  • Peel, halve and core 2 pears. Put in a shallow dish with 1 cup water, 1/3 cup sugar, 1 cinnamon stick and 1 star anise pod. Cover with plastic wrap and microwave until the pears are soft, 8 minutes. Meanwhile, beat 1/2 cup heavy cream with 1 tablespoon sugar and 1/4 teaspoon ground cinnamon until soft peaks form. Serve the pears with the syrup and cinnamon cream.

375 milliliters (1/2 bottle) Muscat wine
Two 12-ounce bottles ginger beer
3 tablespoons lemon juice
1 tablespoon rosewater
1/2 teaspoon ground ginger
5 black peppercorns
3 whole star anise
1 cinnamon stick
1 vanilla bean, split and scraped
Kosher salt
4 firm Anjou, Bartlett or Bosc pears, peeled
Ice cream, for serving, optional

Steps:

  • Place a medium pot over medium heat and pour in the wine, ginger beer, lemon juice, rosewater and 1 cup water. Add the ginger, peppercorns, star anise, cinnamon stick and vanilla bean seeds and pod. Stir in a pinch of salt and whisk to combine.
  • Carefully place the pears in the pot, then cover with a circle of parchment paper to keep the pears submerged. Bring to just below a simmer and poach until tender, 15 to 20 minutes depending on the size and firmness of your pears.
  • Remove the pears from the pot and simmer the liquid to reduce by at least half, about 15 minutes. Remove the vanilla bean and spices. Serve the pears warm with a drizzle of the reduced poaching liquid and some ice cream if desired.

2 tablespoons water, plus
1 1/4 cups water
1/2 cup sugar
3 whole star anise
4 whole cloves
1 cinnamon stick
1/2 vanilla bean, cut cross wise in length
4 medium firm but ripe Anjou pears, peeled, quartered, cored

Steps:

  • Combine sugar 2 tablespoons water, star anise, cloves, cinnamon stick and vanilla bean in a heavy large saucepan.
  • Stir over low heat until sugar dissolves.
  • Increase heat and boil with out stirring until syrup turns a deep amber color, occasionally brushing down the sides of the pan with a wet pastry brush and swirling pan, about 9 minutes.
  • Remove from heat add 1 1/4 cups of water (the mixture will bubble vigorously).
  • Bring to a simmer, stirring until pieces of caramel dissolve.
  • Add pears, cover and simmer until tender, turning pears once about 5 minutes.
  • Using a slotted spoon, transfer pears to bowl.
  • Boil liquid in sauce pan until thick and syrupy, about 5 minutes.
  • Pour syrup over pears toss gently to coat.
  • Chill until cold.
  • Serve cold.

3 cups red wine, such as Cabernet or Merlot
3/4 cup sugar
1 cinnamon stick
1 star anise
1 clove
Zest of 1 orange
1 vanilla bean, cut in half lengthwise
4 pears, such as Anjou, Bartlett or Bosc, cored and peeled
Whipped cream, for serving
Ground cinnamon, for serving

Steps:

  • Combine the wine, sugar, cinnamon stick, star anise, clove, orange zest and vanilla bean in a deep pot and bring to a simmer. Add the pears, cover with a heatsafe plate (making sure that it fully submerges the fruit) and cook on low heat until you can pierce the pears easily with a knife, 30 to 45 minutes.
  • Serve with whipped cream and ground cinnamon.

1 cup dry white wine

2 tablespoons fresh lemon juice
2 star anise*
1 2-inch piece cinnamon stick
1 2-inch piece fresh ginger, sliced
4 large (10 ounces each) Asian pears
1 1 3/4-pound papaya, diced
1 14-to 16-ounce mango, diced
*A brown star-shaped seed pod; available at Asian markets and specialty food stores and some supermarkets.

Steps:

  • Bring first 7 ingredients to boil in heavy large saucepan, stirring until sugar dissolves. Cover and simmer 5 minutes.
  • Peel and core pears. Add to syrup. Add enough water to cover pears. Cover pan; simmer until pears are tender, about 40 minutes. Using slotted spoon, transfer pears to bowl. Increase heat; boil liquid until reduced to 3/4 cup, about 25 minutes. Strain syrup; pour over pears. Chill until cold. (Can be made 2 days ahead. Chill.)
  • Stand 1 pear in center of each plate. Spoon papaya and mango around pear. Spoon syrup over and serve.

POACHED PEARS IN SPICED RED WINE

1 vanilla pod
1 bottle red wine
225g caster sugar
1 cinnamon stick, halved
fresh thyme sprig, plus sprigs to seve
6 pears, peeled, but kept whole with stalk intact

Steps:

  • Halve the vanilla pod lengthways, scrape out the black seeds and put in a large saucepan with the wine, sugar, cinnamon and thyme. Cut each piece of pod into three long thin strips, add to pan, then lower in the pears.
  • Poach the pears, covered, for 20-30 mins, making sure they are covered in the wine. The cooking time will very much depend on the ripeness of your pears - they should be tender all the way through when pierced with a cocktail stick. You can make these up to 2 days ahead and chill.
  • Take the pears from the pan, then boil the liquid to reduce it by half so that it's syrupy. Serve each pear with the cooled syrup, a strip of vanilla, a piece of cinnamon and a small thyme sprig.

Increase heat and boil without stirring until syrup turns deep amber, occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 9 minutes. Remove from heat. 6 2x1-inch strips lemon peel (yellow part only)

1 1/2 cups nonfat vanilla frozen yogurt

Steps:

  • Combine first 5 ingredients in heavy large pot. Scrape in seeds from vanilla bean; add bean. Bring to boil, stirring until sugar dissolves. Remove from heat. Peel, halve and core pears. Add pears, rounded side down, to cooking liquid. Return cooking liquid to boil. Reduce heat to low, cover and simmer until pears are tender, basting occasionally with cooking liquid if necessary, about 25 minutes. Using slotted spoon, transfer pears to bowl.
  • Strain cooking liquid; discard solids. Return cooking liquid to pot. Boil until reduced to 1 cup, about 12 minutes. Pour syrup over pears. Chill until pears are cold, at least 3 hours or overnight. (Can be prepared 1 day ahead. Keep refrigerated.)
  • Scoop frozen yogurt onto plates. Place pears on plates. Spoon sauce over pears.

POACHED SAFFRON PEARS

saffron , generous pinch
6 tbsp warm water
100g caster sugar
175ml water
75ml ginger wine
1 star anise
1 strip orange peel , pared with a peeler
4 medium Conference pears , peeled with stalks left on
dollops of mascarpone , to serve

Steps:

  • Soak the saffron in warm water and leave for an hour. Dissolve the caster sugar in the water and ginger wine in a medium pan. Turn up the heat and boil for 3-4 minutes before adding the star anise and orange peel. Turn the heat to low and add the pears, peeled with stalks left on. Press scrunched greaseproof paper lightly over the pears. Cover and simmer for 30 minutes, occasionally turning.
  • Remove with a slotted spoon and transfer to a bowl. Strain the syrup into a jug and stir in the soaked saffron and liquid. Pour over the pears. Cover and chill for 24 hours, turning once.
  • Place each pear on a separate plate, drizzle over a little syrup. Serve with dollops of mascarpone.
