MOROCCAN-STYLE CARROT SALAD



Moroccan-Style Carrot Salad image

Simple, unique, and flavorful is what this Moroccan carrot salad is all about! Tender cooked carrots are tossed with fresh herbs and warm Moroccan spices like cumin and harissa, then dressed in lemon juice, extra virgin olive oil. The final touch, a sprinkle of toasted sesame seeds!

Kosher salt
2 lb carrots, peeled and cut into medallions
1 celery stalk, chopped
3/4 tsp harissa spice
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp sweet paprika
1 to 2 garlic cloves, minced
1 celery stick finely chopped
1/2 cup chopped fresh cilantro (mint or parsley would work as well)
1 to 2 tbsp fresh lemon juice
3 tbsp Extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
3 tbsp toasted sesame seeds, optional

Steps:

  • Bring a large pot of salted water to a boil. Add carrots and cook for about 20 minutes until nice and tender. Drain.
  • Transfer the cooked carrots immediately to a large mixing bowl. And while nice and warm, season with a dash kosher salt, and the spices (harissa spice, cumin, coriander and paprika.) Add minced garlic, celery, cilantro, lemon juice and extra virgin olive oil.
  • If you like, add a sprinkle of toasted sesame seeds. Give the carrot salad a good toss to combine. Set the carrot salad aside for a bit before serving (it's best served at room temperature.)

The salad can be made up to an hour ahead and chilled. Keep the dressing separately at room temperature, then drizzle it over just before serving.

1 tablespoon harissa, paste
5 tablespoons olive oil, plus 1 tsp for frying
1 tablespoon lime juice
2 tablespoons cilantro, finely chopped, plus a handful of whole leaves
8 mint leaves, finely chopped
black pepper
4 ounces whole blanched almonds
2 romaine lettuce hearts
6 scallions, trimmed, halved widthways and sliced into thin shreds
4 ounces kalamata olives

Steps:

  • Mix together the harissa, the 5 tablespoons of olive oil and the lime juice in a small bowl, using a small wire whisk. Stir in the chopped cilantro, mint and a grinding of pepper. Taste and adjust to your taste, adding a little more lime or harissa if wished.
  • Heat the remaining teaspoon of oil in a heavy-based pan, add the almonds and fry until golden, shaking the pan occasionally so they are evenly coloured. Tip onto kitchen paper to drain, season and set aside.
  • Cut the Romaine into chunky slices, stopping about a third from the top (separate that top third into leaves. Put the lettuce into a large bowl and scatter over the almonds, scallions, olives and remaining cilantro leaves. Give the dressing a quick whisk then drizzle over the salad.

3 cans chickpeas, rinsed and dried
1/2 cup red onion, diced
1/3 cup red pepper, diced
1/2 cup apple, diced
1/2 cup mint, chopped
1/2 cup cilantro, chopped
1 cup dried cranberries (raisins work too)
1 Lemon, zested and juiced
3 tbs red wine vinegar
1 tbs honey
1 tsp cumin
1 tsp cinnamon
1 tsp curry powder
2 tsp salt
1 tsp olive oil

Steps:

  • Grab yourself a large bowl and add all ingredients together. Mix thoroughly. Store in fridge for up to 5 days.

2 tablespoons extra-virgin olive oil
1 cup finely diced yellow onion
Sea salt
1 teaspoon grated fresh ginger, or 1/2 teaspoon ground ginger
1 teaspoon ground cumin
1/2 teaspoon paprika
1 pound orange-fleshed sweet potatoes, such as garnet yams, cut into 1/2-inch cubes
1/2 cup water
1/4 cup freshly squeezed orange juice, preferably blood orange juice
1 teaspoon grated orange zest
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed lemon juice
2 teaspoons Grade B maple syrup
12 kalamata olives, cut in half
1/4 cup finely chopped fresh flat-leaf parsley
1/4 cup almonds or shelled pistachios, toasted and coarsely chopped

Steps:

  • Heat the olive oil in a deep skillet over medium heat. Add the onion and a generous pinch of salt and sauté until slightly golden, about 5 minutes. Add the ginger, cumin, and paprika and sauté for 1 minute. Add the sweet potatoes, water, orange juice, orange zest, lemon zest, and 1/2 teaspoon salt and stir to combine. Decrease the heat to medium-low, cover, and cook for 15 minutes.
  • Uncover and cook, stirring occasionally, until the sweet potatoes are tender and the liquid is reduced to almost a glaze, about 5 minutes. Add the lemon juice, maple syrup, and olives and stir gently to combine. Taste; you may want to add a pinch of salt or squeeze of lemon juice. Transfer to a bowl and sprinkle with the parsley and almonds. Serve at room temperature.

  • Season with sugar, salt and pepper.

2 aubergines
2-3 tbsp olive oil
400g can chickpeas
good bunch fresh coriander , roughly chopped
1 red onion , finely chopped
1 tsp each paprika and ground cumin
1 tsp clear honey
1 lemon , juice only
4 tbsp olive oil

Steps:

  • Thickly slice the aubergines and arrange over a grill rack. Brush lightly with oil, sprinkle with salt and pepper, then grill until browned. Turn them over, brush and season again then cook until tender, about 8-10 mins in total. Remove from the grill and cut each slice into quarters.
  • Drain and rinse the chickpeas, then tip into a bowl with the aubergine, coriander and red onion. Mix the dressing ingredients in a screw-top jar, shake well, then use to dress the salad.

Another salad by Rachel Ray. You can substitute your favorite cheese for jarlsberg and if you want you can substitute your favorite bread for the peasant/country loaf.

1/2 cup extra virgin olive oil
2 garlic cloves, finely chopped
1 teaspoon ground cumin
country bread, torn into about 1/2 inch pieces
4 stalks celery & leaves, sliced
1 cup canned chick-peas, drained
4 ounces jarlsberg cheese, cut into about 1/4 inch cubes
1/2 cup slivered almonds, toasted
1/4 cup red wine vinegar

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a large bowl, combine 1/4 cup olive oil, the garlic, and the cumin.
  • Add the bread and toss.
  • Scatter the bread onto a baking sheet and bake, tossing occasionally, if necessary, until toasted.
  • In the same bowl, mix the celery, chickpeas, jarlsberg, almonds, vinegar, and the remaining 1/4 cup of olive oil.
  • Add the bread and toss. Let stand for 1 hour.
  • Season with salt and pepper if you want.
  • Tip: something I haven't tried is toasting the bread in the toaster first and then dipping.
