This recipe came from our cookbook at the beauty shop where I work. We had many pot lucks, and every one wanted this and that recipe, so we all gave recipes and had our own book printed and sold them in the salon.

Number Of Ingredients 6

1 (10 ounce) package frozen spinach, thawed and drained
1 cup sour cream
1 cup mayonnaise (not Miracle Whip)
1 (1 ounce) package Knorr vegetable soup mix (or onion soup mix)
1 (8 ounce) can water chestnuts, drained and chopped (optional)
1/2 chopped onion

Steps:

  • Thaw and drain the spinach.
  • Squeeze the spinach with paper towels to remove excess water.
  • Mix all ingredients together in a bowl.
  • Let set in the fridge for a couple hours before serving.
  • I like to serve it inside a hollowed out round loaf of bread.
  • Scoop out the loaf and place dip inside.
  • I use what I scoop out for making croutons.
  • Serve with fresh vegetables.

4 slices bacon, thinly sliced crosswise
1 medium yellow onion, diced medium
coarse salt and ground pepper
1 teaspoon all-purpose flour
2 packages (10 ounces each) frozen spinach, thawed and squeezed dry
1 cup whole milk
1/2 cup sour cream
1 bar (8 ounces) cream cheese
1/2 cup grated Parmesan
Crostini or pita chips, for serving

Steps:

  • Preheat oven to 350 degrees. In a medium saucepan, cook bacon over medium, stirring occasionally, until browned and crisp, 10 minutes. Drain bacon on paper towels. Discard all but 1 tablespoon fat from pan. Add onion to pan, season with salt and pepper, and cook, stirring occasionally, until tender, 8 minutes. Add flour and cook 30 seconds. Add spinach, milk, sour cream, and cream cheese. Cook, stirring, until cream cheese melts, 2 minutes. Stir in bacon and 1/4 cup Parmesan.
  • Transfer mixture to a 1 1/2-quart baking dish and top with 1/4 cup Parmesan. Bake until bubbling, 14 minutes. Heat broiler and broil until top browns, 3 minutes. Let sit 5 minutes. Serve dip warm with crostini or pita chips.

From my favorite gal of all time!! Dip may made up to 2 days ahead of time, covered and refrigerated. Let stand 20 minutes before baking as directed. (These are Paula's directions, but I had to bake for a few minutes more, as well as place under the broiler for a few minutes to get the top browned). Prep time does not include thawing time for spinach and onions.

1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 (10 ounce) package frozen chopped onions, thawed and squeezed dry
1 lb bacon, cooked and crumbled
3 (8 ounce) packages cream cheese, softened
1 (5 ounce) package shredded parmesan cheese
1 cup shredded mozzarella cheese
1/2 cup mayonnaise
corn chips, for serving

Steps:

  • Preheat oven to 350 degrees.
  • Combine all ingredients except corn chips in a medium bowl.
  • Spoon mixture into a 2-quart baking dish.
  • Bake 30 minutes, or until hot and bubbly (may need to place under broiler if not browned on top).
  • Serve with corn chips.

LOW FAT SPINACH ONION DIP



Low Fat Spinach Onion Dip image

...or low fat onion spinach dip. Either title works well for me. The yogurt really works well in this recipe, but it does add a different texture to similar recipes that have sour cream and cream cheese. But I seriously doubt anyone is going to know any difference as this turned out really great. Prep time includes thawing time, which I did halfway, hence the cooking of the spinach and the chill time.

2/3 cup frozen spinach, thawed
1 large yellow onion, finely chopped
1/4 teaspoon salt
1 tablespoon butter or 1 tablespoon margarine
3/4 cup plain yogurt
1 cup low-fat mayonnaise
1 1/2 teaspoons basil
1 1/2 teaspoons parsley
1 1/2 teaspoons garlic powder
salt and pepper

Steps:

  • Cook frozen spinach until done, about 5 minutes. Let cool completely.
  • Melt butter or margarine in a frying pan. Add chopped onion and saute on medium low for about 5-7 minutes. Add the 1/4 tsp salt while sauteing. (This can be done while spinach is cooking. This way you will save cooking time.) Cool completely.
  • Combine both to a medium bowl and add yogurt, mayonnaise, basil parsley, and garlic powder. Combine well. At this point add salt and pepper for taste. (you don't need to add too much salt as salt was added to the onions. I used another 1/4 tsp of salt at this point).
  • Let chill for at least 30 minutes before serving in order to let the flavours blend.

3 tablespoons olive oil
2 sprigs fresh rosemary
2 medium yellow onions, thinly sliced
1 clove garlic, minced
10 oz frozen spinach, 1 box, thawed and squeezed dry
4 oz cream cheese, room temperature
1 cup sour cream
½ cup mayonnaise
2 teaspoons lemon zest
kosher salt, to taste
freshly ground black pepper, to taste
2 tablespoons lemon juice
pita chip, or toast, or crudités, for serving

Steps:

  • Heat the olive oil in the 2.5-quart saucepan over medium-high heat. Add the rosemary sprigs and fry until fragrant and the leaves are crisp, 1 minute. Using tongs, remove the rosemary and transfer to paper towels to drain. If any leaves are left behind in the oil, remove with a slotted spoon and transfer to the paper towels as well.
  • Return the pan with the oil to medium heat. Add the onions and cook, stirring occasionally, until soft and caramelized, 20-25 minutes.
  • Add the garlic and cook for 1 minute, until fragrant.
  • Stir in the spinach and cook for 2 minutes to evaporate any excess moisture. Add the cream cheese and cook, stirring, until completely melted and incorporated into the onions and spinach.
  • Remove the pan from the heat and stir in the sour cream, mayonnaise, lemon zest, salt, pepper, and lemon juice. Let cool to room temperature or cover with plastic wrap and refrigerate for up to 2 days.
  • Remove the rosemary leaves from the stems over a cutting board. Crush with your fingers or finely chop with a knife.
  • Transfer the dip to a serving dish and smooth the top. Sprinkle with the fried rosemary and serve with pita chips, toasted bread, or crudités.
  • Enjoy!

1 lb crumbled bacon
10 ounces thawed and squeezed dry frozen spinach
2 shredded and squeezed onions
24 ounces softened cream cheese
5 ounces shredded parmesan cheese
5 ounces shredded asiago cheese
1/2 cup mayonnaise

Steps:

  • Brown and crumble a one pound package of bacon.
  • Thaw and squeeze dry a 10oz package of spinach.
  • Shred and squeeze dry two onions.
  • Soften the three 8oz packages of cream cheese by bringing up to room temperature.
  • Shred the parmesan and asiago cheeses.
  • Combine all of the above ingredients with one half cup of mayonnaise.
  • Bake at 350 degrees for 20-30 minutes, until lightly browned on top and bubbly in the middle.

Steps:

  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté onion and shallots, stirring, until lightly browned, about 2 minutes. I was inspired by my family's classic spinach dip for this recipe. I added slowly caramelized onions for a hint of sweetness and depth of flavor. This dip is delicious with veggies or even potato chips.

5 tablespoons unsalted butter
2 tablespoons vegetable oil
1 red onion, thinly sliced
1 yellow onion, thinly sliced
Kosher salt and cracked black pepper
1 cup mayonnaise
3/4 cup sour cream
4 ounces cream cheese, softened
1/2 teaspoon cayenne pepper
One 10-ounce box frozen spinach, thawed and drained
Cut-up vegetables, for serving, optional

Steps:

  • Melt the butter in a large skillet over medium heat and add the oil. Stir in the onions and sprinkle liberally with salt and pepper. Reduce the heat to medium-low and cook the onions, stirring occasionally, until caramelized, 30 minutes. Remove from the heat and cool.
  • Combine the mayonnaise, sour cream, cream cheese and cayenne in a mixing bowl and mix vigorously until smooth. Add the onions and thawed and drained spinach and mix well. Taste and adjust the seasoning with salt and pepper as necessary.

  • Melt butter in a heavy 12-inch skillet over medium-high. Add onions, sugar, and 1 1/2 teaspoons of the salt. Cook, stirring constantly, 10 minutes.
