1 1/2 pounds ground beef, 80/20
1/4 teaspoon dried oregano, preferably Mexican
1/4 teaspoon kosher salt
1/8 teaspoon garlic powder
Freshly ground black pepper
1/2 cup sour cream
3 chipotle chiles in adobo sauce, finely chopped, plus 3 tablespoons adobo sauce
1/3 cup finely chopped white onion
1 cup loosely packed fresh cilantro leaves, finely chopped
1/4 teaspoon kosher salt
Freshly ground black pepper
4 whole-wheat buns, split
2 tablespoons unsalted butter, softened
4 slices Cheddar
1 avocado, thinly sliced
Tomato slices, for topping
Green-leaf lettuce leaves, for topping
Red onion slices, for topping

Steps:

  • To make the patties: Combine the beef, oregano, salt, garlic powder, and pepper to taste in a medium bowl and mix well. Shape into patties a little more than 1/2-inch thick, place on a plate, and refrigerate for at least 1 hour.
  • To make the sauce: Stir together the sour cream, chipotles, adobo sauce, onions, cilantro, salt, and pepper to taste in a small bowl. Set aside.
  • To make the burgers: Oil a grill rack and preheat the grill on high for 5 minutes. Spread the bun faces lightly with the butter. Grill the burgers over direct heat on medium-high (on a charcoal grill, set the burgers just outside the center of the grill rack), with the grill covered, for 4 minutes. Flip the burgers, top each with a slice of Cheddar, and grill, covered, 4 minutes more. Remove the burgers to a plate.
  • Grill the buns, buttered-side down, over indirect heat, until golden, about 2 minutes. Set a burger on each bun bottom and top with avocado, tomato, lettuce, red onion and a dab of chipotle sauce. Top with the remaining bun halves and serve.

1 medium onion, finely chopped
1/2 large red bell pepper, diced
2 garlic cloves, minced
1/3 cup chopped cilantro leaves
1 teaspoon dried oregano
2 teaspoons soy sauce
1 tablespoon Worcestershire sauce
Salt and pepper
4 hamburger buns, split
Oil
2 cups thinly sliced cabbage
1 carrot, coarsely grated
1 small red onion, cut into rings
1 tomato, sliced 1/4-inch thick
2 tablespoons ketchup
2 tablespoons mayonnaise
1 tablespoon yellow mustard
2 ripe yellow plantains
1/2 cup plain yogurt
1/2 cup mayonnaise
2 teaspoons pureed chipotle peppers in adobo sauce
1 tablespoon sugar
1 tablespoon cayenne powder
1 tablespoon black pepper

Steps:

  • For the burgers: Mix together beef, onion, bell pepper, garlic, cilantro, oregano, soy sauce, Worcestershire sauce, a scant 1/2 teaspoon salt, and 1/2 teaspoon pepper. Form into 4 (4 1/2-inch-wide) patties. Heat a large griddle or 12-inch heavy skillet over medium heat until hot, then lightly toast buns. Oil griddle, then cook patties, turning once, about 8 minutes total for medium-rare. Transfer to buns. Mix together cabbage, carrot, and 1/4 teaspoon salt, then cook, turning occasionally, until slightly wilted, about 2 minutes. Divide among burgers.
  • Oil griddle again, then sear onion and tomato, turning once, until slightly charred, about 2 minutes total. Divide among burgers. Stir together ketchup, mayonnaise, and mustard, then top burgers with sauce.
  • For the plantains: While the hamburgers are cooking, peel plantains and wrap them in foil. Place wrapped plantains on grill and cook until tender but still firm, slightly caramelized. Once cooked, remove from grill, and slice into 1/2-inch rounds, on the diagonal. In a small bowl, mix together the yogurt, mayonnaise, and chipotle peppers until smooth. Return the sliced pieces of plantains to the grill, and brush chipotle sauce on 1 side. Flip after a couple of minutes and brush the sauce on the other side. Remove from grill and serve with the burgers.

4 slices chipotle cheese (Kraft brand but can sub cheese of choice)
chipotle aioli (recipe above)
4 hamburger buns
4 lettuce leaves
1 tomatoes, cut into 4 slices

Steps:

  • To Make the Chipotle Aioli: Add all the ingredients to a food processor and puree. Season to taste with salt and pepper, if desired.
  • For the Burgers: Heat grill to medium heat.
  • Chop fine the chipotle pepper; using a light hand mix with meat, cilantro, garlic and adobo sauce just until blended.
  • Shape into 4 (1/2-inch-thick) patties.
  • Grill 5 to 6 minute on each side or until done (160ºF). Top with cheese; grill 1 minute or until melted.
  • Spread aioli onto bottom halves of buns; cover with lettuce, tomatoes, cheeseburgers and tops of buns.

Steps:

  • Halve and pit the avocado, then scoop the flesh into a small bowl. Add the lime juice, cilantro, 1/4 teaspoon cumin and a big pinch of salt. Mash and stir until well combined; set aside.

1 tablespoon Caribbean jerk seasoning

Steps:

  • Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
  • For the patties: Combine the chuck, sirloin, jerk seasoning, wine, and salt in a large bowl. Mix lightly and form into 6 patties. Refrigerate until ready to grill.
  • For the sauce: Mash the avocado with the lime juice in a bowl. Stir in the mayonnaise and salt. Gently fold in the mint leaves. Cover and refrigerate until ready to serve.
  • For the glaze: Combine the wine, vinegar, honey, chiles, and salt in a fire-proof saucepan. Place on the grill rack and cook, stirring often, until the mixture is reduced by half.
  • When the grill is ready, brush the grill rack with the oil. Place the patties on the rack over direct heat. Cook for 4 to 5 minutes per side, basting often with the glaze until the desired doneness is reached.

  • To assemble the burgers, place a lettuce leaf on each roll bottom. Top with a tomato slice. Add a patty, a dollop of the sauce, and a roll top.

2 tablespoons extra virgin olive oil
1 cup onion, finely chopped
1/2 teaspoon salt
2 garlic cloves, minced
1 chipotle chile in adobo, minced (usually in a can)
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1 (15 ounce) can pinto beans, drained and rinsed or 1 1/2 cups pinto beans, cooked
3/4 cup breadcrumbs
2/3 cup water (bean cooking liquid works too)

Steps:

  • Heat olive oil in large non-stick skillet over medium heat.
  • Add onions and salt, and cook, stirring often, 7 to 10 minutes, or until softened.
  • Add garlic, chipotle chile, cumin and oregano.
  • Cook, stirring often, 1 minute.
  • Add a third of the beans and 1/3 cup water (or bean cooking liquid), and, using potato masher or fork, mash beans.
  • When liquid is absorbed, add another third of beans and 1/3 cup liquid, and mash until mixture is chunky.
  • Stir in last third of beans, and mash lightly.
  • Cook, stirring constantly, until mixture is very thick and mostly dry.
  • Transfer beans to mixing bowl to cool, about 15 minutes.
  • Stir in 1/4 cup breadcrumbs. Taste, and add more salt if needed.
  • Spread remaining breadcrumbs on plate.
  • Using spoon, drop bean mixture by one-sixths into breadcrumbs.
  • Sprinkle tops with breadcrumbs, and form into 6 patties of equal size.
  • Place patties on clean plate.
  • Refrigerate at least 30 minutes, or until firm.
  • Heat remaining 1 Tbs. oil in nonstick skillet over medium heat.
  • Add patties, and cook until golden, about 3 minutes per side.

Steps:

  • Prepare grill for cooking over medium-hot charcoal (moderate heat for gas); see "Grilling Procedure," below.
  • Meanwhile, open any whole chipotles and discard seeds, then mince chipotles.
  • Mix chipotles (with sauce), beef, onion, and salt with your hands, then form mixture into 4 (3/4-inch-thick) patties.
  • Grill burgers on lightly oiled grill rack, covered only if using gas grill, turning over once, 4 minutes total for medium-rare. Grill English muffins, cut sides down, until grill marks appear, about 30 seconds. Serve burgers in English muffins.
  • Grilling Procedure
