1 cup unsalted butter ((softened))
1 cup brown sugar
1/2 cup plus 1 tablespoon white sugar
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
3/4 cup cocoa powder
3/4 teaspoon salt
2 teaspoons baking powder
2 cups chocolate chips
6 tablespoons butter ((softened))
3 cups powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
  • Cream together the butter and sugars in the bowl of a stand mixer fitted with the paddle attachment. Scrape down the sides of the bowl. Add in the vanilla and eggs, one at a time, mixing well after each addition. Scrape down the sides of the bowl.
  • In a small bowl whisk together the flour, cocoa powder, baking powder and salt. Add to the mixer bowl, stirring on low just until combined. Gently stir in the chocolate chips.
  • Scoop out balls of dough of about 1 & 1/2 to 2 tablespoons. Place on the prepared pan, leaving space between. Cook for 10-11 minutes, the tops will look pale and no longer wet. Allow to cool on the pan for 5 minutes, as the cookies will be very soft. Transfer to a cooling rack to finish cooling.
  • While the cookies are cooling prepare the frosting. Beat the butter, sugar, vanilla and milk together in a large bowl until creamy. Spoon 1 tablespoon frosting in between two completely cooled cookies.
  • Store in an airtight container at room temperature until ready to serve.

1 (18.25 ounce) package low calorie chocolate cake mix
4 eggs
⅔ cup vegetable oil
1 (8 ounce) package cream cheese, softened
2 cups confectioners' sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease cookie sheets.
  • In a medium bowl, stir together the dark and light chocolate cake mix. Add the eggs and oil, mix until well blended. Roll dough into 2 inch balls, and place them onto the prepared cookie sheet. Flatten the balls slightly with the back of a spoon.
  • Bake for 10 to 12 minutes in the preheated oven, until firm. Let cool on the baking sheet for a few minutes before removing to cool on wire racks.

Steps:

  • Set two racks in the middle of the oven. Preheat to 375 degrees.
  • In a food processor, or bowl of an electric mixer, thoroughly mix all dry ingredients for the cookies. On low speed, or while pulsing the processor, add the butter, and then the egg.
  • Continue processing or mixing until dough comes together in a mass. It will be a very stiff, very dry dough; this is what it's supposed to look like.
  • Take rounded teaspoons of batter and place on a parchment paper-lined baking sheet approximately 2 inches apart. With moistened hands, slightly flatten the dough. Bake for 9 minutes, rotating once for even baking. The cookies will look puffy; that's okay. Set baking sheets on a rack to cool and thump them slightly to make the cookies "deflate" (or press them down with the back of a spoon).
  • To make the filling, place butter and shortening in a mixing bowl and, at low speed, gradually beat in the sugar and vanilla. Turn the mixer on high and beat for 2-3 minutes until filling is light and fluffy.

10 tablespoons (1 1/4 sticks) unsalted butter, room temperature
1 large egg, room temperature
Vanilla Cream Filling

Steps:

  • Preheat oven to 375 degrees. Into a medium-size bowl, sift together flour, cocoa powder, baking soda, baking powder, and 1/4 teaspoon salt; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream sugar and butter until light and fluffy, about 2 minutes. Add egg; beat to combine. With mixer on low speed, gradually add the flour mixture; continue beating until dough is well combined.
  • Using a 1 1/4-inch ice cream scoop, drop dough onto parchment-lined baking sheets about 2 inches apart. Dip bottom of a glass in sugar; press to flatten cookies to about 1/8 inch thick. (You may need to carefully remove dough from glass with a thin metal spatula.)

Steps:

  • Preheat oven to 350 and line a baking sheet with parchment paper. Set aside.
  • In a mixing bowl, combine cake mix, eggs, vegetable oil, and vanilla. Use a hand mixer to beat for 1 minute. Mixture will be thick and your mixer may struggle, but it should come together fine.
  • Pour batter into a gallon size resealable plastic bag and seal shut. Cut a corner of the bag to about 1/2" opening.

  • In a medium bowl measure flour, cocoa, baking soda and salt. Combine with a whisk and set aside.

VEGAN "FAUXREO" CHOCOLATE SANDWICH COOKIES

I've playfully dubbed these Oreo knockoffs "Fauxreos". They do take a bit of time and patience, so be sure to start them well in advance - but at least, since they're vegan, you can just enjoy them raw if you want to! Avoid products with hydrogenated oils, and you're looking at a slightly less fattening cookie. To make those Oreo truffles that have been proliferating across the web, mix up the dough and the filling as directed below, then marble them together into balls about 3/4″ in diameter, freeze 'em for a few hours, then dip 'em in melted chocolate (using a toothpick) and refrigerate until set. Yum.

  • If it's hot or warm in the kitchen or outside, chill the dough in the freezer for 10 minutes. Preheat oven to 325°F Divide the dough into four pieces and roll each into a ball. Place a piece of parchment paper on a flat surface, flattening the balls of dough onto the parchment. Place another piece of parchment paper on top and then roll the dough to about 10″ in diameter and about 1/8″ thick.
  • Cut circles about 1 1/4″ across from the dough with a cookie cutter and refrigerate if the excess dough doesn't lift away easily enough. Transfer the parchment onto the cookie sheet. Bake 12 minutes, and repeat with remaining dough, using scraps at the end until all the dough is used up.
  • FOR FILLING: On medium-high speed, cream the margarine and shortening. Add the sugar in about 1/2 cup increments until thoroughly combined; it should be stiff and pliable. Add in the vanilla. Refrigerate until ready to use. Roll the filling into round, about 3/4″ pieces and smash until roughly cookie-sized, then sandwich between two cookies.
