CHICKEN ALFREDO WITH CRISPY BACON (PAULA DEEN)
A recipe that I thought sounded delicious from Paula Deen's Comfort Food Magazine. Posting for safe keeping. Update 10/17/2013: Made this for DH and myself, so I made 1/3 of the recipe, but still made 2 pieces of bacon (will even make more next time) and I added some additional heavy cream as we like it creamy. We loved the addition of the bacon, onion and garlic to the normal Chicken Alfredo, DH even went back for seconds.

ONE-POT CHICKEN ALFREDO PENNE
We love it when a recipe requires just a handful of ingredients and only 20 minutes to come together. But wait, there's more-you only need one pot to make this simple pasta dish! All of that good news-plus the rich, creamy cheese sauce combined with pasta, peas and rotisserie chicken-make this a meal everyone in the family will applaud for when you bring it to the table.

Steps:
- Cook the pasta until just al dente, according to box instructions.
- Drain and rinse pasta under cold water. This will stop the cooking process.
- Mix pasta with the Ragu Alfredo sauce, sour cream/Greek yogurt and crumbled bacon.
- Mix together the ricotta, garlic, eggs, Parmesan and parsley in a bowl until combined.
- Sprinkle the pasta/sauce mix with salt and pepper, to your liking.
- Add the ricotta mixture to the pasta mixture and stir to combine all ingredients.
- Pour pasta into a 9x13 baking/casserole dish.
- Top evenly with the mozzarella cheese.
- Sprinkle bread crumbs evenly over everything.
- Bake at 350 degrees F for 30 minutes or until set and edges are bubbly (might take a little longer depending on how hot your oven cooks).
- For a crispy top, broil at 450 degrees F for 2-3 minutes or until the cheese starts to brown and breadcrumbs turn a golden brown. I like to do this. Keep a good eye on it during the broiling to be sure the cheese doesn't burn. Serve warm. Enjoy!

Steps:
- Fill a 4 to 5 quart stock pot with water and teaspoons of table salt. Heat the salted water on medium-high heat. Once the water comes to a low rolling boil, add the pasta and cook until the pasta is al dente. Drain the pasta and set aside.
- In a 10 to 12 inch skillet, over medium to medium-high heat, cook the diced 14 strips of bacon until completely cooked and browned. Remove the bacon only to a plate or bowl lined with paper towels, but leave the bacon dripping in the pan.
- Pour the excess bacon drippings into a heat safe bowl. If possible, try to keep the crunchy bacon-ey bits in the bottom of the skillet.
- Reduce the heat to low and return the skillet to the heat.
- Using a whisk add the minced garlic and saute for 1 1/2 to 2 minutes, being careful not to burn the garlic.
- Continue whisking and slowly add the heavy cream and the whole milk. Whisk continually until the milk reaches a very low simmer, being sure to scrape the bottom of the skillet to release all the delicious bacon bits.
- Continue to whisk and evenly sprinkle the 3/4 cup of parmesan cheese, kosher salt, black pepper, and onion powder. Remove the skillet from the heat and continue to whisk.
- Using a wooden spoon, stir in the pasta until it is evenly coated.
- Sprinkle the parmesan cheese evenly over the top of the pasta.
- Sprinkle the cooked crumbled bacon over the pasta.
- Sprinkle the flat leaf parsley over the top of the pasta before serving. Serve immediately. Store any leftovers in an airtight container in the refrigerator.
