Super simple and very tasty. I got this recipe from my husband's cousin years ago and it has remained a favorite even with my children who don't care for pork. The onion soup adds a wonderful flavoring.

Steps:
- Brown pork chops in frying pan, if desired.
- (This would be for the appearance of the pork chops only. It does not alter the taste of the recipe.) Place rice in 9 x 13 roasting pan.
- Add water, onion soup mix and combine with rice.
- Place the 4 or 5 chunks of margarine on top of rice.
- Place pork chops on top.
- Cover casserole with foil and bake at 350 degrees for 1 hour.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 3-quart casserole dish.
- Stir chicken broth, rice, cream of chicken soup, and water together with a whisk in the prepared casserole dish until smooth; add Cheddar cheese, season with salt and pepper, and stir.
- Lie pork chops into the rice mixture in a single layer; season with more black pepper.
- Bake in preheated oven until rice in the middle of the dish is tender and pork chops are golden brown, about 80 minutes.

PORK CHOP CASSEROLE
My mom came to cook and clean for a few days after our first daughter was born and saw this recipe in my Quick Cooking magazine. My husband and I were both skeptical when we heard the ingredients, but fell in love at first bite! I've made it about once a month since then. It's incredibly quick and easy. I usually do 1 cup white rice and 1/3 cup partially cooked wild rice, but it's delicious either way. I always use Campbell's Chicken with White and Wild Rice Soup instead of the regular Chicken and Rice, but there again, either works. The Wild Rice soup has some veggies in it that add some nice colour, though.

- In a large skillet, brown pork chops in oil; drain.
- Place rice in a greased (cooking spray) 3 quart casserole dish; pour orange juice over top.
- Top with pork chops and soup.
- Cover and bake at 350 for 40-45 minutes or until pork juices run clear and rice is tender.
- *Note: I often make the rice without the pork chops as a side dish. Just add an extra 1/4 to 1/2 cup of orange juice. This is an excellent accompaniment to barbequed meat.

PORK CHOP AND RICE CASSEROLE
Steps:
- Lay pork chops in the bottom of a 9x13 casserole dish. Pour cup of rice over them. Pour broth over the rice and pork chops. Sprinkle Italian seasoning and lemon pepper to taste. Cover casserole tightly with foil.
- Bake at 300 degrees F for 1 hour 45 minutes - 2 hours depending on the size of the pork chops. Best to check at 1 hour 45 minutes, so as not to dry it out. Remove from oven and serve.

Steps:
- In a saucepan, bring the 1 3/4 cups water to boiling.
- Remove from heat; stir in rice.
- Cover; set aside.
- In skillet cook bacon till crisp.
- Remove bacon and crumble, reserving 2 T. drippings.
- Set aside.
- In bowl combine eggs and the 2 T. water.
- In skillet, cook eggs in 1 T. of the reserved bacon drippings till set, stirring occasionally.
- Cut eggs in narrow strips.
- Add rice, bacon, onion and the 3 T. soy sauce to eggs; mix well.
- Turn into a greased 1 1/2 quart casserole.
- In skillet brown chops on both sides in remaining 1 T. drippings.
- Arrange chops atop rice mixture; brush with additional soy sauce.
- Bake, covered, at 350 till chops are tender, about 40 minutes.

- Preheat oven to 275 degrees F (135 degrees C).
- Heat vegetable oil in a large skillet over medium heat, and brown the pork chops on both sides, 5 to 8 minutes per side. Place the chops into a 9x13-inch baking dish. In a large saucepan, whisk together the cream of chicken soup, cream of celery soup,and milk until smooth. Stir in the rice, and add the butter; bring the mixture to a boil over medium heat, and stir until the butter has melted. Pour the rice mixture over the chops; cover the dish with foil.

PORK CHOPS AND RICE
Steps:
- Preheat the oven to 350 degrees F.
- In a medium skillet, melt the butter over medium-low heat. Add the rice and saute until it is light brown, about 5 minutes.
- Spread the rice in a 9- by 13- by 2-inch casserole. Sprinkle the pork chops with salt and arrange them on top of the rice. Pour the broth and 2/3 cup water over the chops. Spread the onion rings over the chops and sprinkle them with the pepper. Cover the dish with aluminum foil and bake until the pork chops are tender, about 45 minutes.
- Change the oven to broil, add a bit more broth if the rice is dry and return the dish to the oven for a couple of minutes until the pork is browned.

- 1. Preheat oven to 350*. Spray a large casserole (2.5 Qt) with Pam.
- 2. Dredge the pork chops in flour, and brown in a skillet with 2-4 Tbs of EVOO
- 3. Pour 3/4 C of uncooked Rice into prepared casserole dish.
- 4. Top with a generous sprinkle of dried onion flakes.
- 5. Place browned pork chops on the rice/onion mixture.
- 6. Pour undiluted can of Beef Consomme Soup over all. Cover with casserole lid or aluminum foil.
- 7. Bake at 350* for 45 minutes. Remove cover, bake an additional 15 minutes. Serve.
- 8. OPTIONAL:I had some leftover french fried onions after Thanksgiving this year. The last 15 min of baking this I added 1/2-1 Cup of the french fried onions an absolute 4-STAR improvement on a recipe I didn't think could be improved!!!

Steps:
- 1. Sprinkle pork chops with Seasoned Salt. Heat pork chops in skillet. Lightly brown on both sides.
- 2. Spray a 2 quart casserole dish, lightly with cooking spray. Remove chops to casserole dish.
- 3. Add rice to drippings in skillet. Sometimes a little more olive or canola oil is needed. Cook until rice is browned.
- 4. Stir in gravy and water. Arrange onions and carrots on top of pork chops. Pour on Gravy.
- 5. Bake 1 hour or until pork chops are done and veggies are tender. Cover dish with lid or foil while in the oven. This lets everything bake evenly.
- 6. Oven temperature - 350º
