BROWN SUGAR FUDGE
This easy to make brown sugar fudge has just a few simple ingredients. It makes the perfect no bake treat for the holidays!

- Butter an 8x8 inch baking dish and set aside.
- In a large saucepan, over medium heat, combine the cream, brown sugar, and salt.
- Bring to a boil, stirring often, and continue boiling until the candy comes to the soft ball stage.
- If you're using a candy thermometer, this is between 234-240 degrees F (112.2-115.6 degrees C). If you don't have a candy thermometer, you can drop a teaspoon of the candy into very cold water - it will form a soft ball which flattens on removal from the water when it has reached this stage.
- The fudge will need to boil for 10-15 minutes to reach the soft ball stage.
- Once the mixture has reached the right temperature, remove the pan from the heat and stir in the butter and vanilla. It will bubble up a bit so be careful.
- With an electric mixer, on low speed, beat the fudge for 4-6 minutes, or until it has thickened and is smooth and creamy. The longer you beat it, the thicker it will be, so don't beat for too long if you want soft fudge, beat just until it has thickened (about 4 minutes).
- Pour the fudge into the prepared baking dish and smooth the top. Let it cool completely and then cut it into squares.
- Store the fudge in an airtight container at room temperature for one to two weeks, or freeze it for up to 3 months.

- ** I used Low Fat Eagle Brand sweetened condensed milk and it came out GREAT!
- Put everything in a glass bowl. To start I didn't even mix anything. Place in the microwave for 10 minutes, only then stopping about every 2 minutes to mix.
- Put tinfoil in a 8x8 pan with it overhanging the sides. I sprayed it with a bit of Pam (no cook spray). I don't like rounded corners in pans so I used a square Tupperware plastic freezer container I have. An easy way to get the tinfoil to fit is to place the tinfoil on the outside of the container squishing it to form all around. Then pop it off and put it inside the container.
- After ten minutes in the microwave, let mixture slightly cool. Beat with electric beater for 5 minutes.
- Pour into your 8x8 pan. Let cool in the fridge for about 3 hours.

- Combine milk, sugar, syrup and butter in microwave safe bowl (with spout on it if possible). Cook 6 minutes, stirring after every two. Add marshmallows and cook, stirring every 30 seconds, until all combined. Working quickly, pour mixture into cones, then refrigerate. If you poke holes in the large side of a cereal box and stand the cones up in them, you can pour the batter right into each one.
BROWN SUGAR-CHOCOLATE FUDGE
The fudge can be cut into three wide bars. Wrap each in cellophane and tie with ribbon, adding a butter knife to the bow.

- Line 11x7-inch metal baking pan with foil, overlapping sides by 3 inches. Combine first 4 ingredients in large bowl. Stir sugar, condensed milk, cream, butter, and salt in heavy medium saucepan over medium-low heat until sugar dissolves (no granules will remain when drop of mixture is rubbed between fingertips), occasionally brushing down sides of pan with wet pastry brush, about 10 minutes. Attach clip-on candy thermometer to side of pan. Increase heat to high and bring mixture to boil. Reduce heat to medium-high and stir constantly but slowly with wooden spatula until thermometer registers 230°F, about 15 minutes.
- Immediately pour mixture over ingredients in bowl (do not scrape pan). Stir mixture vigorously with wooden spoon until chocolate melts and fudge thickens slightly, about 1 minute. Transfer mixture to prepared baking pan; smooth top of fudge with rubber spatula. Sprinkle fudge with chocolate chips. Refrigerate fudge until firm enough to cut, about 2 hours.
- Using foil as aid, lift fudge from pan. Fold down foil sides. Trim edges of fudge to even. Cut into 40 squares or 3 large wide bars. Place fudge squares in candy cups, if desired. (Can be made 2 weeks ahead. Chill in airtight container. Let stand at room temperature at least 30 minutes and up to 1 hour before serving.)
BROWN SUGAR FUDGE FROSTING
This frosting tastes exactly like Brown Sugar Fudge (we call it Penuche around here). It is a fantastic topping for Chocolate, Spice or Banana Cake) and is easy to make and spread (it does harden a bit on standing though). Really delicious (especially if you make sure and use REAL butter....margarine just doesn't create the same taste).

- In medium saucepan, melt butter and add brown sugar. Cook over low heat for 2 minutes stirring constantly. Add milk, continue cooking until mixture comes to a rolling boil. Remove from heat.
- Beat in icing sugar in 3 additions making sure to combine thoroughly after each addition. Add vanilla and if required add enough milk to make a nice spreadable consistency.
- This makes enough frosting to generously cover one 9x13 cake with some leftovers or 12 large cupcakes. Delicious!

- Combine brown sugar & milk in saucepan, and stir until the sugar begins to dissolve.
- Cook over medium-high heat until mixture reaches the "soft ball" stage (about 235 degrees).
- Remove from heat, and add butter & vanilla.
- Mix until smooth & creamy. Fudge will lose its shine and feel somewhat gritty on the bottom of the pot.
- Pour into buttered 9 x 13 glass pan.

BROWN SUGAR FUDGE
I love this recipe for fudge. Nice and creamy texture. I like to double up on the nuts to take away from the sweetness. This fudge recipe has always worked for me as long as I boil for exactly 10 minutes and beat for exactly 5.
