6 large red bell peppers, halved, seeded
6 large yellow bell peppers, halved, seeded
6 large orange bell peppers, halved, seeded
8 tablespoons extra-virgin olive oil
3 tablespoons (or more) balsamic vinegar
1/2 cup pine nuts, toasted

Steps:

  • Preheat oven to 400°F. Place all bell peppers in large bowl. Pour 6 tablespoons oil over peppers; toss to coat. Place peppers, cut side down, on 2 large rimmed baking sheets. Sprinkle with salt. Roast until peppers are soft and slightly blackened, about 1 hour, reversing sheets after 30 minutes. Cool slightly; peel, if desired. Cut peppers into 1/4-inch-wide strips. Transfer to large bowl; add accumulated juices from baking sheets. Add 3 tablespoons vinegar and remaining 2 tablespoons oil; toss gently. Refrigerate at least 1 hour. (Can be prepared 1 day ahead.) Drain peppers; discard juices. Transfer peppers to platter. Season with salt, pepper and more vinegar, if desired. Toss gently; sprinkle with pine nuts.

1/2 cup extra-virgin olive oil
2 tablespoons lemon juice (about 1 medium lemon, juiced)

Freshly ground pepper, to taste
4 ounces chopped romaine lettuce
4 ounces fresh spring greens
1 DeLallo SaladSavors in Sharp Asiago (shredded Asiago cheese, sun-dried tomatoes and marinated artichoke hearts)
Basil pesto dressing, to taste

Steps:

  • In the bowl of your food processor (a blender will probably also work), combine the basil, garlic and pine nuts. Pulse until coarsely chopped.
  • While the machine is running, drizzle in the olive oil, lemon juice and salt. Season to taste with freshly ground black pepper and blend until smooth. For best flavor, use immediately, or cover and store in the refrigerator for up to 3 days.

2 cups strawberries (hulled)
2 teaspoons organic raw cane sugar
1 cup white balsamic vinegar

Steps:

  • Combine strawberries and sugar in a food processor or blender and puree until runny. It's okay to have some chunks.
  • Transfer strawberry mixture into a quart jar and pour in vinegar. Top jar with a lid and shake well.
  • Let strawberry infusion stand for an hour or so.
  • Shake vinegar once again and strain through a fine-mesh sieve into a pint jar. It will take about 10 minutes to completely drip through.Discard the strawberry solids.
  • Your strawberry vinegar is now ready to use or you can cover the jar with a lid and store, refrigerated, for a few weeks.

1 1/4 cups pine nuts, toasted (about 6 1/2 oz.)
1/2 beaten egg 2 t. minced shallot (or green onion)
3/4 teaspoon fresh lemon juice
1/2 cup olive oil
3 tablespoons balsamic vinegar (or red wine vinegar)
salt & freshly ground black pepper
1 1/4 lbs spinach, stemmed
1 small bunch basil, stemmed
3 tablespoons water (optional)
4 ounces piece parmesan cheese, cut into shavings with a vegetable peeler

Steps:

  • Dressing:.
  • Puree 1/2 cup pine nuts in processor; add egg, shallot and lemon juice and puree.
  • Gradually add oil and vinegar alternately through feed tube and blend until smooth; season to taste with salt and pepper.
  • (Can be prepared 1 day ahead. Cover and refrigerate.).
  • Salad:.
  • Toss spinach and basil in large bowl .
  • Thin dressing with water if desired and spoon enough dressing over greens to season to taste and toss.

2 cloves garlic
1/4 cup pine nuts
2/3 cup extra-virgin olive oil, divided
Kosher salt and freshly ground black pepper, to taste
1/2 cup freshly grated Pecorino cheese

Steps:

  • Combine the basil, garlic, and pine nuts in a food processor and pulse until coarsely chopped. Add 1/2 cup of the oil and process until fully incorporated and smooth. Season with salt and pepper.
  • If using immediately, add all the remaining oil and pulse until smooth. Transfer the pesto to a large serving bowl and mix in the cheese.
  • If freezing, transfer to an air-tight container and drizzle remaining oil over the top. Freeze for up to 3 months. Thaw and stir in cheese.

1 large shallot, minced
1/4 ounce lemon juice

4 ounces shaved aged provolone cheese or 4 ounces good parmesan cheese
4 ounces toasted pine nuts

Steps:

  • Dressing-Put pine nut in a food processor add whole egg,shallots, and lemon juice,Puree.
