Steps:
- Brown ground beef and drain.
- Add taco seasoning, refried beans and tomato sauce.
- Heat until blended.
- Preheat oven to 375 degrees.
- Spray a glass 9x13 pan with oil.
- Spoon taco filling into taco shells and stack them side by side in pan.
- When shells are filled, top each with shredded cheese.
- Bake for approximately 15 minutes, watching so they do not brown too much.
- Top with remaining ingredients, if desired.

POT ROAST TACOS

Steps:
- Preheat the oven to 325 degrees F.
- Sprinkle the chuck roast on all sides with a fair amount of salt. In a large Dutch oven or other heavy pot with a tight-fitting cover, heat the oil over medium-high heat. Add the roast and brown it on all sides, taking the time to get a nice crust on the outside. Remove the roast and set aside.
- Add the onions and garlic cloves to the pot and cook until lightly browned, 3 to 4 minutes. Stir in the ancho powder, cumin and cayenne. Add the crushed tomatoes and the bay leaves, and stir. Return the roast to the pot and add the cilantro. Bring to a boil, then reduce the heat to a simmer. Cover with lid, place in the oven, and cook until the meat is fork tender, about 3 hours.
- Carefully transfer the meat to a cutting board and shred with a knife. Pour the liquid into a blender and puree. Return the shredded meat to the pot, add the pureed liquid, and stir to combine. Add salt and pepper to taste.
- To assemble: Lay some shredded beef on a tortilla, and top with guacamole and salsa. Garnish with cilantro leaves, sliced radishes and cotija cheese.
- Pulse the tomatoes, garlic, red onions, serrano, lime juice, cilantro and some salt and pepper in a food processor. The mixture should be chunky. Add some reserved tomato juice if the salsa is too thick. Drizzle the salsa with olive oil, then cover with plastic wrap and set aside for 30 minutes to allow the flavors to marry.
OVEN TACOS
I found this recipe on Pinterest and tried it with my family tonight. They loved it, but I must warn you. I don't use canned refried beans, I use http://www.food.com/recipe/simple-and-easy-homemade-refried-beans-460636. In addition, I didn't mix them in because only 1/2 of my family likes them. I layered them into 1/2 the tacos and because I put them on the bottom, those shells ended up a bit soggy. If you choose to separate them like me, I suggest you layer them on top of the meat! Optional Condiments- Lettuce (shredded) Tomato (diced) Salsa Guacamole Sour Cream Olives, sliced

Steps:
- To make taco seasoning, mix all of the ingredients together. Store in an airtight container.
- Preheat the oven to 400 degrees.
- In a large skillet brown ground beef and onion over medium-high heat. Drain off any excess liquid. Return to pan, add chilies, refried beans, tomato sauce, and taco seasoning. Mix well and cook for a few minutes if mixture seems runny.
- Spoon the taco meat mixture into the taco shells and place into a 9 x 13 inch baking dish, standing up. Sprinkle cheese over the top of the taco meat in each shell. Place into the oven and bake at 400 degrees for 10-12 minutes or until the cheese has melted and the tacos are heated through.
- Remove from the oven and top with any optional condiments for serving.

- In a large skillet, cook beef and onion over medium heat until no longer pink; drain. Add the next 11 ingredients to meat mixture. Simmer, uncovered, until liquid is almost completely reduced, stirring occasionally, 10-15 minutes. , Place taco shells open end up in a 13x9-in. baking dish; place a scoop of meat mixture into each shell; top with cheese. Bake at 400° until meat is hot and cheese is melted, 10-15 minutes. , In a small bowl, combine dressing ingredients; drizzle over tacos and serve with desired toppings.
