2 tablespoons olive oil
3 garlic cloves minced
2 pouches 2.6 ounces tuna in olive oil
1 tablespoon lemon juice (plus zest)
Salt & pepper to taste
2 tablespoons capers
2 tablespoons fresh parsley chopped (divided)
Grated parmesan (for serving)

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup pasta cooking water, then drain the pasta. Return to the pot to keep warm.
  • In the wide pan, heat the olive oil at medium heat. Then add the garlic and cook until fragrant, about 30 seconds. Stir in the tuna, lemon juice and zest, salt and pepper, and heat through for 1 minute.
  • Add the pasta, capers and 1 tablespoon chopped parsley, and continue to stir until the spaghetti is well coated. Add as much of the reserved pasta water as needed to thin out the sauce.
  • Garnish with remaining parsley and serve warm.

8 oz (225g) spaghetti pasta
1 tablespoon olive oil
1 teaspoon butter (or olive oil)
5 cloves garlic (finely chopped (with a knife))
½ teaspoon chili flakes (or to taste)
10 anchovies in oil (drained and roughly chopped)
15 kalamata olives (or black) (pitted and cut in half)
2 tablespoons capers (drained and rinsed)
1 can crushed tomatoes (14 oz / 400g) (or tomato passata/tomato puree)
½ cup pasta cooking water
½ teaspoon sugar (optional)
salt and black pepper (to taste)
3 tablespoons chopped parsley (to serve)
grated parmesan (to serve)

Steps:

  • Cook the spaghetti al dente (it should have a bite to it) in a small amount of well-salted water. Reserve about a ½ cup of the pasta cooking water (!).
  • Prepare the ingredients: finely chop the garlic (do not use a garlic press), roughly chop the anchovies, drain and rinse the capers, and cut the olives in half.
  • Heat the olive oil and butter in a large frying pan, add the garlic, chili flakes, and anchovies, cook over medium-low heat, stirring, for 1 minute.
  • Add the olives, capers, crushed tomatoes/passata, and pasta cooking water. Bring to a boil, reduce the heat to low and cook for 15 minutes (stirring from time to time) until the sauce is thickened. After this time, season the sauce lightly with salt and pepper. Be careful with adding salt, because anchovies, olives, and capers are already salty. Take the pan off the heat.
  • Add the cooked pasta to the pan, toss with the sauce.
  • Sprinkle with chopped parsley, grated parmesan, and serve immediately.
  • Enjoy!

3 tablespoons extra virgin olive oil
3 garlic cloves, 2 sliced, 1 minced
1/2 cup fresh bread crumbs
1/4 teaspoon hot red pepper flakes
1 14-ounce can chopped tomatoes, with juice
2 tablespoons capers, rinsed and coarsely chopped
1/2 cup green or black olives, pitted and coarsely chopped 2 ounces
Salt
freshly ground pepper
3/4 pound spaghetti, preferably a good whole-wheat brand
1/4 cup chopped fresh parsley (optional)
1/4 cup freshly grated Parmesan (optional)

Steps:

  • Begin heating a large pot of water for the pasta. Meanwhile, combine 2 tablespoons of the olive oil and the sliced garlic over medium-low heat in a medium saucepan or skillet. Cook, stirring often, until the garlic turns golden, about two minutes. Do not let it take on any more color than this. Remove the garlic slices with a slotted spoon and discard, then add the bread crumbs to the pan. Turn the heat to medium, and cook, stirring, until the bread crumbs are crisp. Remove from the heat, and set aside.
  • Return the pan to medium heat, and add the remaining olive oil, the red pepper flakes and the minced garlic. Cook for about 30 seconds until the garlic smells fragrant, and add the tomatoes, capers and olives. Bring to a simmer, and simmer until the tomatoes have cooked down and smell fragrant, 15 to 20 minutes. Season with salt and pepper.
  • When the water comes to a boil, salt generously and add the spaghetti. Cook al dente, following the cooking recommendations on the package but checking about a minute before the suggested time. Drain, and toss with the tomato sauce. Sprinkle the bread crumbs and parsley on top, toss again briefly and serve, passing the Parmesan at the table.

4 heaped teaspoons baby capers
500 g ripe mixed-colour cherry tomatoes
1 tablespoon dried oregano, ideally the flowering kind
1 x 220 g jar of tuna in olive oil, from sustainable sources

Steps:

  • Cook the pasta in a pan of boiling salted water according to the packet instructions.
  • Meanwhile, place a large non-stick frying pan on a medium-high heat with 1 tablespoon of olive oil. Add the capers, fry until super-crispy, then scoop out and put aside, leaving the fragrant oil behind.
  • Halve and add the tomatoes, then sprinkle in most of the oregano.
  • Drain and flake in the tuna, add 2 ladlefuls of pasta cooking water, and simmer until the pasta is done.
  • Drain the pasta, reserving a mugful of cooking water, then toss the pasta into the tuna pan, loosening with a splash of reserved cooking water, if needed.

1 red onion , finely chopped
500g cherry tomatoes , halved
400g dried pasta (we used rigatoni)
1l hot vegetable stock
2 x 110g cans tuna in olive oil, drained
3 tbsp mascarpone
30g parmesan , grated
2 heaped tbsp capers
½ lemon , zested
small bunch parsley , finely chopped

Steps:

  • Heat the oil in a saucepan over a medium-low heat. Add the onion and a pinch of salt and fry gently for 7 mins or until softened and turning translucent. Add 350g of the tomatoes, the pasta and veg stock to the pan and bring to the boil, then reduce to a simmer and cook for 15 mins, uncovered, stirring occasionally. The tomatoes should have broken down and the pasta will be just cooked.
  • Add the remaining tomatoes and bubble uncovered on a medium-high heat for 5 mins or until the liquid has reduced. Gently fold through large flakes of tuna, the mascarpone, parmesan, capers, lemon zest and parsley as well as salt and a generous grind of black pepper. Place a lid on the pan and leave to sit for 5 mins before serving in deep bowls.

This recipe, pasta with tuna, anchovies and capers, showered with lots of green herbs and scallions, is one of my family's household favorites. I like it with a long, thin, twirlable pasta - spaghetti, linguine or bucatini - but you can use whatever pasta you have on hand. Even macaroni works just fine and might even persuade your finicky kid to eat this dish (though, so far, mine abstains).

12 ounces long, thin pasta, such as bucatini, spaghetti or linguine
3 tablespoons extra-virgin olive oil

  • In a well-salted pot of boiling water, cook pasta according to package directions until al dente. Drain, saving 1 cup pasta water.

Add anchovies and capers and cook until anchovies melt and capers and garlic turn golden, 2 to 3 minutes longer. Add 1/2 cup pasta water, let it reduce until there is just a little left in the pan, then add pasta and herbs and toss well to coat. Add tuna and toss well.

This recipe is much like a puttanesca sauce but without the anchovies. It can be salty so be sure to rinse the olives and capers, especially if you can't find low-salt tomatoes. It's from a cookbook called "Pasta Light" which I've had for 15 years. I wanted to post it here to save it. My picky husband will eat this straight from the pan, before it even goes onto the pasta. Best served with "strand" pasta like spaghetti or linguine, rather than shapes. The recipe doubles well - I often double and freeze half.

1 onion (chopped)

14 oz chopped tomatoes ((1 can))

Steps:

3 teaspoons finely minced garlic (about 3 cloves), divided
1/2 teaspoon dried red chile pepper flakes (or 1 small, dried red peperoncino, crushed with your fingers)
3 tablespoons salt-packed capers (soaked in water for 15 to 20 minutes and then rinsed thoroughly a few times to remove excess salt)
1/2 cup dry white wine
2 (6-ounces each) cans extra-virgin-olive-oil-packed yellowfin tuna (drained)
Fine sea salt to taste
1/4 cup fresh flat-leaf parsley leaves (chopped)
1 teaspoon lemon zest (grated)
3 tablespoons unsalted butter (broken into several pieces)
1 pound short pasta (cooked to al dente and drained, 1/4 cup of the cooking water reserved)
Freshly ground black pepper to taste

Steps:

  • In a skillet large enough to hold the pasta, heat the oil, 1 1/2 teaspoons of the garlic, the red chile pepper flakes, and capers over medium heat until fragrant (but not browned), about 1 minute.
  • Add the wine and bring to barely a simmer; cook for 1 minute.
  • Add the tuna and salt to taste and sauté over low heat for 1 minute.
  • Toss the tuna-caper mixture with the remaining 1 1/2 teaspoons of minced garlic, the parsley, lemon zest, butter, cooked pasta, and as much of the reserved pasta cooking water as needed to form a creamy sauce that coats the pasta. Season with freshly ground black pepper and serve immediately.

1 pound dried fettuccine
1/4 cup extra virgin olive oil

1 1/2 cups canned tomato puree

1/4 cup Gaeta olives, pitted and chopped
14 ounces excellent-quality tuna preserved in olive oil
Freshly ground black pepper
2 tablespoons chopped flat-leaf parsley

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook just until al dente, about 7 minutes.
  • Meanwhile, heat the oil in a wide, deep sauté pan set over medium heat. Add the garlic and cook until golden-brown, about 2 minutes. Add the anchovies and cook for 2 minutes more. Stir in the tomato puree and capers.
  • Reserve 1/4 cup of the cooking liquid, then strain the pasta. Stir the olives and tuna into the sauce, then gradually stir in the reserved pasta water until the sauce attains a pleasing consistency. Add the hot pasta and toss. Season with pepper and toss again.
  • To serve, divide the hot pasta among individual warmed bowls, topping each serving with some chopped parsley.
