1 (14 1/2-ounce) can whole tomatoes in juice, drained
1 large onion, chopped
4 garlic cloves, finely chopped
2 tablespoons unsalted butter
1 medium carrot, finely chopped
1 celery rib, finely chopped
1 1/2 lb ground beef chuck
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 cup dry red wine
2 tablespoons Worcestershire sauce
1 1/2 tablespoons packed brown sugar
4 kaiser rolls, split

Steps:

  • Purée tomatoes in a blender.
  • Cook onion and garlic in butter in a 12-inch heavy skillet over medium-high heat, stirring occasionally, until onion begins to brown, 4 to 5 minutes. Add carrot, celery, and 1/2 teaspoon salt and cook, stirring occasionally, until vegetables are softened, 4 to 5 minutes.
  • Add beef and brown, stirring to break up lumps, 5 to 6 minutes. Add chili powder, cumin, 1/2 teaspoon salt, and 3/4 teaspoon pepper and cook, stirring, 2 minutes. Add puréed tomatoes, wine, Worcestershire sauce, and brown sugar and boil, stirring occasionally, until sauce has thickened, about 6 minutes. Season with salt and sandwich inside rolls.

1 medium onion, chopped
1/2 cup ketchup
3 tablespoons sweet pickle relish
1 tablespoon light brown sugar
1 tablespoon prepared mustard
1/4 teaspoon salt
1/4 teaspoon pepper
5 hamburger buns, toasted

Steps:

  • Brown ground chuck and onion in a large nonstick skillet, stirring until meat crumbles; drain.
  • Stir in ketchup and next 5 ingredients.
  • Bring to a boil; cover, reduce heat, and simmer 5 minutes, stirring occasionally.
  • Spoon meat mixture over bottom halves of buns; top with remaining halves.

Tired of sweet tasting Sloppy Joes and Manwhich sauce? Dill pickle juice in this recipe is the ticket. I made up this recipe because I was tired of sweet tasting sloppy joes. Everyone loves this Sloppy Joe recipe, especially kids. Make it cheesy by adding a slice of your favorite cheese on the bun.

Number Of Ingredients 9

2 lbs 80% lean ground beef
1/2 cup minced onion
1/4 cup diced celery
12 ounces chili sauce (find it in the ketchup aisle at the grocery store)
3 tablespoons pickle juice, it adds tang. Do not omit this ingredient
2 teaspoons prepared yellow mustard
3/4 cup water
hamburger bun, about 8
American cheese (optional) or cheddar cheese slice, kids love sloppy joes with cheese (optional)

Steps:

  • Brown the beef, celery and onion in a large skillet till the meat is nicely browned but still a little pink inside. Drain off any fat and crumble the meat into tiny pieces. Stir in the chili sauce, mustard, water and the dill pickle juice to the pan. Bring to a slow boil then reduce the heat to a simmer and cook for about 10 minutes, flipping and stirring once in a while. Add more water if the mixture is too dry and heat till warm throughout.
  • Serve on hamburger buns with optional American or cheddar cheese slices in the sandwich.
  • A veggie such as corn and potato chips make good sides.

BAKED BEANS WITH SWEET PICKLE JUICE



Baked Beans With Sweet Pickle Juice image

Generally, there isn't a lot of difference between most baked bean recipes. They usually all have brown sugar, molasses, mustard, onions and some sort of pork product: salt pork, or bacon. I found a recipe in one of my Saveur magazines last year that sounded a little different(http://www.saveur.com/article/Recipes/Sandys-Baked-Beans). The chef added juice from a sweet pickle jar...interesting. This is my version. I recently inherited two 2-quart old-fashioned bean pots. Before inheriting the pots I would put some pork and beans, brown sugar, molasses, onions and bacon in a crock pot and let them cook all day trying to achieve the baked bean consistency. They were okay that way, but the slices of bacon never got to be crisp, and the onions were just sort of limp and anemic. With a bean pot, the beans cook in the oven and the bacon gets brown and crisp, and the onions turn caramel brown...so much better! Originally published on my blog.

4 (15 ounce) cans pork and beans
1 cup light brown sugar, tightly packed
1 1/2 cups ketchup
3/4 cup yellow mustard
3/4 cup molasses
1/2 cup sweet pickle juice
1 large yellow onion, chopped
8 slices bacon, sliced crosswise into 1/4 inch slices

Steps:

  • Heat the oven to 250°. Put the pork and beans, brown sugar, ketchup, mustard, molasses, and pickle juice in a large bowl and mix well (if making half the recipe this can be done right in your 2-quart bean pot). Divide mixture between two 2-quart bean pots, or put it all in one 4-quart bean pot.
  • Top the bean mixture with the chopped onion and the bacon. Bake, uncovered, until the bacon is crisp and the beans are hot and bubbling, about 4 hours. Increase the temperature of the oven to 350° and bake for another hour. Remove the pots from the oven and allow the beans to cool slightly. Stir the onions and bacon into the beans before serving.

A useful way to use up left-over dill pickle juice. It sounds unusual, but it's so tasty! The recipe calls for chicken thighs, but since I hate bones in my food, I used chicken breasts and it worked just fine.

4 chicken thighs
1 cup sliced dill pickle
2 cups pickle juice
1 egg
3 tablespoons hot sauce
1 1/2 cups flour
1/2 cup cornmeal
1/2 teaspoon garlic salt
1/2 teaspoon black pepper
1/2 teaspoon paprika

Steps:

  • Drain the pickles, dust with flour and set aside. Marinade the thighs in pickle juice just to cover, and use a meat injector to plump them with pickle juice. Let stand for an hour.
  • Mix remaining pickle juice, egg and hot sauce with a couple of tablespoons of flour, beat well and soak the chicken in that for a couple of minutes.
  • Mix remaining flour, corn meal and seasonings together in a gallon zipper bag. Drain the chicken and shake in the bag of flour to coat. Shake off excess flour, and pan fry in shallow oil in a heavy skillet. Drain on a rack or on paper towels.
  • Fry up the pickles when the chicken is completed.

This is a sweet tomatoey tasting sloppy joe. The recipe came from the USDA's recipe book for the Child and Adult Care Food Program. I have been using it for my daycare for a while now. Sometimes I add very tiny chopped peppers and carrots. Small enough that the kids don't know they are there.

3/4 cup onions, chopped or 3 tablespoons dehydrated onion
1 1/2 teaspoons garlic powder
1 1/2 cups tomato paste
1 1/2 cups ketchup
2 7/8 cups water
1/2 cup vinegar, plus
1 tablespoon vinegar
1 tablespoon dry mustard
1/2 teaspoon black pepper
3 tablespoons brown sugar, packed
25 hamburger buns

Steps:

  • Brown ground beef. Drain off fat.
  • Add onions and garlic powder. Cook for 5 minutes. Add tomato paste, ketchup, water, vinegar, dry mustard, pepper, and brown sugar. Mix well and simmer for 25 to 30 minutes.
  • Scoop 1/3 cup onto each hamburger bun.

5 lbs ground beef
2 1/2 cups chopped onions
7 -8 cloves fresh minced garlic, to taste (optional)
1 cup green bell pepper, chopped
5 cups celery, chopped
5 (10 ounce) cans tomato soup, undiluted
5 (15 ounce) cans tomato sauce
5 teaspoons salt or 5 teaspoons seasoning salt
black pepper

Steps:

  • Set oven to 350 degrees.
  • In a 8-quart oven-proof skillet, or roaster, melt butter over low heat.
  • Crumble beef into skillet and increase heat.
  • Cook until no more pink remains; add in onions, garlic (if using), green pepper and celery.
  • Cook just until veggies are tender.
  • Add soup, tomato sauce, salt and pepper; cover and bake in 350 degree oven for 1/2- 3/4 of an hour, stirring occasionally.
  • Cool; divide into 5 freezer containers, and freeze.

1 broiler-fryer chicken, cut into pieces
3/4 cup milk
1 cup all-purpose flour, seasoned to taste with black pepper and paprika
pickle juice, dill flavored
oil (for frying)

Steps:

  • Dip pieces of chicken in milk and then into the flour mixture.
  • In a frying pan, cook chicken in oil to brown the crust. Drain on paper towels.
  • Place pieces in a (9x13 inch) pan or glass casserole dish.
  • Pour dill pickle juice half way up chicken.
  • Cover with foil and bake 350° for 1 1/2 hours, basting occasionally (Turn chicken over after 65-70 minutes and continue cooking, uncovered).
  • The juice will be absorbed and the chicken is great cold.
