2 pounds raw frozen shrimp, deveined, shells on
2 sticks cold butter, cut into pieces
1/4 cup fresh parsley leaves
1 teaspoon kosher salt
1/2 teaspoon crushed red pepper
4 cloves garlic, peeled
1 whole lemon, juiced
Crusty bread, for serving

Steps:

  • Preheat the oven to 375 degrees F. Rinse the shrimp to separate, and then arrange in a single layer on a baking sheet.
  • To the bowl of a food processor, add the butter, parsley, salt, red pepper, garlic and lemon juice. Pulse until combined. Sprinkle the cold butter crumbles over the shrimp.
  • Bake until the shrimp is opaque and the butter is hot and bubbly.
  • Serve with hot crusty bread. Peel and eat the shrimp, and then encourage guests to dip the bread into the butter in the bottom of the pan.

1 1/2 cups cream (don't sub half and half)
1/4 teaspoon salt
1 lemon, zest of, grated
1 lemon, juice of
1 dash garlic powder (to taste)
1/2 cup grated parmesan cheese (or you can use 1/2 parmesan, 1/2 asiago)

Steps:

  • Heat cream in skillet until just about to boil. Add zest and juice of one lemon. It will immediately start to thicken.
  • Turn heat down to low. Add garlic powder and salt. Stir for 1 minute.
  • Add cheese and stir until melted.
  • Serve over your favorite pasta. We like angel hair cause it's done at about the same time your sauce gets finished.
  • I often add cooked shrimp or meatballs (the Italian baked ones from this site are excellent). But bacon or sausage is also good.

1/2 cup chicken stock
1/2 cup milk
1 tablespoon butter
1 tablespoon all-purpose flour
3 garlic cloves
3 lemons ((juice only))
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon apple cider vinegar
1/2 teaspoon dried parsley

Steps:

  • Melt butter in a pot on the stove top over medium heat.
  • Add flour. Quickly whisk the flour and butter together to form a paste, and cook this for a few seconds while stirring.
  • Combine milk and chicken stock, and pour a splash of the liquid into the pot. Whisk until the liquid is incorporated into the flour paste, then add a little more. Continue to gradually add liquid until the sauce has an even, smooth consistency.
  • Add very finely diced garlic, apple cider vinegar and seasoning to the sauce, and keep whisking. The sauce will gradually thicken. Add additional seasoning, and lemon juice to taste. I like to squeeze half a lemon at a time, and then check to see if more is needed. Serve the sauce immediately.

4 tablespoons extra-virgin olive oil plus more for drizzling
1 large garlic clove, pressed
1/4 cup fresh lemon juice
1 1/2 teaspoons anchovy paste
1 teaspoon lemon peel
1/2 teaspoon dried crushed red pepper
1 1/2 cups (packed) coarsely chopped fresh parsley plus whole sprigs for garnish
8 ounces lump crabmeat, picked over
3 ounces prosciutto, sliced crosswise (optional)

Steps:

  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally.
  • Meanwhile, heat 4 tablespoons olive oil and garlic in large skillet over medium heat. Mix in next 4 ingredients.
  • Drain pasta, reserving 1/2 cup cooking liquid. Add pasta, 1/4 cup cooking liquid, chopped parsley, and crabmeat to skillet. Toss over medium heat until sauce coats pasta, adding more cooking liquid by tablespoonfuls to moisten if necessary, about 4 minutes. Season with salt and pepper. Transfer to large platter. Top with prosciutto, if desired. Drizzle with olive oil and garnish with parsley sprigs.

1 stalk lemongrass, finely chopped
3 tablespoons extra-virgin olive oil
3 tablespoons Sriracha (Asian chile sauce)
2 cloves garlic, minced
1 tablespoon fish sauce
2 teaspoons packed light brown sugar
30 extra-large shrimp, unpeeled
Vegetable oil, for the grill
2 tablespoons chopped fresh mint

Steps:

  • Finely grate the zest from 4 of the lemons, then pulse in a mini food processor with 3 tablespoons salt. Squeeze the juice from 2 of the zested lemons into a large bowl; add the lemongrass, olive oil, Sriracha, garlic, fish sauce, brown sugar and 1 teaspoon of the lemon salt. Thinly slice the 2 remaining lemons and add to the bowl.
  • Using kitchen shears, cut through the shrimp shells along the outer curve, leaving the shells on. Remove the veins and rinse the shrimp. Add to the bowl with the lemongrass marinade and toss; cover and refrigerate for 1 hour. Meanwhile, soak 12 to 15 wooden skewers in water.
  • Preheat a grill to medium high. Thread the shrimp onto the skewers. Brush the grill with vegetable oil, then add the lemon slices and grill until they begin to char, turning once, about 2 minutes; transfer to a platter. Stir the mint into the remaining marinade. Add the shrimp skewers to the grill and cook, brushing with the marinade-mint mixture, until the shells begin to char, 2 to 3 minutes per side. Transfer to the platter and sprinkle with the lemon salt to taste.

1 lb chicken liver
2 cups buttermilk
1 teaspoon louisiana hot sauce
2 tablespoons Worcestershire sauce
1/2 cup cornflour
1/2 cup all-purpose flour
1 teaspoon fresh ground pepper
1 teaspoon Old Bay Seasoning
1 teaspoon creole seasoning
1/2 teaspoon cayenne pepper
1 cup peanut oil
1/4 cup mayonnaise
2/3 cup sour cream
2 tablespoons lemon juice

1 teaspoon Old Bay Seasoning
2 teaspoons Worcestershire sauce

Steps:

  • Soak chicken livers in mixture of buttermilk, hot sauce, and worcestershire sauce for at LEAST 2 hours in the fridge.
  • For the sauce you want to mix mayo, sour cream, lemon juice, garlic, old bay seasoning and worcestershire sauce in a bowl until fully incorperated. You want to make it before you fry the livers to give the flavors time to mingle. Place in fridge until just about to serve.
  • In a bowl combined corn flour, all purpose flour, black pepper, cayenne pepper, old bay and creole seasoning.
  • Add your peanut oil to a large sauce pan. Make sure it's large enough to fit the livers, but leave enough room in between so they are not too crowded. Or you can do them in batches.
  • Roll the livers in the dry seasoned mixture and place in the hot pan. Try to keep the heat between Med-high to Med.
  • Cook about 8-10 minutes on each side. It depends on the size of the livers. Turn down the temp if they start getting too brown too fast.
  • If not sure on their being done, you can just brown them on each side and then pop them in a 350F for about 10 minutes.
  • Once done, serve immediately with a generous spoon full of dipping sauce.

1 kg (2.2 pounds) crab
1/2 cup 113 g (1 stick) unsalted butter
4 bay leaves
5 cloves garlic (finely chopped)
2 tablespoons paprika
1 tablespoons cayenne
1/2 tablespoon red chilly flakes
1 teaspoon cinnamon
1/2 tablespoon coriander powder
2 tablespoons vinegar
1/2 cup finely chopped coriander leaves
1 teaspoon pepper powder
Salt to taste
2 Lime (, cut into wedges)

Steps:

  • Wash the cleaned crab a couple of times in cold water and keep it aside.
  • Bring a pot of water to boil. (Use a pot large enough to hold all the crabs or else cook in two batches)
  • Once the water boils, add the washed crab, 1 lime, 2 bay leaves, and cook till it turns pink.
  • Drain and keep aside.
  • Melt butter in a heavy-bottomed pot large enough to hold all the crabs.
  • Turn the heat to medium-low until the butter melts and take care so that the butter doesn't burn.
  • Add the bay leaves and the garlic and cook till you can smell the aroma of garlic.
  • Now add the spices (paprika, cayenne, coriander, cinnamon) and stir for a minute to get rid of the raw flavor of spices. Add the vinegar, pepper, and salt. Taste and adjust the flavor if needed. (Be careful when doing so as the butter will be very hot.)
  • Place the drained crab in a big bowl and add the sauce. Toss it to coat well.utter.
  • Optional: Add the crabs to the pot with butter sauce. Cover and cook for another 10 minutes, stirring it every five minutes and coating all the crabs with sauce.
  • Transfer the crabs onto a serving plate. Serve with fresh cut limes and sauce in a bowl.

1 teaspoon chili flakes
2 teaspoons paprika

24 large shrimp

1 cup spinach leaves
2 tablespoons lemon juice

  • Crack the egg into the bottom of a tall, wide mouth glass jar. (You can also use a tall glass, but make sure it's wide enough for an immersion blender to fit. Do not use a bowl.)

  • Pour the oil on top. Again, do not whisk or stir.
  • Carefully submerge an immersion blender into the bottom of the jar, so that it's right where the egg is. Blend on low power for about 20 seconds without moving, until you see most of the jar has turned white. Then, slowly start to move the blender upward, without lifting the blender out into the air. Once you reach the top of the oil, slowly move back down to the bottom. Go up and down like this a few times, until the aioli forms.
  • Store the homemade aioli right in the jar, in the refrigerator.

1 fresh lobster
sea salt
vegetable oil for deep-frying

5 shiitake mushrooms, stems removed
3 ounces (80 g) assorted salad greens (i.e., mizuna , rocket leaves, baby spinach, mustard greens, lollo rosso lettuce, tomyo pea sprouts, Swiss chard)

  • Make dressing:
  • Combine all the ingredients except the oil. When the salt is fully dissolved, add oil.
  • Yield:
  • 3/4 cup (150 ml).
  • Make salad:
  • 1. Have ready a large saucepan of boiling water (enough to cover the lobster) and a bowl of iced water. Add a pinch of sea salt to the boiling water and scald the lobster over high heat for 4 minutes. Plunge the lobster into the iced water, then remove the meat from the shell. Cut into bite-size pieces.
  • 2. Bring about 1 inch (2.5 cm) of oil in a small saucepan to 320°F (160°C). Deep-fry the garlic slices until crisp.
