Olive Tapenade Crusted Chicken and Quinoa with Roasted Garlic, Roasted Red Peppers and Basil image

Nonstick cooking spray
1 cup pitted kalamata olives
1 cup green olives
12 oil-cured olives, pitted
1 tablespoon freshly chopped parsley leaves
1 tablespoon drained capers
1 tablespoon fresh thyme leaves
4 anchovy fillets
8 boneless, skinless chicken breast halves
Salt and freshly ground black pepper
2 cups peeled garlic cloves
1 cup quinoa
1 cup chopped roasted red peppers (from water-packed jar)
1/4 cup freshly chopped basil leaves

Steps:

  • Preheat oven to 400 degrees F. Coat a large baking sheet with nonstick cooking spray.
  • In a blender or food processor, combine all the olives, parsley, capers, thyme, and anchovies. Process until mixture forms a thick paste. Place chicken on prepared baking sheet. Top only 4 of the 8 chicken pieces with the olive tapenade mixture. Season the other 4 of the 8 chicken pieces with salt and pepper, to taste. Wrap garlic cloves in foil and place alongside chicken. Roast chicken and garlic for 25 minutes, until chicken is cooked through and garlic cloves are golden brown and tender.
  • Meanwhile, cook quinoa according to package directions. When liquid is absorbed, fold in red peppers, about 1/3 of the roasted garlic cloves and basil and season, to taste, with salt and black pepper.
  • Serve half of the chicken and all of the quinoa with this meal and reserve extra chicken and extra garlic cloves for future meals.

This gluten free, dairy free Roasted Garlic Olive Tapenade tastes as fancy as it sounds, but you won't have to spend all day in the kitchen to make it!

1 head garlic
Olive oil
½ cup pitted green olives, finely chopped
¼ cup pitted kalamata olives, finely chopped
¼ cup oil-packed sun-dried tomatoes, drained and finely chopped
¼ cup jarred roasted red peppers, drained and finely chopped
2 tablespoons chopped fresh basil or flat-leaf parsley
1 tablespoon extra-virgin olive oil
1/8 to ¼ teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 400°F. Using a sharp knife, cut about ½-inch off the top of the garlic head to expose the individual cloves. Remove any papery outer peel but do not expose the flesh of the cloves.
  • Place garlic head, cut side up, in a small custard cup. Drizzle top with a little olive oil. Cover with foil. Bake 40 to 45 minutes or until garlic is soft (poke a thin, sharp knife into a garlic clove to check doneness).
  • Cool garlic completely. Pinch the bottom of the garlic head to squeeze the individual cloves onto a cutting board. Using the wide side of a chef's knife, mash the garlic cloves on the cutting board. Scrape garlic into a medium bowl.
  • Add green and kalamata olives, tomatoes, red peppers, basil, oil and black pepper to garlic. Stir until well combined. Serve immediately or cover and store in the refrigerator up to 3 days.

For a 10-minute appetizer dip, sandwich spread, or pizza "sauce," try this easy homemade Olive Tapenade. Customize this Mediterranean spread with any variety of briny olives.

1 1/2 cups pitted, brine-cured olives ((see note 1))
1 teaspoon anchovy paste (or 2 anchovy filets, minced (see note 2))
3 tablespoons capers (rinsed (see note 3))
1 1/2 tablespoons parsley (coarsely chopped )
3 cloves garlic (roasted if desired (see note 4))
3 tablespoons fresh lemon juice ((from 2 lemons))
Salt and freshly ground black pepper
1/4 cup olive oil

Steps:

  • In a food processor, combine olives, anchovies, capers, parsley, garlic, lemon juice, and ¼ teaspoon pepper. Pulse 2 to 3 times until coarsely chopped.
  • Drizzle in olive oil and pulse a few more times until a chunky paste forms, scraping down the sides as needed. Season to taste with salt and pepper and serve at room temperature.

One 12-ounce jar large roasted red peppers, drained
One 9 1/2-ounce jar pitted kalamata olives, drained
One 5 3/4-ounce jar pimento-stuffed olives, drained
2 cloves garlic, or more to taste
Red pepper flakes, to taste
Kosher salt and freshly ground black pepper
1/4 to 1/2 cup extra-virgin olive oil
1 package prepared crostini (about 24) or 24 baguette slices
One 6 1/2-ounce jar pesto
Chopped fresh parsley, for garnish

Steps:

  • Add the red peppers, kalamata and pimento-stuffed olives, garlic, red pepper flakes and some salt and pepper to the bowl of a food processor. Pulse a few times, adding enough olive oil to loosen the mixture to a loose paste. Taste and adjust the seasoning, adding more garlic or red pepper flakes if desired.
  • Spread the crostini with a bit of pesto and spoon on a big dollop of the tapenade. Garnish with fresh parsley and serve immediately.

SPAGHETTI WITH TAPENADE SAUCE AND ROASTED TOMATOES



Spaghetti with Tapenade Sauce and Roasted Tomatoes image

1 pound spaghetti
1 pint cherry tomatoes, halved and seeded
Freshly ground black pepper
Extra-virgin olive oil for drizzling, plus 3 tablespoons
1/2 teaspoon dried oregano
4 anchovy fillets
3 tablespoons chopped capers
1/2 teaspoon crushed red pepper flakes
3 to 4 cloves garlic, finely chopped
1 cup packed, pitted black olives, finely chopped, with some brine (recommended: Kalamata)

Steps:

  • Heat the oven to 400 degrees F.
  • Bring a large pot of water over medium heat to a boil. Salt the water, add the spaghetti and cook to al dente. Remove and reserve a cup or so of the cooking liquid before draining.
  • Add the tomatoes to a small bowl and season with salt and pepper, to taste. Drizzle with extra-virgin olive oil and sprinkle with oregano. Scatter the tomatoes on a baking rack over a baking sheet and roast about 20 minutes.
  • Heat about 3 tablespoons extra-virgin olive oil in a large skillet over medium heat. Add the anchovies, working them into oil with a wooden spoon. Stir in the capers, red pepper flakes, garlic, olives, and a splash of olive brine, and saute 3 to 4 minutes, stirring frequently. Stir in the pasta cooking liquid, about 1 cup, and toss in the pasta.
  • Put the tapenade pasta into serving bowls and top with oven roasted cherry tomatoes. Serve as a first course or alongside a seafood entree.

OVEN-ROASTED PORK TENDERLOIN WITH BLACK OLIVE TAPENADE AND CHARRED YELLOW PEPPER SAUCE



Oven-Roasted Pork Tenderloin with Black Olive Tapenade and Charred Yellow Pepper Sauce image

2 yellow bell peppers, charred on the grill, needed and coarsely chopped (you can also char the peppers over a stove burner or under the broiler)
Salt and pepper
1/3 cup rice wine vinegar
6 roasted garlic cloves
Pinch saffron threads
1 tablespoon honey
1 teaspoon Dijon mustard
3/4 cup pure olive oil
1 cup ancho chile powder (available at Hispanic and specialty markets)
1/2 cup paprika
1 tablespoon minced garlic
1/3 cup plus 3 tablespoons pure olive oil
2 pork tenderloins, 2 pounds each, butterflied
Salt and pepper
Black olive tapenade, recipe follows
Charred yellow pepper sauce, recipe above
3 tablespoon pine nuts
1 1/2 cups pitted, nicoise olives
4 garlic cloves, peeled
3 anchovy fillets
1/4 cup pure olive oil

Steps:

  • In a blender, combine the peppers, vinegar, garlic, saffron, honey, and mustard and blend for 30 seconds. With the motor running, slowly add the oil until it emulsifies. Season to taste with salt and pepper. Yield: about 1 1/2 cups;
  • Combine the ancho powder, paprika, garlic, and 1/3 cup of the olive oil in a mixing bowl and mix well. Set aside. Preheat the oven to 400 degrees F.
  • Season both sides of the tenderloin to taste with salt and pepper. Spread a thin layer of tapenade down the center, fold each side over the filling, and tie with butcher's twine. Coat with the reserved ancho mixture.
  • Heat the remaining 3 tablespoons of olive oil in a large saute pan over medium to high heat until almost smoking and sear the pork on all sides. Place in a baking dish and roast until the outside is crusty and the meat is firm to the touch, about 10 minutes.
  • Let the tenderloin rest for 10 minutes, then slice. Spoon the charred yellow pepper sauce onto a serving platter and top with the pork slices.
  • Place the pine nuts, olives, garlic, anchovies, and the oil in a food processor and blend until the mixture is thick but still has texture. Season to taste with salt and pepper. May be refrigerated up to 3 days. Use at room temperature.;

GARLIC SPREAD WITH OLIVE TAPENADE



Garlic Spread With Olive Tapenade image

I originally made this to emulate the sandwich spreads you get at the Safeway deli. (Those sandwiches are super addicting, but we don't live near a Safeway anymore!) This is a pretty perfect match and is SO GOOD on sandwiches, but also makes a very pretty party appetizer if you spread the garlic spread on toasted baguette slices and then top with the olive tapenade. I always use reduced-fat cream cheese and mayo. I have made this several times without the kalamata olives (they're more expensive so I don't always have them on hand) and we enjoyed it just the same. Recipe yield and prep times are approximate...I'm horrible at paying attention to things like that...
