This simple baked salmon really hits all the right notes: tangy, sweet, savory, a little spicy and crunchy. Cooking a larger piece makes for a nice presentation. Topped with buttery golden breadcrumbs and parsley, it's perfect for a weeknight dinner yet fancy enough to serve to guests.

2 tablespoons light brown sugar
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
1/4 cup panko breadcrumbs
1/2 cup parsley leaves, chopped
2 tablespoons unsalted butter, melted
1 1/2 pounds skin-on salmon fillet, preferably center-cut
1 tablespoon Dijon

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil. Mix the brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon kosher salt and a generous amount of freshly ground black pepper in a small bowl. Mix the panko with the parsley, butter, 1/4 teaspoon kosher salt and a few grinds of black pepper in another small bowl.
  • Place the salmon skin-side down on the prepared baking sheet and spread the surface with the Dijon. Press the brown sugar mixture all over the salmon then top with the breadcrumb mixture. Crimp all four sides of the foil to create a border around the salmon, this will help collect the juices so they don't spread and burn. Bake until the breadcrumbs are golden brown, and the salmon is firm and flakes easily when pressed, 15 to 18 minutes. Cut into four equal portions for serving.

2 garlic cloves, minced
1 teaspoon fennel seed
1 teaspoon olive oil
4 salmon fillets (1 inch thick and 4 ounces each)
1/2 teaspoon salt
1 cup orange juice

Steps:

  • In a large nonstick skillet coated with cooking spray, cook garlic and fennel seed in oil for 2 minutes. Sprinkle salmon with salt; add to skillet. Top with orange juice. Bring to a boil. Reduce heat; cover and simmer for 8-12 minutes or until fish flakes easily with a fork. , Remove salmon and keep warm. Simmer sauce, uncovered, for 6-9 minutes or until slightly thickened. Spoon over fillets.

1/2 cup pulp-free orange juice
1/4 cup lightly packed brown sugar
1 small garlic clove, minced
1/2 tablespoon louisiana hot sauce
4 boneless salmon fillets, about 5 oz each
3/4 teaspoon salt
3/4 teaspoon pepper
1 green onion, thinly sliced

Steps:

  • Place oven rack in center of oven. Preheat broiler to high. In a small skillet over medium-high heat, stir together orange juice, brown sugar and garlic. Bring to a boil and cook until thickened and glossy, 4-5 minutes. Cool to room temperature; stir in sauce.
  • Arrange fish on a broiling pan on a rack over a rimmed baking sheet. Sprinkle with salt and pepper. Brush liberally with some of the sauce. Broil, basting twice with sauce, until fish flakes easily with a fork, 8-10 minutes. Garnish with green onions.

1 1/2 pounds salmon fillet
1/3 cup orange marmalade
1/2 cup orange juice
1 tablespoon Dijon mustard
1 teaspoon ginger
2 teaspoons salt free citrus-herb seasoning

Steps:

  • Rinse salmon fillet under cold water and pat dry with paper towels. Cut into 6 serving portions and place salmon fillets in a large zip-top bag; set aside.
  • In a small bowl stir together remaining ingredients. Pour into zip-top bag. Squeeze air from bag and seal. Marinate in refrigerator for 1 to 2 hours.
  • Remove salmon from refrigerator 30 minutes before cooking, and bring to room temperature.
  • Light broiler and line baking sheet or broiler pan with aluminum foil.
  • Remove salmon from marinade and place on baking sheet. Discard marinade. Broil salmon 6 to 8 inches from heat source for 6 to 8 minutes or until cooked through. Do not overcook.
  • Serve immediately.

1 orange

Steps:

  • I like to take a fork and poke a few holes in the fish to let the orange juice soak inches.
  • Then, take half the orange and squeeze over the salmon to cover with juice. Coat generously with brown sugar and sprinkle with salt and pepper.
  • Next, slice remaining orange half into thin slices and put in oven at 350 for about 10-15 minutes. Remove orange slices and continue to cook until done to satisfaction, maybe 10-15 minutes.
  • Remove and squeeze orange slices over fillets. Serve and watch the smiles.

2 tbsp smoked paprika
1 tsp dried oregano
½ tsp cayenne pepper (or just a pinch if you want less heat)
1 tbsp soft light brown sugar
2 limes , zested, 1 juiced and 1 cut into wedges
1 garlic clove , crushed
3 tbsp olive or rapeseed oil
3 peppers , cut into chunks
2 red onions , peeled and cut into wedges
2 x 400g cans black beans , drained
850g side of salmon , pin-boned and scaled
3 small or 2 large ripe avocados
1 small, firm ripe mango
1 red chilli , finely chopped
small bunch coriander , chopped

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix the paprika, oregano, cayenne, sugar, lime zest, garlic and oil in a bowl with a good pinch of salt. Toss the peppers, onions and beans with half of the spice paste in a large roasting tin, then cook in the oven for 25 mins.
  • Remove from the oven and give the veg and beans a good mix. Lay the salmon on top, skin-side down, then brush over the remaining spice paste. Bake for a further 25 mins, until the salmon is cooked through.
  • Meanwhile, for the salsa, halve, stone and finely chop the avocados and mango. Mix with the lime juice, chilli, coriander and some salt. Serve the salmon, veg and beans with the salsa and lime wedges for squeezing over.

  • Season the salmon fillet generously with 1 teaspoon fine salt and 1/4 teaspoon pepper, and place it on top the oranges in the center of the pan, skin side down. Drizzle the salmon with 1 tablespoon pomegranate molasses; use the back of a spoon to spread it over the top of the fillet, coating it evenly. Sprinkle with black sesame seeds.
  • Bake in preheated oven until salmon is medium-rare, which can take as little as 15 minutes for a thinner fillet or up to 30 minutes if it’s quite thick. To determine doneness, insert a metal cake tester or the tines of a fork into the center of the thickest part of the fillet for about 5 seconds, then remove it and place it against your lip. If it is pleasantly warm, the salmon is done. (If it is hot, the salmon is overcooked.)
  • Meanwhile, peel and segment any remaining mandarins, and supreme the larger remaining oranges. To do this, cut a slice from the top and bottom of an orange to reveal the flesh. Stand the orange upright and slice away the peel in wide strips, cutting downward, following the contour of the fruit, and removing all the white pith and as little of the flesh as possible. Holding the orange over a medium bowl, use a sharp paring knife to cut along both sides of each segment, releasing the segments and allowing them and the juice to drop into the bowl beneath. Pick out the seeds as you go. Squeeze any remaining juice from the pith into the bowl. Repeat with the remaining oranges.
