NORWEGIAN POTATO SALAD!



Norwegian Potato Salad! image

I recently ate this at Bunco and had to have the recipe! It is light, delicious and so fast and easy. It can be left on your buffet inside or out without fear of spoiling.

Number Of Ingredients 8

3 lbs new potatoes (small ones)
2/3 cup vegetable oil
1/4 cup apple cider vinegar
1 tablespoon sugar
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons chives, chopped
2 tablespoons flat leaf parsley, chopped

Steps:

  • Best made 1 day ahead, or allow 3 hours refrigeration time.
  • Boil the potatoes in salted water until still somewhat firm. (they continue to cook after draining). Drain and when cool enough cut into small dice.
  • Place in a bowl.
  • Combine all remaining ingredients and stir until salt and sugar are disolved.
  • Pour over the potatoes and toss well to cover all potatoe cubes.
  • Cover and refrigerate.
  • Note: I like to use the little red potatoes. Together with the green chives and parsley they look very eye appealing. :-).
  • Times listed do not include refrigeration!

1/8-1/4 cup fresh parsley (Adjust to your liking)

  • Peel Potatoes (do not peel if using Red Potatoes) and cut into chunks.
  • Boil Potatoes until tender.
  • Drain and Stir in remaining ingredients (If using Red Potatoes mash about 3/4 Cup of them before mixing).

6 medium sized potatoes, use an all-purpose potato suitable for baking
2 tablespoons olive oil
2 tablespoons flat leaf parsley, finely chopped
2 lemons, zest of- finely grated
salt
black pepper, freshly ground

Steps:

  • Preheat oven to 180°C 350°F and line a baking tray with baking paper.
  • Peel the potatoes and cut them into 2.5 cm / 1 inch pieces.
  • Parboil th epotatoes in a large saucepan of boiling salted water, over high heat for 3 minutes. Drain the potatoes and pat them dry with paper towel or a clean teatowel.
  • Brush the oil over the potato chunkc and then season with salt and freshly ground black pepper. Place on a baking tray and bake for 20 minutes.
  • Combine the parsley and lemon zest. Sprinkle over the potatoes after the 20 minutes cooking time and bake the potatoes for a further 15 minutes, or until the potato is golden and tender.

Once I cooked the potatoes for my sister and didn't put the salt in the water first. He had a fit and wouldn't eat them after taking one bite and asking me if I had salted them before cooking.

6 large boiled potatoes
2 tablespoons soft butter
1 large egg
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/2 lb ham, in pieces
1 cup chopped onion
1 clove garlic, minced
1 tablespoon chopped fresh parsley
1/2 teaspoon Dijon mustard
1 tablespoon vegetable oil
1 tablespoon butter
tomato sauce, such as chili sauce or marinara sauce (or even catsup, if you're so inclined)

Steps:

  • In a large bowl, mash the boiled potatoes together with the butter, then stir in the egg, flour, salt, and pepper and mix well.
  • From the potato mixture form 16 thin, flat patties.
  • In a food processor, whir together the ham, onion, garlic, parsley, and Dijon until filling mixture is well-chopped and incorporated.
  • Spread the filling on 8 of the patties and then use remaining patties to top the filling; press the edges together well.
  • In a skillet, heat the oil and butter together, then brown the patties on each side (turning only once) until golden.
  • Serve them hot with tomato sauce and toast.
