PROPERLY PREPARED SPAGHETTI SQUASH

Properly Prepared Spaghetti Squash image

This recipe can be substituted in ANY pasta sauce or recipe, and it can be eaten hot or cold. Very versatile main or side dish - and very hard to screw up.

Provided by BentSlightly

Categories     One Dish Meal

Time 1h5m

Yield 4 serving(s)

Number Of Ingredients 7

1 spaghetti squash
1 head garlic
salt
pepper
olive oil
vegetable oil
meat or cheese

Steps:

  • Preheat oven to 350-375.
  • Halve raw spaghetti squash with a sturdy sharp knife, scoop out, and discard the squash poop with a spoon.
  • Place halves onto an oven safe cooking dish face up.
  • Clean head of garlic and thinly slice garlic, (the larger pieces of garlic brown nicely, and offer a wonderful layer of complexity to the dish).
  • Spread garlic into the bowl like shape of the squash, salt and pepper vigorously, drizzle with a 50/50 mixture of olive oil, and vegetable oil (get the oil everywhere inside the squash).
  • Place onto the upper middle rack of the oven for about 30-40 minutes. (You will know it is ready when the squash separates with little resistance from the skin).
  • Remove from oven, and place in coldest location possible for at least 20 minutes, before separating from skin.
  • Use a fork to scoop and separate squash strands, add any other ingredients you like at this point.
  • Parmesan, Romano, or Pecorino, Feta, are all excellent additions to this dish, as well as, meat, sausage, veggies, olives, the list is endless.
  • WARNING **** If you use a loose tomato based sauce DO NOT add it immediately to the squash; this makes the squash runny, mushy, and unpalatable. Instead garnish the dish with a little bit of sauce atop the squash, and then offer more sauce on the side, in a separate dish.
  • If you ever had it served this way you know what I mean.
  • You can also take any leftovers and add a little bit of flour, and make into patties and fry.

SPAGHETTI SQUASH "CARBONARA"

Spaghetti Squash

Provided by Food Network

Categories     main-dish

Time 1h15m

Yield 4 servings

Number Of Ingredients 10

2 teaspoons salt
1 1/4 teaspoons fresh cracked black pepper
1 large spaghetti squash (about 2 pounds), halved and seeded
1/2 pound bacon or pancetta, cut into small strips crosswise
1 tablespoon minced shallot
2 teaspoons minced garlic
1/4 cup white wine
2 egg yolks plus 1 whole egg
1 cup freshly grated Parmigiano-Reggiano
2 tablespoons chopped parsley leaves

Steps:

  • Preheat the oven to 375 degrees F.
  • Sprinkle the bottom of a large, shallow baking dish with 1 teaspoon salt and 3/4 teaspoons pepper. Place the squash flesh side down in the pan and add enough water to come up about 1/4-inch. Cover tightly with aluminum foil and cook in the oven until the squash is just fork tender, 1 to 1 1/2 hours. Shred the squash with a fork and transfer to a large heat proof bowl.
  • In a large saute pan, over medium heat, cook the bacon until it becomes a light brown but is not yet crispy. Pour off most of the fat and then add the shallots and garlic. Saute for 1 minute until the garlic and shallots are fragrant and begin to caramelize. Add the white wine and cook until the liquid has completely evaporated.
  • In a medium bowl, whisk the eggs together with the cheese and the parsley. Season with the remaining salt and pepper. Combine the eggs with the bacon mixture, warming the eggs in the pan. (Do not let the eggs cook through.) Add the spaghetti squash and toss to thoroughly combine and until squash is heated through. Adjust seasoning, if necessary and serve immediately.

Spaghetti Squash Spaghetti image

Picture if you will spaghetti without pasta and savory meatballs without meat... to some people this may seem sacrilegious, however, should you still be reading this post, you're in for a treat!! We all know why spaghetti squash was given its name, but have you tried using it in replacement of noodles? Here's yet another easy to make, creative, and healthy option for you to add to your list. It can also be chilled and served cold on summer days. Salubre' + Cheers E

Provided by Ethan Barrow

Categories     Vegetable

Time 1h15m

Yield 2 bowls, 2 serving(s)

Number Of Ingredients 12

1 spaghetti squash
14 ounces canned stewed tomatoes
1 zucchini
1 yellow onion
12 fresh basil leaves
15 mushrooms
2 garlic cloves
1/2 cup Lightlife Gimme Lean ground sausage
1/8 cup red wine
seasoned sea salt
ground pepper
1 teaspoon olive oil

Steps:

  • Take your spaghetti squash and cut in half lengthwise.
  • Pierce the skin with a fork on the bottoms.
  • Bake the two evenly cut halves of your spaghetti squash in a round, glass baking dish with a light coating of olive oil at 350 degrees until they start to brown and the skin is tender (approx 45 minutes).
  • Ready for the veggi saugage? I prefer "GimmeLean" brand as it is virtually fat free, full of protein, and has a wonderful fennel taste. Dice up some garlic, onions, basil and mold into small 1" meatballs.10's a good round number.
  • In a sauté pan, sauté round rings of yellow onions, mushrooms, zucchini, and your non-meat meatballs in olive oil until perfectly brown, firm and filling your kitchen with an aroma even Sophia Loren couldn't resist --
  • Now to focus on the sauce. Empty the contents of your two cans of Italian style stewed tomatoes in a deep dish pan, add to it everything you just sautéed and don't skimp on the basil or additional garlic. There are no correct portions here -- continue sampling your wooden spoon over and over until its just right. This sauce is meant to be light or it will overpower the squash. I usually add in a splash of red wine to the mix, salt and fresh ground pepper to taste.
  • So, hopefully you have timed things so the squash is just finishing up cooking. Remove your squash halves carefully. Let them cool down some. Then, with a fork, begin to scrape out the contents into the pan with your sauce. This is the most enjoyable part of this recipe as it always amazes me to see just how much the fibers of the squash resemble spaghetti! Leave a little squash in each half and use them as the bowls for serving.
  • Garnish with organic basil and the dish is ready to serve.

SPAGHETTI SQUASH AND MEATBALLS

Spaghetti Squash and Meatballs image

Cut some carbs from a classic comfort food by swapping out pasta in favor of roasted spaghetti squash. You'll be amazed how satisfying these veggie "noodles" can be -- especially when paired with our homemade meatballs. They're tender, juicy and packed with flavor.

Provided by Food Network Kitchen

Time 1h10m

Yield 4 servings

Number Of Ingredients 16

1 medium spaghetti squash (about 2 pounds)
Kosher salt
3 tablespoons extra-virgin olive oil, plus more for brushing
2 stalks celery, chopped
1 medium carrot, roughly chopped
1 medium onion, roughly chopped
6 cloves garlic
1 cup fresh parsley leaves
1 pound ground beef
1 pound ground pork
2 large eggs
1 cup Italian-style breadcrumbs
1 cup plus 3 tablespoons grated parmesan cheese
2 28-ounce cans tomato puree
2 large sprigs basil
1 teaspoon dried oregano

Steps:

  • Preheat the oven to 425 degrees F. Halve the squash lengthwise and scoop out the seeds. Sprinkle the cut sides with 1/2 teaspoon salt, then brush both sides with olive oil. Put the squash, cut-side up, in a baking dish and cover tightly with aluminum foil. Roast 20 minutes, then uncover and continue roasting until the squash is tender, about 35 more minutes.
  • Meanwhile, make the meatballs: Brush a baking sheet with olive oil. Pulse the celery, carrot, onion, garlic and parsley in a food processor to make a paste. Transfer half of the vegetable paste to a bowl; add the ground beef, ground pork, eggs, breadcrumbs, 1 cup parmesan and 1 teaspoon salt and mix with your hands until just combined. Form into about 24 two-inch meatballs; transfer to the prepared baking sheet. Bake until firm but not cooked through, about 10 minutes.
  • Make the sauce: Heat 3 tablespoons olive oil in a large pot over medium-high heat. Add the remaining vegetable paste and cook, stirring occasionally, until it looks dry, about 5 minutes. Stir in the tomato puree; rinse each can with 1 cup water and add to the pot. Stir in the basil, oregano and 1 1/2 teaspoons salt. Bring to a simmer, then add the meatballs and simmer until the sauce thickens and the meatballs are cooked through, 15 to 20 minutes. Remove the basil.
  • Use a fork to scrape the spaghetti squash flesh into strands; transfer to a large bowl and toss with 2 tablespoons grated parmesan. Season with salt. Divide the squash among bowls and top each with some meatballs, sauce and the remaining 1 tablespoon parmesan.
  • This recipe makes extra sauce and meatballs. Let cool completely, then freeze in a storage container for up to one month.

SPAGHETTI SQUASH

My husband loves this recipe! Some might think the combination of brown sugar and parmesan cheese sounds odd.... but the two ingredients go VERY well with the spaghetti squash. ENJOY! (I never actually measure the ingredients... so feel free to add more or less of whatever you want to your tastes!)

Categories     Vegetable

Time 45m

Yield 6 serving(s)

Number Of Ingredients 7

1 spaghetti squash
2 tablespoons olive oil
salt
pepper
2 tablespoons butter or 2 tablespoons margarine
3 tablespoons brown sugar (add more if you like it sweeter)
1/4 cup parmesan cheese

  • Pre-heat oven to 375.
  • Cut squash in half and scoop out the seeds.
  • Brush the inside of both halves with olive oil and sprinkle with salt and pepper.
  • Place face down in a pan with about half an inch of water and bake for 30-40 minutes You will know the squash is ready when it scrapes off looking like spaghetti -- not too soft, or it will be too mushy.
  • Scape off the squash and empty into a bowl ( will look like a bowl of spaghetti).
  • Mix in margarine and brown sugar -- sprinkle parmesan cheese over the top.
