- Preheat oven to 350 degrees F (175 degrees C). Spray an 8x4 inch loaf pan with cooking spray.
- Sift together flour, baking powder, baking soda, cinnamon, nutmeg and salt. Set aside.
- Beat the eggs until light and add sugar twin. Add applesauce and vanilla.
- Add flour mixture and beat until smooth. Fold in raisins.
- Pour batter into loaf pan. Bake at 350 degrees F (175 degrees C) for about an hour, or until a toothpick inserted into cake comes out clean.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9 inch square baking pan.
- Beat the eggs until they drop like ribbons from the beaters. Continue beating and add the oil in a thin stream. Beat in the 1 cup applesauce and the 1 cup unsweetened apple juice concentrate.
- Beat in the flour gradually until well blended. Add the baking soda, ground ginger, ground almonds and apples, mix to combine.
- Pour the batter into the prepared pan and bake at 350 degrees F (175 degrees C) for about 40 minutes or until the cake tests done. Let cake cool on a rack for 15 minutes before turning out of pan. Cool completely before frosting.
- Carefully slice the cake in half horizontally with a long serrated knife. Fill and frost with Apple Butter Frosting.
- To Make Apple Butter Frosting: Beat the cream cheese until soft and fluffy. Gradually beat in the apple butter and remaining 2 tablespoons apple juice concentrate.

- 1. cook raisins and water until almost dry
- 2. mix together cooking oil, soda and applesauce.
- 3. beat eggs until smooth
- 4. combine all ingredients and mix thoroughly.
- 5. pour mixture into a greased tube or bundt cake pan. (pam cooking spray works well)
- 6. Bake at 325 degrees F. for 45 to 60 minutes. check with toothpick for doneness. Cool in pan for 15 minutes before turning out.

APPLESAUCE CAKE

- PREP: Set out the cream cheese to warm to room temperature. Preheat the oven to 350 degrees F. Line an 8x8-inch baking pan with parchment paper -- otherwise, your cake will likely not come out easily. Greasing and flouring the pan isn't enough -- this batter is sticky and needs parchment paper. Foil will affect baking, so I don't recommend foil.
- WET INGREDIENTS: In a large bowl, stir together the applesauce, coconut oil (measured when completely melted and then cooled back to room temperature-- See Note 1), large egg, vanilla extract, and brown sugar. Stir until completely combined and smooth.
- DRY INGREDIENTS: Add the baking soda, baking powder, salt, cinnamon, allspice, and nutmeg (you can use a little less or more, depending on your preference). Add in the oat flour. (See Note 2.) Add in the chopped pecans and raisins if desired. Mix ingredients until completely combined and smooth.
- BAKE: Transfer batter to the prepared 8x8-inch pan. Bake for 28-33 mins at 350 degrees F oven or until a fork when inserted comes out clean. Be careful not to over-bake, as it will make this cake less tender and less flavorful. Allow cake to cool completely before frosting.
- FROST: Place softened cream cheese in a large bowl (give it ample time to set out so your frosting isn't chunky). Using a hand mixer, beat the cream cheese with the vanilla until smooth. Add in the salt and slowly add in the powdered sugar (beating in between additions) until smooth and creamy and to your desired consistency. If it is too thick, add in a little bit of milk. If you'd like a tangier or soft frosting, only add 1 and 1/4 cups powdered sugar. For a sweeter, thicker frosting, add closer to 1 and 3/4 cups.
- DECORATE: Frost the completely cooled cake evenly with the frosting. If desired, top the frosting with the chopped pecans.
- STORAGE: Store cake at room temperature, covered with plastic wrap. Applesauce Cake is best when used within 1-2 days. Freeze (un-frosted) pieces for up to 3 months; thaw at room temperature and then frost. Frosted cake doesn't freeze and thaw well.

- Preheat your oven to 325 and prep a pan for nonstick
- Mix together your apples, nuts, cinnamon, and vanilla. Set this bowl aside.
- In another bowl, beat together the liquid, oil, and the eggs. Set this aside
- Now in a mixing bowl, combine together the sugar alternative and the Carbquick. You can sift this or use the method of your choice.
- Slowly pour half of the contents from the wet bowl into the dry ingredient mixing bowl.Mix gently and then add the remainder.
- Fold in the contents from the first bowl (apples etc) into the mixing bowl by hand. Bake this for an hour or until a toothpick comes out clean.

- Mash the bananas in a medium bowl.
- In a separate large bowl, mix the flours, baking soda, and cinnamon.
- Add the mashed bananas, applesauce, coconut oil, and vanilla to the flour mixture. Mix just until incorporated.
