3 cups uncooked pearl (Israeli) couscous
2 cans (14 ounces each ) garbanzo beans or chickpeas, rinsed and drained
2 large navel oranges, peeled and chopped
2 cups fresh baby spinach
1 cup crumbled goat cheese
1 small red onion, chopped
3/4 cup dried cranberries
1/2 cup fennel bulb, thinly sliced, fronds reserved
1/2 cup chopped pecans, toasted
8 fresh basil leaves, chopped, plus more for garnish
VINAIGRETTE:
1/2 cup olive oil
1/4 cup orange juice
1/4 cup balsamic vinegar
1 tablespoon grated orange zest
2 teaspoons honey
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Prepare couscous according to package directions. Fluff with a fork; cool. In a bowl, combine couscous and the next 9 ingredients. In a small bowl, whisk together vinaigrette ingredients until blended. Pour over salad; toss to coat. Garnish with additional chopped basil and reserved fennel fronds.

1/2 yellow onion, finely chopped (about 1/2 cup)
1 garlic clove, finely chopped
2 tablespoons fresh ginger, finely minced
1 cup orange juice, freshly squeezed from about 3 oranges, strained to remove pulp
1 tablespoon butter
9 ounces couscous (about 1-1/2 cups)
1 teaspoon kosher salt
1/2 cup slivered almonds, toasted
1/4 cup chopped fresh flat-leaf parsley
1/4 cup chopped fresh cilantro
1 orange, zest of
fresh ground black pepper

Steps:

  • Heat the oil over medium heat in a large saucepan with a tight lid. Add the onion and cook, stirring frequently, until soft but not browned, 8 to 10 minutes. Stir in the garlic and ginger and cook for 2 more minutes. Add the orange juice and simmer until the liquid has nearly evaporated, about 10 minutes, stirring as needed to prevent the juice from caramelizing. Add 2 cups water and bring to a boil.
  • Remove from the heat, add the butter, couscous, and salt. Stir, and cover. Let stand for 15 minutes. Fluff the couscous with a fork. Stir in the almonds, herbs, and orange zest. Season with salt and pepper, if desired.

1 1/4 cups water
1 tablespoon olive oil
1/2 cup onion, chopped
1 1/2 teaspoons gingerroot, minced
1/2 cup carrot, diced
1 cup broccoli floret, chopped
1 teaspoon sesame oil
2 tablespoons soy sauce

Steps:

  • In a medium saucepan bring 1-1/4 cups of water to a boil.
  • Stir in couscous and cover, remove from heat, let stand for 5 minutes.
  • Meanwhile, in a medium skillet, heat olive oil over medium heat, add onions, ginger, carrots and broccoli.
  • Cook 3-4 minutes or until tender.
  • Stir into prepared couscous.

2 shallots, chopped
1 small carrot, sliced into ribbons with vegetable peeler
1/2 teaspoon garlic powder

2 teaspoons low-fat margarine

Steps:

  • Put vegetable stock, shallots, carrots and spices into a pot and bring to a rapid boil.
  • Boil for two or three minutes until the carrots are becoming tender.
  • Pour in couscous, cover and remove from heat.
  • Let stand for about five minutes until all the liquid is absorbed and the couscous is tender.
  • Put back onto a very low heat and just stir through the margarine until the couscous is fluffed up.
