat. Place the sandwiches on a platter and serve.
PAN BAGNAT AKA FANCY FRENCH TUNA SALAD SANDWICH
Steps:
- Slice baguette in half, then horizontally slice it.
- Scoop out inside of bread of the bottom side, to create a trough.
- Drizzle bread with olive oil, and rub with garlic.
- Line bread with basil.
- In a medium bowl, mix tuna, parsley, olive tapenade, artichoke, veggies, and salt/pepper.
- Add the juice from one lemon and the olive oil.
- Add salt and pepper to taste and stir.
- Scoop tuna mixture onto the bread.
- Make a sandwich, by topping one half with the remaining halves of bread.
- Wrap in saran wrap tightly, and store in fridge.
- Cover the sandwich with something weighted, and leave overnight.
- The next morning, take out of the fridge and cut into individual serving sizes. Enjoy!
TUNA TAPENADE
Plan to use this to make deviled eggs as suggested in the New York Times article this recipe was found. Will make for a luxurious lunch with some breadsticks & crispy vegies sticks. This recipe will keep for three or four days in the refrigerator per the article. Place it in a bowl and cover with a film of olive oil and plastic wrap before refrigerating.

- Make sure that there are no pits mixed in with your olives.
- Turn on a food processor fitted with a steel blade, and drop in the garlic. When finely chopped and adhering to the sides of the machine, stop the machine and scrape down the sides of the bowl. Add the remaining ingredients, except the tuna, and puree to a smooth paste. Scrape down the sides of the bowl, and add the tuna and optional anchovies. Process until you have a smooth paste. Add freshly ground pepper to taste. Transfer to a bowl and refrigerate, covered, until ready to use.

LINDA'S TUNA AND OLIVE SANDWICH (SANDWICHES) OR FINGER ROLLS
This is one of my all time FAVORITE sandwiches. I hope you enjoy it as much as I do. Onions and olives go together well with the mayo in this recipe... YUMMO! The Finger Roll recipe is GREAT around the holidays and for baby and bridal showers, graduations, weddings, parties, and family get togethers. Just omit the lettuce if making the Finger Rolls. Each can of tuna will make 3-4 finger rolls, depending on how full you make them, and how big the rolls are. You can double or triple this recipe, according to how many Finger Rolls you need. - I put extra mayonnaise on the bread if making a sandwich.
- Put lettuce on bread.

- Mix tapenade, onion, basil, 5 tablespoons oil, vinegar, and lemon peel in medium bowl; season with salt and pepper.
- Brush baguette slices and tuna on both sides with oil. Sprinkle tuna with salt and pepper. Heat large nonstick skillet over medium-high heat. - Bring a large pot of water to a boil over high heat. Season generously with salt. Add the pasta to the water and cook for 2 minutes less than package directions, about 10 to 12 minutes.
- Meanwhile, heat a large skillet over medium heat. Add the oil and the garlic and cook until the garlic is aromatic and beginning to brown. Add the red pepper flakes if using, the tapenade and the drained tuna. Remove the pan from the heat. Stir gently to combine being careful not to break apart the tuna completely.
- When the pasta is ready, add 1/2 cup of the pasta water to the skillet and return it to medium heat. Using a large slotted spoon or a spider, remove the pasta from the water directly to the pan with the tuna mixture. Sprinkle the bare pasta with the parmesan cheese and toss well to combine allowing the tapenade and pasta water to create a sauce. Add more pasta water if needed. Stir in the peas, lemon zest and the parsley if using. Top with more parmesan cheese if desired.

- In a food processor or blender, pulse the olives, parsley, and garlic to a coarse puree with the anchovy paste, 6 tablespoons of the olive oil, the lemon juice, and 1/4 teaspoon each of the salt and pepper. Put three-quarters of the mixture in a large bowl.
- Heat a grill pan or heavy frying pan over moderate heat. Coat the tuna with the remaining 1 tablespoon oil and season with the remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Cook about 1 1/2 minutes per side. Remove the tuna. Let sit for 3 minutes. The fish will be rare. Cut it into 1/4-inch slices.
- In a large pot of boiling, salted water, cook the linguine until just done, about 12 minutes. Reserve about 1/2 cup of the pasta water. Drain the linguine, add it and 1/4 cup of the reserved pasta water to the bowl with the olive mixture, and toss. If the sauce seems too thick, add more of the reserved pasta water. Mound the pasta on plates and top with the tuna. Spoon the remaining olive mixture on top.
