PICKLED HERRING CANAPES

Yield Makes 12 canapés

Number Of Ingredients 7

6 slices of rye bread
3 tablespoons unsalted butter, softened
1/2 cup minced fresh parsley leaves
2 tablespoons minced radish
2 tablespoons minced onion
twelve 4-inch thin strips of bottled pickled herring fillet, patted dry
24 drained bottled capers

Steps:

  • Spread the bread with the butter, cut into twelve 2-inch squares, and press the buttered side of the bread gently into the parsley to coat it. In a small bowl combine well the radish and the onion and divide the mixture among the bread squares. Roll up each herring strip into a coil and arrange the herring and the capers decoratively on the bread.
  • The canapés may be made 30 minutes in advance and kept covered and chilled. Arrange the canapés on a platter.

BLUE CHEESE MOUSSE CANAPES WITH RADISH

1/3 pound blue cheese
1/4 pound cream cheese
Kosher salt and freshly ground black pepper
1/3 cup heavy cream, whipped to soft peaks
About 48 (1 1/2-inch) white bread rounds, buttered and toasted
About 48 thin slices radish

Steps:

  • In a food processor, puree the blue and cream cheeses until very smooth. Season with salt and pepper, to taste. Fold the whipped cream into the mousse until well blended. There should be no lumps. Transfer the mousse to a pastry bag fitted with a round tip. Pipe the mousse onto the white bread rounds and top each with a radish slice. Serve.

12 large radishes (about 3/4 pound)
an 8-ounce package cream cheese, softened
1 tablespoon finely chopped fresh parsley leaves
1 teaspoon finely chopped fresh chives
1 tablespoon fresh lemon juice
coarse salt to taste
8 slices pumpernickel or rye bread, crusts discarded, each slice cut into 4 triangles and toasted

Steps:

  • Into a bowl finely shred 8 radishes and squeeze out excess liquid. In another bowl stir together cream cheese, herbs, and lemon juice. Stir in grated radishes and salt and pepper to taste. Radish mixture may be made 1 day ahead and chilled, covered.
  • Just before serving, spread radish mixture on toasts. Thinly slice remaining radishes and arrange a few slices decoratively on each canapé. Sprinkle canapés with salt to taste.

For Caesar mayonnaise
1/2 cup packed fresh flat-leafed parsley leaves
2 teaspoons minced garlic
1/4 teaspoon salt
1 cup mayonnaise
1 cup freshly grated Parmesan (about 3 ounces)
1 teaspoon mashed drained anchovy fillet, or to taste
3 tablespoons fresh lemon juice
freshly ground black pepper to taste
1 pound green beans
1 pound wax beans
1 pound purple beans*
6 bunches assorted red and white radishes with tops*
*available at specialty produce markets and some specialty foods shops

Steps:

  • Make Caesar mayonnaise:
  • Chop parsley and mash garlic to a paste with salt. In a bowl stir together parsley, garlic paste, and remaining mayonnaise ingredients and season with salt if necessary. Mayonnaise may be made 1 week ahead and chilled, covered.
  • Trim beans and have ready a large bowl of ice and cold water. In a large kettle of boiling salted water blanch green beans and wax beans separately 2 minutes, or until colors brighten but beans are still crisp, transferring to ice water to stop cooking. (Do not blanch purple beans or they will lose their color.) Drain beans and pat dry. Beans may be blanched 1 day ahead and chilled in sealable plastic bags.
  • Trim radishes, leaving some small green leaves attached.
  • Serve crudités with mayonnaise.

24 very thin slicess homemade-type white bread
1 cup mint leaves (from about 1 large bunch)
16 radishes, trimmed and sliced as thin as possible

Steps:

  • In a small bowl stir together mayonnaisse, sour cream, zest, mustard, lemon juice, and salt and pepper to taste.
  • Spread bread generously with lemon mayonnaise. Top half of slices with a layer of mint and top mint with overlapping rows of radish. Top radish with remaining bread and press together gently. Trim crusts and cut sandwiches in half diagonally. Sandwiches may be made 2 hours ahead, wrapped in plastic wrap, and chilled.

Garnish: tiny fresh mint leaves and finely grated fresh lemon zest

Steps:

  • Stir together cream cheese, herbs, zest, lemon juice, table salt, and cayenne.
  • Slice 32 (1/8-inch-thick) rounds from cucumber with slicer. Trim bottoms from radishes, then slice into 32 (1/16-inch-thick) rounds with slicer. Top each cucumber slice with a radish slice and 1/2 teaspoon herbed cream cheese. Sprinkle with coarse sea salt and serve immediately.

  • In a mixing bowl combine Taramosalata, lemon zest and juice, chopped dill, green onions and pepper. Whisk until everything is incorporated and the spread is smooth. Spread 1 heaping teaspoon over the tops of cooled toasts. Arrange 3 radish slices in any pattern you like; garnish with chives and dill sprigs. Transfer to serving platter and scatter the Kalamata olives around the platter. Serve.
