After searching the internet for a good Chinese Spareribs recipe and not finding any that caught my eye, I decided to make my own. This recipe is pretty simple, and yields tender, juicy, tangy ribs. In Japan, I cooked this in the fish broiler, but it should be fine on the grill or in the oven.

3 tablespoons hoisin sauce
1 tablespoon ketchup
1 tablespoon honey
1 tablespoon soy sauce
1 tablespoon sake
1 teaspoon rice vinegar
1 teaspoon lemon juice
1 teaspoon grated fresh ginger
½ teaspoon grated fresh garlic
¼ teaspoon Chinese five-spice powder
1 pound pork spareribs

Steps:

  • In a shallow glass dish, mix together the hoisin sauce, ketchup, honey, soy sauce, sake, rice vinegar, lemon juice, ginger, garlic and five-spice powder. Place the ribs in the dish, and turn to coat. Cover and marinate in the refrigerator for 2 hours, or as long as overnight.
  • Preheat the oven to 325 degrees F (165 degrees C). Fill a broiler tray with enough water to cover the bottom. Place the grate or rack over the tray. Arrange the ribs on the grate.
  • Place the broiler rack in the center of the oven. Cook for 40 minutes, turning and brushing with the marinade every 10 minutes. Let the marinade cook on for the final 10 minutes to make a glaze. Finish under the broiler if desired. Discard any remaining marinade.

This has been a hit at every party I've ever taken it to so now I just bring copies of the recipes with me when it's my turn to provide the appetizer. You can also make a meal out of these with some rice and flash-cooked greens. Prep time does not include marinading time.

2 tablespoons dark soy sauce
2 tablespoons light soy sauce
2 tablespoons honey
3 tablespoons hoisin sauce
1 tablespoon sherry wine

1 clove garlic, chopped fine

aluminum foil
2 lbs spareribs, cut in half lengthwise and riblets cut apart

Steps:

  • Combine all ingredients except meat and pour into a heavy-duty plastic reclosable bag.
  • Add spareribs.
  • Marinate overnight, turning several times.
  • Line a shallow pan with aluminum foil.
  • Preheat oven to 350°.
  • Roast spareribs 45 minutes.
  • Turn heat to 325°.
  • Roast 15 minutes longer.
  • When shrinkage occurs, ribs are done.

12 meaty pork ribs
100ml hoisin sauce
2 tbsp soy sauce
1 tbsp clear honey
1 tbsp vinegar (you can use cider, malt or wine)
1 tsp Chinese five-spice powder

Steps:

  • Put the ribs in a large pan and cover with water. Bring to the boil and simmer for 15 mins. Meanwhile, pour the hoisin sauce in a jug and stir in the soy sauce, honey, vinegar and five-spice.
  • Drain the ribs very well, then brush with the glaze - if barbecuing, chill, cover and keep in the fridge for later.
  • Heat the grill to high, if using. Grill or barbecue for 15-20 mins, turning from time to time until shiny and slightly charred in places. Serve hot.

3 garlic cloves, minced
3 tablespoons ketchup
3 tablespoons chili sauce
3 tablespoons soy sauce
3 tablespoons hoisin sauce
3 tablespoons dry sherry
2 tablespoons honey
2 tablespoons grated fresh ginger, I use the jarred stir fry mix of garlic and ginger when i run out of fresh and tastes great, and hav

Steps:

  • First before you do anything get you a really big pot and fill it up with water. I use my big soup stockpot but whatever big pot you have that'll fit the ribs is fine. Heat on burner on medium heat. Next put a bunch of spices and herbs in there, I use garlic salt, ground pepper, thyme, rosemary, and oregano, but whatever u like is fine, this is your beef stock.
  • Put ribs in spiced up water. Now let simmer for about 2-3 hours, till meat is gray and starting to pull away from the edges of the bones. Take ribs out of pot, save liquid for recipes that call for beef stock. Put ribs in 9x13 baking dish or pan, don't forget to grease it!
  • Mix all ingredients listed above in a bowl. Taste, if not to your liking add a little bit of whatever you think will help it out. I usually end up putting in more honey and hoisin. Now brush some of sauce on both sides of ribs and let sit on and absorb for about 20-30 minute.
  • Heat oven to 350 degrees. Brush more sauce on both sides of ribs. Bake for 15 minute Brush more sauce on. Bake 15 more minute. Sauce on ribs should be brown and crispy looking. Serve with sauce if desired and if enough leftover.

1 tablespoon white wine vinegar
1 teaspoon sesame oil
1 tablespoon honey

Steps:

  • Combine soy sauce, white wine vinegar, sesame oil, honey, five-spice powder, garlic, and ginger in a large storage bag. Shake to mix well. Add ribs to marinade; refrigerate 4 to 8 hours, turning bag occasionally.
  • Preheat an oven to 325 degrees F (165 degrees C). Remove ribs from marinade and place in a roasting pan; cover tightly with aluminum foil.
  • Cook ribs for one hour, turning occasionally. Increase oven temperature to 400 degrees F. Remove foil from pan and bake an additional 20 minutes, turning once, until ribs are nicely browned.

Baked spare ribs was adapted from Low-Cholesterol Chinese Cuisine. Prep time includes marinating time. Although the directions are for cooking in the oven, these work equally well on the grill.

3 -4 lbs spareribs
1 tablespoon preserved bean curd or 1 tablespoon mild miso (available in asian food stores)
1/2 teaspoon sugar
1 tablespoon soy sauce
1 teaspoon sesame oil
1/4 teaspoon pepper
1 tablespoon garlic paste

Steps:

  • Cut spare ribs into 2" long pieces and put in marinating dish (I use a tuperware marinating dish).
  • Combine remaining ingredients and pour over ribs.
  • Marinate for at least one hour or up to 8 hours.
  • Pre-heat oven to 450-degrees F.
  • Bake ribs in oven for 30 minutes, turning and brushing with marinade every 10 minutes, or until done.

This is a great and easy oven baked rib recipe. I first used a recipe from Bon Appetit magazine and changed or added ingredients over the years. I love the Asian inspired marinade. They seem to please even the most eclectic taste. It is best to marinade the ribs overnight. If not, no less than 4 hours. This either can be served as the main meat dish or as an appetizer.

3/4 cup brown sugar
1/2 cup soy sauce
1/2 cup ketchup
1/4 cup white wine
1/4 cup pineapple juice
3 garlic cloves, minced
1 tablespoon gingerroot, grated
1 tablespoon parsley
2 racks of baby-back pork ribs

Steps:

  • In a bowl combine brown sugar, soy sauce, ketchup, white wine, pineapple juice, garlic, gingerroot and parsley. Mix well.
  • Separate 1/2 cup of marinade for basting later.
  • Lay out baby back ribs in single layer in a marinade dish. Pour marinade over top and turn to coat. Cover and refrigerate over night. Turning every couple of hours to marinade both sides.
  • Preheat oven at 300°F.
  • Line bottom of broiler pan with foil. Lay baking rack on top and spray with cooking spray. Use cooking spray on another large piece of foil. Lay rack of ribs, curved side up, on foil, and wrap up in foil to seal. Repeat with second rack of ribs. Lay foil packets in single layer, on baking rack.
  • Bake for 1 1/2 hours. Remove ribs from foil and place directly on baking rack, meat side up. Pour reserve marinade over top of ribs. Bake at 350°F for about 20 minutes, until ribs start to brown nicely.
  • Remove from oven.
  • Let rack stand at room temp for 5 minutes before cutting into individual ribs.
  • Serve.

These are appetizer-style ribs like you get in a Chinese restaurant. Serve them with other Chinese food dishes and Sake or a pot of green tea. Have your butcher cut the ribs "lengthwise" so they will be finger-food size.

4 lbs pork spareribs or 4 lbs pork baby back ribs
1/2 cup soy sauce
1/3 cup honey
1/4 cup dry sherry
1 fresh garlic clove, crushed
1/4 teaspoon ground ginger
chopped green onion top

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Place previously cut ribs in a shallow foil-lined pan, meaty side down.
  • Combine soy sauce, honey, sherry, garlic, and ginger in a small bowl.
  • Brush ribs with sauce, reserving left over sauce.
  • Cover pan tightly with foil and bake at 350 degrees Fahrenheit for one hour.
  • Turn ribs over and pour remaining sauce over ribs, brushing thoroughly.
  • Bake, uncovered, an additional 30 minutes, brushing sauce from pan over ribs occasionally.
  • Remove from oven.
  • Sprinkle with chopped green onion and sesame seeds.
  • Serve.
