Dutch Potato Purée with Curly Endive & Bacon image

This old-fashioned Dutch winter dish is rich in potassium, vitamin C, folate, fiber and vitamins A and K. Try it now!

Provided by Karin Engelbrecht

Categories     Dinner     Entree     Side Dish

Time 1h5m

Yield 4

Number Of Ingredients 7

3.3 lbs./1.5 kg. potatoes (floury)
1/2 lbs./250 g. endive (curly)
10.5 oz./300 g. bacon (smoked)
2 cups/475 ml. milk
2 tbsp. butter
Pinch of nutmeg (freshly grated)
Salt and white pepper to taste

Steps:

  • Wash and peel the potatoes and cut into similarly sized pieces for even cooking. In a large soup pot, boil the potatoes in salted water for 20 minutes.
  • Meanwhile, wash the head of curly endive thoroughly under cool running water to get rid of all soil - you wouldn't want that gritty texture in your finished dish. Trim any coarse stems and discard any brown leaves. Spin the salad leaves dry using a salad spinner. With a sharp knife, cut the curly endive into thin strips.
  • Fry the bacon in a frying pan, until just crispy. Drain on kitchen paper and crumble into small pieces. Warm the milk in a small saucepan.
  • Drain, shake and dry the potatoes with kitchen towels before mashing with a potato masher or ricer. Working quickly, add the warm milk and butter. Season to taste with nutmeg, salt and white pepper.
  • Mix the raw curly endive through the cooked mashed potato mixture. Add the bacon, mix again, and serve piping hot. Tips:

CURLY ENDIVE SALAD WITH MUSTARD DRESSING, EGG AND GRUYèRE

Curly Endive Salad With Mustard Dressing, Egg and Gruyère image

This wintry salad uses the pale center leaves of the curly endive - save the outer leaves for another use, like adding to a soup - but you could also combine them with Belgian endive and Chioggia, Treviso or speckled Castelfranco radicchio. As for the eggs, which add heft, cook them as you prefer, with a runny, gooey or moist yolk.

Provided by David Tanis

Time 25m

Yield 4 servings

Number Of Ingredients 9

4 large eggs, at room temperature
Ice water
3 tablespoons red wine vinegar
2 teaspoons Dijon mustard
1 small garlic clove, grated or mashed to a paste
1/4 cup extra-virgin olive oil
Salt and black pepper
4 large handfuls tender, pale curly endive (from the center of 2 medium heads), washed and dried
About 2 ounces Gruyère

Steps:

  • Bring a small pot of water to a boil over high heat. Add eggs (the water should cover them), and return to a boil. Adjust heat so that the water is at a brisk simmer. For a runny yolk, cook for 7 minutes; for a gooey center, cook for 8 minutes; for a slightly moist center, cook for 9 minutes. Meanwhile, prepare an ice bath.
  • Immediately drain eggs and plunge into ice water to cool. When cool, crack and peel eggs. (Eggs can be cooked and peeled up to several hours in advance, and refrigerated.) Roughly chop eggs into haphazard slices.
  • Put vinegar, mustard and garlic in a small bowl. Whisk with a fork to dissolve. Slowly whisk in olive oil to make a slightly thick dressing. Season to taste with salt and pepper.
  • Put endive in a low, wide salad bowl and sprinkle very lightly with salt. Add dressing to taste and toss well. Transfer greens to individual plates. Top with chopped egg. With a vegetable peeler, shave thin slices of Gruyère over each salad.

BRAISED ENDIVE WITH LEEKS

Braised Endive With Leeks image

Provided by Moira Hodgson

Categories     side dish

Time 35m

Yield 10 servings

Number Of Ingredients 7

20 endive
4 medium leeks
3 tablespoons peanut or vegetable oil
5 tablespoons unsalted butter
2 1/2 cups chicken stock (preferably homemade)
Coarse salt and freshly ground pepper
4 tablespoons chopped chervil or parsley

Steps:

  • Preheat oven to 325 degrees.
  • Rinse the endive but leave the heads whole. Slice the leeks, trimming the roots and withered leaves. Rinse them thoroughly in several changes of cold water, making sure you have removed all the grit. Do not worry if the slices come apart.
  • Place the sliced leeks across the bottom of a buttered shallow baking dish just big enough to hold the endive in one layer (use two dishes if necessary). Arrange the endive on top and add the butter, cut into pieces, and the chicken stock. Season to taste with salt and pepper.
  • Cover with wax or foil paper and bake until the endive is tender (about 30 or 40 minutes) and the liquid has reduced to a syrupy glaze. (Remove the paper during cooking, about halfway through, if necessary to reduce the liquid).
  • Sprinkle with chervil or parsley and serve.
