- Melt 2 tablespoons butter in a nonstick skillet over medium-high heat. Crush 1 cup egg noodles and add to the skillet. Cook, stirring, until browned, 3 to 5 minutes. Drain on paper towels; season with salt and pepper. Boil 1 pound egg noodles as the label directs. Reserve 1 cup cooking water; drain the noodles and return to the pot off the heat. Add 4 tablespoons butter, 2/3 cup crème fraîche, 2 tablespoons chopped chives, 2 teaspoons poppy seeds, 3/4 teaspoon nutmeg and 1/2 cup of the reserved cooking water. Stir until creamy, adding more cooking water as needed. Season with salt. Top with the fried noodles.

Steps:
- Cook a little over half the bag of egg noodles until done.
- In a bowl,combine the chicken, cream of chicken soup, and sour cream. Mix well.
- In a 9x13 take a small chunk of cold butter and rub the bottom of the pan. This insures that the noodles will not stick or become crispy. (I find that this is the only way that works for me. Using spray Pam has always made my noodles on the side crispy.)
- Spread noodles over greased pan.
- Spread the chicken mixture on top making sure to cover all the noodles well.
- Melt the stick of butter and crumble the whole package of Ritz crackers in it and mix until crackers are saturated. Spread on top of chicken mixture.
- Sprinkle Poppy Seeds on top.
- Cook uncovered at 350 for 30 minute or until hot.

VERY SPECIAL BEEF STROGANOFF AND POPPY SEED NOODLES
This is my version of Cleora Butlers Beef Stroganoff. Cleora cooked for my husbands family when his mother was a child in Tulsa Oklahoma. When I think about this very special yummy meal, my mouth waters. Use fresh ingredients. It's well worth the time and effort. Makes wonderful leftovers.

Steps:
- Slice beef into very thin strips.
- Melt 1/2 of the butter in a large skillet; saute beef over high heat for only 1 minute on each side. Remove beef slices and keep warm.
- Add onions; saute 10 minutes over medium heat. Remove onions.
- In remaining butter, saute mushrooms 5 minutes over medium heat.
- Return beef and onions to skillet.
- Add tomato paste and seasonings. Cook over low heat 20 minutes.
- Mix sour cream with 2 tablespoons flour. Blend thoroughly and stir into meat mixture to thicken. Cook until gravy is thick.
- Serve over Poppy Seed Noddles.
- Poppy Seed Noodles.
- Boil noodles in salted water as directed on bag.
- Drain, butter and sprinkle with poppy seeds.
- Mix gently and sprinkle with 2 tablespoons parsley.

- While noodles are cooking, lightly toast poppy seeds in a dry small skillet over moderately low heat, stirring, until just fragrant, about 2 minutes.
- Reserve 1/2 cup cooking water and drain noodles in a colander.
- Add butter and zest to warm pot and swirl until melted.
- Add noodles and toss, adding enough of reserved cooking water to keep noodles moist, then stir in poppy seeds, chives, salt and pepper to taste.

NOODLES WITH CABBAGE AND POPPY SEEDS

- Combine the eggs, flour and salt in a food processor and pulse until the dough begins to come together. If the dough is too dry (depending on the humidity of the air and flour) add water 1 tsp at a time until the dough comes together.
- Turn dough out onto a lightly floured surface and knead until smooth.
- Wrap pasta dough in plastic and set aside for at least thirty minutes and up to one hour.
- Meanwhile, prepare the cabbage. Melt 4 TB of the butter in large saucepan over medium heat. Add the onion and saute until softened, about five minutes. Season with salt and pepper.
- Add the shredded cabbage and toss to combine. Add the apple cider vinegar. Saute the cabbage until softened and tender, about twenty minutes, lowering the heat if necessary to prevent scorching. Set aside.
- Divide the pasta dough into four pieces. Keeping the other pieces covered, flatten the first piece of dough with your hands to allow it to fit in the pasta roller.
- Roll the dough out into a thin sheet using a pasta roller or a pasta-rolling attachment for a stand mixer. Begin at the lowest setting and continue rolling, increasing the setting each time, until the pasta sheet is thin enough to see through, usually the number 6 setting.
- Cut the pasta into fettucine ribbons by hand or using a cutting attachment for the pasta roller. Then cut ribbons in half with a knife.
- Wrap the noodles into little nests and place them on a baking sheet lined with parchment paper. If your noodles seem sticky, dust with flour. Cover.
- Repeat with remaining three pieces of dough.
- Bring a pot of salted water to a boil and cook pasta just until al dente, about two minutes. Drain.
- Toss pasta with the cabbage mixture. Add poppy seeds, remaining 2 TB of butter and toss to combine. Season well with salt and pepper.
- Serve immediately with a dollop of sour cream or plain Greek yogurt if desired.
