MARINATED LAMB CHOPS

Steps:
- Whisk together the oil, balsamic vinegar, parsley, rosemary, cumin, garlic and 2 tablespoons mint in a medium bowl. Place the lamb into a resealable plastic bag and pour half of the marinade over the lamb. Season with salt and pepper, seal the bag and refrigerate for 1 to 2 hours.
- Add the lemon zest and juice and remaining 6 tablespoons mint to the remaining marinade and whisk to combine. Season with salt and pepper and set aside.
- Heat a large grill pan over medium-high heat until very hot; lightly brush with oil.
- Remove the lamb from the bag, letting the excess marinade drip off (discard the marinade). Season with salt and pepper. Grill the chops, turning once, about 3 minutes per side for medium-rare.
- Serve the chops with the reserved marinade.
TANGY AND JUICY MARINADE FOR STEAKS & LAMB CHOPS
This ia great marinade! You will be happy you tried this recipe. I came up with it while messing around in the kitchen. The steaks were so juicy and tangy, I cannot wait to make these again! My husband ABSOLUTELY loved them! Preparation includes marinating time. I would double the recipe for every two steaks or four chops added, to be sure there is plenty of marinade.

Steps:
- Pierce beef with fork.
- Combine all spice ingredients in a container. Generousley sprinkle with McCormick's Montreal Steak Seasoning.
- Add meat and marinate steak or lamb chops for at least one hour.
- Grill or Broil them.
- Grill - Grill on both sides until desired doneness.
- Broil - Place meat in a baking dish. Broil 6 inches from oven element for appr. 8 minutes on each side (or until desired doneness). Pour remaining marinade over beef when turning.

MARINADE FOR LAMB STEAKS RECIPE
Before cooking, the lamb leg steaks were marinated in a mixture of Vinaigrette, herbs, vinegar, oil, and other seasonings. With a fresh cherry, mixed bean and spinach salad, steaks are presented on a BBQ. A great and easy supper for the weeknight.

- Worcestershire sauce with a quart of water
- Freshly chopped rosemary or thyme may be used in place of the herbs.
- This recipe calls for 1 tbsp excellent balsamic vinegar.
- If using olive oil, add 2 tablespoons of it.
- Use a non-metallic dish to hold the meat. Pour the marinade over the steaks after mixing all of the ingredients together. Keep it covered and refrigerated for 15 to 20 minutes.
- 6-8 minutes on each side, or until the meat juices run clear, over a prepared barbeque or warmed moderate grill Rest the steaks on a heated dish for a few minutes before serving.
- It's best to accompany this dish with a fresh cherry and bean salad with cherry tomatoes, red onions, and baby spinach.

MARINATED LAMB CHOPS

- Combine yogurt, lemon juice, and garlic in a medium bowl; season with salt and pepper. Transfer 1/2 cup yogurt mixture to a small bowl and set aside for serving. Stir cumin, coriander, turmeric, and allspice into remaining yogurt mixture.
- Season lamb chops with salt and pepper. Using your hands, evenly coat all sides of chops with spiced yogurt mixture (avoiding the bone if they are frenched). Let chops sit at room temperature 30 minutes, or cover and chill up to 12 hours.
- Heat 1 Tbsp. oil in a large skillet over medium-high. Wipe off excess marinade from lamb chops and cook half until nicely browned, about 3 minutes per side (the yogurt in the marinade will help them take on color quickly). Remove chops from skillet and pour off fat (no need to wipe it out). Repeat with remaining 1 Tbsp. oil and remaining chops.
- Serve lamb chops with reserved yogurt mixture alongside.
SPICE-MARINATED AND GRILLED LAMB CHOPS
You don't need a roaring-hot grill for this lamb chops recipe. Grilling them over moderate heat will allow some of the fat to soften and render.

- Toast fennel seeds in a dry small skillet over medium heat, shaking pan often, until fragrant, about 45 seconds; let cool. Finely grind in spice mill or with mortar and pestle. Transfer to a large bowl; add in chile, ginger, garlic, crème fraîche, lime juice, mustard oil (if using), mango powder (if using), fenugreek leaves, pepper, nutmeg, 1 tsp. chili powder, and 2 Tbsp. vegetable oil and mix well. Season lamb chops with salt and add to marinade; turn to coat. Cover and chill at least 2 hours.
- Let lamb chops sit at room temperature 1 hour before grilling.
- Prepare a grill for medium heat; oil grate. Grill lamb to desired doneness, about 3 minutes per side for medium-rare. Transfer to a platter; let rest 5-10 minutes.
- Top lamb with mint and cilantro and dust with more chili powder. Serve with lemon wedges.

GARLIC ROSEMARY-MARINATED LAMB CHOPS

- Preheat the broiler. In a small bowl stir together the zest, the garlic paste, the rosemary, the oil, and pepper to taste, rub the lamb chops with the marinade, and let them marinate on a plate for 20 minutes. Broil the lamb chops on the rack of a broiler pan about 4 inches from the heat for 4 to 5 minutes on each side for medium-rare meat.

- Put the lamb and all the first marinade ingredients in a bowl and mix well. Chill for at least 2 hrs, and up to 4 hrs.
- Blend all the second marinade ingredients together. Remove the lamb from the first marinade and put it in a clean bowl. Add the second marinade and rub it into the lamb, then chill for a further 4 hrs, or overnight.
- Light a barbecue with a lid, then barbecue the chops on a high heat until cooked to medium (around 8 mins), making sure the meat isn't directly on the flame to avoid burning the spices. The key is to keep the lid on so the temperature is consistent. Or cook in the oven on a baking tray for 12 mins, and finish off under the grill for 2 mins to crisp them up. Serve with lime wedges for squeezing over and green chutney on the side (see our recipe).
