1 cup peanut butter
½ cup packed brown sugar
½ cup corn syrup
⅓ cup butter
2 teaspoons vanilla extract
3 ⅓ cups rolled oats
½ cup flaked coconut
½ cup sunflower seeds
½ cup raisins
½ cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl stir together the peanut butter, the butter or margarine, the brown sugar, the syrup and the vanilla until smooth.
  • Add all the other ingredients. Stir well.
  • Press the mixture into 13 x 9 inch greased pan. Bake for 20-25 minutes. Let cool on wire rack before cutting into bars.

1/2 cup sugar
1/2 cup packed brown sugar

1 large egg, room temperature
1 teaspoon vanilla extract

1 teaspoon baking soda
1/4 teaspoon salt
1 cup semisweet chocolate chips
ICING:
1/2 cup confectioners' sugar
2 tablespoons creamy peanut butter
2 tablespoons milk

Steps:

  • In a large bowl, cream the butter, sugars and peanut butter until light and fluffy. Beat in egg and vanilla. Combine the flour, oats, baking soda and salt; gradually beat into creamed mixture and mix well. Spread into a greased 13x9-in. baking pan. Sprinkle with chocolate chips. , Bake at 350° for 20-25 minutes or until lightly browned. Cool on a wire rack for 10 minutes. , Combine icing ingredients; drizzle over the top. Cool completely. 2 eggs
1/2 cup honey or brown sugar
2 tsp vanilla
1 tsp baking soda
1 1/2 cups old fashioned oats
1/2 cup whole wheat flour
1/4 cup dark or semi-sweet chocolate morsels

Steps:

  • Preheat your oven to 350°F. Line the bottom of an 8x8 pan with parchment paper spray or with cooking spray.
  • In a medium mixing bowl, add the peanut butter, eggs, honey, and vanilla. Mix to combine. Stir in baking soda, old fashioned oats, and whole wheat flour until everything is evenly incorporated.
  • Place batter in the prepared pan and press mixture into the pan's bottom in an even layer. Bake for 15-17 minutes. If you overcook it, it may get dry. Stick a toothpick into the center; when it comes out clean, it's done.
  • You can stop here or add a little chocolate topping. While bars cool on a wire rack, melt chocolate in the microwave in 30-second intervals, stirring between intervals until completely melted.
  • Once your chocolate is melted, drizzle over the top of the bars. Enjoy!

Steps:

  • Preheat oven to 350 degrees F. Lightly spray an 11 by 7-inch or 9 by 9-inch baking pan with cooking spray; set aside.

1/4 cup toasted wheat germ
1/2 cup chopped roasted peanuts

Steps:

  • Spray a 9 by 13-inch baking dish with cooking spray and set aside.
  • In a small saucepan over medium heat, combine honey, peanut butter, maple syrup, canola oil, brown sugar, cinnamon. Stir and cook until mixture just begins to bubble, about 3 to 5 minutes. Remove from heat and stir in vanilla extract.
  • In a large bowl, combine oats, rice cereal, wheat germ, peanuts, apricots, figs and salt.
  • Pour peanut butter mixture over oatmeal mixture and stir gently with a spatula until well combined. Transfer to baking dish, cover with parchment paper and press firmly into dish. Allow to cool completely (will cool faster in the refrigerator). Cut into squares or bars.

3/4 - cup butter or margarine-softened
3/4 - cup peanut butter-creamy
3/4 - cup sugar
3/4 - cup brown sugar-packed
2 - eggs
2 - teaspoons vanilla extract
1 1/2 - cups floue
2 - cups oatmeal
3/4 - teaspoon baking soda
1/3 - teaspoon salt
ICING
1/2 - cup peanut butter-creamy
2 - cups chocolate chips
1/2 - cup butterscotch chips

Steps:

  • In a mixer bowl, cream together the butter and sugars until it is nice and creamy. Add eggs one at a time and blend until each is well incorporated. Add the vanilla and mix well. In a medium bowl combine flour, oatmeal, baking soda and salt. Slowly add the dry ingredients into the batter until well combined Spray baking pan with a non stick cooking spray and spread the batter into pan.
  • Bake at 325 Degrees for 20-25 minutes or just until the bars are slightly browned and a tooth pick inserted into the corner comes out clean. Allow them to cool while making the icing.
  • In a saucepan, add all of the icing ingredients and melt over low heat, stirring occasionally. Spread over the bars and allow to cool before cutting and serving.

  • Mix all dry ingredients together in a small mixing bowl.
  • Add all wet ingredients together in a medium-sized microwave-safe bowl.
  • Microwave for 30-60seconds.
  • Mix the dry ingredients into the wet ingredients. Form a ball with the mixture.

These peanut butter oatmeal bars are the best trick! They're no bake, easy and healthy; and the flavor is out of this world.

1 cup creamy peanut butter (no sugar added, or sunflower butter for nut free)
1/2 cup honey (or 1/2 cup agave syrup* for vegan)
4 cups Old Fashioned rolled oats
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon
1 to 2 ounces dark chocolate (1/8 to 1/4 cup chocolate chips)

Steps:

  • Mix together the peanut butter, honey, oats, salt and cinnamon in a bowl. (If the mixture seems dry and not sticky, add a bit more peanut butter and/ or honey; different peanut butter brands perform differently.)
  • Add a sheet of parchment paper to a 9 x 9 pan. Place the ingredients in the pan and press it into an even layer. Use a small glass to roll over the top to get it smooth.
  • Freeze the bars for 10 minutes. Remove the pan from the freezer and use the parchment to lift it out of the pan. Cut into 20 rectangles (4 x 5 rows) or 40 small rectangles.
  • In the microwave with short intervals or over a double boiler, melt the chocolate, stirring until it comes together into a glossy chocolate. If using the microwave, use short bursts of 10 seconds or so and stir after each: be careful not to overheat the chocolate or get any water in the chocolate, which will cause it to seize up. When melted, drizzle over the bars and allow to cool. You can eat right away, or refrigerate for about 1 hour for a more solid texture. Store refrigerated for up to 2 weeks (or frozen for several months, placing wax paper between the layers).
