Fresh Fig and Almond Crostata image

A tender almond filling and a buttery crust, both quickly blended in the food processor, complement delectable figs. The crostata is especially good warm.

Time 2h45m

Number Of Ingredients 14

1 1/4 cups all-purpose flour (spooned and leveled), plus more for rolling
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cut into pieces
2 to 4 tablespoons ice water
1/2 cup blanched almonds
1/2 cup sugar
2 large eggs
4 tablespoons (1/2 stick) unsalted butter, room temperature
2 teaspoons all-purpose flour
1/4 teaspoon pure vanilla extract
1/8 teaspoon salt
1 pound ripe fresh figs (about 16), stemmed and thinly sliced
1 tablespoon fresh lemon juice

Steps:

  • Make dough: In a food processor, pulse flour, sugar, and salt to combine. Add butter; pulse until mixture resembles coarse meal, with a few pea-size pieces of butter remaining. Sprinkle with 2 tablespoons ice water; pulse until dough is crumbly but holds together when squeezed (if necessary, gradually add up to 2 tablespoons more water). Do not overmix. Flatten dough into a disk; wrap tightly in plastic. Refrigerate until firm, at least 1 hour (and up to 3 days).
  • Make filling: In food processor, combine almonds and sugar; process until finely ground. Add 1 egg, butter, flour, vanilla, and salt; pulse until smooth, and set aside. In a medium bowl, combine figs and lemon juice; set aside.
  • Preheat oven to 350 degrees. On a large lightly floured piece of parchment paper, roll dough to a 14-inch round. Spread almond filling in center, leaving a 2-inch border; top with fig mixture. Fold border over edge of filling, pleating all around; press down gently to seal. In a small bowl, mix remaining egg with 1 teaspoon water; brush dough with egg wash.
  • Lifting edges of parchment, transfer crostata to a rimmed baking sheet. Bake until crust is golden brown, about 1 hour. Let cool on baking sheet at least 30 minutes. To serve, cut crostata into wedges.

FIG AND ALMOND TART

Fig and Almond Tart image

Provided by Giada De Laurentiis

Categories     dessert

Time 2h

Yield 6 to 8 servings

Number Of Ingredients 12

1 1/2 cups all-purpose flour
2 tablespoons sugar, plus 1 tablespoon
1 lemon, zested
1/4 teaspoon fine sea salt
10 tablespoons (1 1/4 sticks) unsalted butter, chilled and cut into 1/2-inch pieces
3 tablespoons ice water
3 1/2 ounces almond paste, at room temperature, cut into 1/2-inch pieces
1/3 cup mascarpone cheese, at room temperature
1 teaspoon vanilla extract
2 tablespoons honey
6 large or 12 small fresh figs, sliced, stems removed or 20 dried figs, reconstituted *see Cook's Note
1/4 cup apricot jam

Steps:

  • Combine the flour, 2 tablespoons sugar, lemon zest, and salt in the bowl of a food processor. Pulse until blended. Add the butter and pulse until the mixture resembles coarse meal. With the machine running, gradually add the water until moist clumps form. Turn the mixture out onto a work surface and form into a ball. Flatten the dough into a disk and wrap in plastic wrap. Chill the dough for 1 hour.
  • In a clean food processor bowl, combine remaining sugar, almond paste, mascarpone cheese, vanilla extract, and honey. Blend until smooth.
  • Position an oven rack in the center of the oven. Preheat the oven to 400 degrees F.
  • On a large sheet of parchment paper, roll out the dough into an 11-inch circle. Transfer the dough to a large, heavy baking sheet. Spread the almond filling over the dough, leaving a 2-inch border. Arrange the figs on top of the almond filling. Spoon the jam over the figs. Fold the dough border over the filling to form an 8-inch round, pleating the crust loosely and pinching to seal any cracks in the dough.
  • Bake the tart until the crust is golden, about 40 minutes. Place the baking sheet on a rack to cool for 10 minutes, then slide a metal spatula under the crust to free the tart from the parchment. Transfer the tart to a platter and serve.
  • Cook's Note: To reconstitute dried figs, simmer in water for 5 minutes. Let the mixture cool completely. Strain before using.

FIG CROSTATA

Fig Crostata image

A rich filling is studded with walnuts and imbued with citrusy notes of orange, then packaged between a crust and a lattice top, both made from the cookie-like pastry dough known as _pasta frolla_ in Italy.

Provided by Gina Marie Miraglia Eriquez

Yield Makes 8 servings

Number Of Ingredients 18

2 cups all-purpose flour
1/4 cup granulated sugar plus additional for sprinkling
1/2 teaspoon salt
1 1/2 sticks cold unsalted butter, cut into 1/2-inch cubes
2 large egg yolks
1 teaspoon pure vanilla extract
1 tablespoon cold water
12 ounces soft dried figs (preferably Calmyrna), stemmed and coarsely chopped
1 1/4 cups water
1 cup fresh orange juice
1/2 cup packed dark brown sugar
1 stick unsalted butter, melted and cooled
3 large eggs, lightly beaten
1 teaspoon pure vanilla extract
1 teaspoon grated orange zest
1 1/2 cups walnuts (6 ounces), coarsely chopped
Equipment: a 9-inch springform pan
Accompaniment: mascarpone

Steps:

  • Blend together flour, sugar, salt, and butter in a bowl with your fingertips or a pastry blender (or pulse in a food processor) just until mixture resembles coarse meal with some roughly pea-size butter lumps. Add yolks, vanilla, and water and gently stir with a fork (or pulse) until incorporated and dough begins to form large clumps.
  • Turn out dough onto a lightly floured surface and divide into 4 portions. With heel of your hand, smear each portion once or twice in a forward motion to help distribute fat. Gather all dough together (using a pastry scraper if you have one), then divide dough in half and form each half into a 5- to 6-inch disk. Chill, wrapped in plastic wrap, until firm, at least 1 hour.
  • Simmer figs, water, orange juice, and brown sugar in a medium saucepan, covered, stirring occasionally, until figs are soft and mixture is reduced to about 2 cups, 15 to 20 minutes. Pulse in a food processor until finely chopped (mixture should not be smooth). Transfer to a large bowl and cool slightly. Stir in butter, eggs, vanilla, zest, and walnuts.
  • Preheat oven to 350°F with rack in middle. Generously butter springform pan. Roll out 1 portion of dough between 2 sheets of parchment paper into a 12-inch round (dough will be soft; chill or freeze briefly if it becomes difficult to work with). Peel off top sheet of parchment and carefully invert dough into pan. (Dough will tear easily but can be patched together with your fingers.) Press dough onto bottom and 1 inch up side of pan, then trim excess. Chill tart shell until ready to assemble crostata.
  • Roll out remaining dough between 2 sheets of parchment paper into a 12-inch round. Peel off top sheet of parchment, then cut dough into 10 (1-inch-wide) strips and slide (still on parchment) onto a tray. Chill until firm, about 10 minutes.
  • Spread fig filling in shell. Arrange 5 strips of dough 1 inch apart on filling. Arrange remaining 5 strips 1 inch apart across first strips to form a lattice. Trim edges of strips flush with edge of shell. Sprinkle crostata with sugar.
  • Bake until filling is slightly puffed and pastry is pale golden, about 30 minutes. Cool completely, then remove side of pan. Serve crostata with mascarpone.v

HONEY ROASTED FIG & ALMOND TART

Honey roasted fig & almond tart image

Delicious, sweet and fruity pud, great served with cream or ice cream - make the case with bought pastry

Provided by Tom Kime

Categories     Dessert, Dinner, Treat

Time 1h45m

Number Of Ingredients 8

500g pack shortcrust pastry at room temperature, thawed if frozen
8 ripe figs , stalks trimmed
finely grated zest and juice of one large juicy orange
1 tbsp clear honey
200g softened butter
200g golden caster sugar
200g packet ground almonds
2 medium egg yolks

Steps:

  • Preheat the oven to fan 180C/ conventional 200C/gas 6. Roll out pastry on a lightly floured surface and use to line a shallow loose-bottomed 25cm flan tin. Make sure the pastry comes above the rim - it may shrink in baking and the filling could spill. Chill for 30 minutes.
  • Meanwhile, cut the figs in half lengthways and sit them cut side up on a roasting tray. Mix the orange juice and honey in a bowl, pour over the figs and roast for 10-12 minutes until just soft. Drain off any juice into a saucepan and reserve.
  • Prick the base of the chilled pastry case all over with a fork, then line with greaseproof paper and fill with baking beans. Bake blind for 15 minutes. Remove the paper and beans and bake for a further 5-10 minutes until the pastry is golden. Remove from the oven and reduce the temperature to fan 130C/conventional 150C/ gas 2. Leave the pastry case to cool slightly before filling.
  • Cream butter and sugar in a food processor or with an electric beater until smooth and pale. Tip in the ground almonds and zest and whizz briefly to combine. Add egg yolks and 1 tbsp of the reserved fig juice and whizz again until smooth. Spread evenly over the pastry case.
  • Gently press the figs cut side up into the almond mixture. Bake for 11⁄4 hours or until it's golden all over (don't worry if the centre still seems soft - a little gooeyness is good). Leave in the tin for 15 minutes, then remove sides and transfer on its base to a wire rack to cool.
  • Before serving, take the tart off its base and transfer to a flat platter or board. If you have juice left from roasting the figs, bring it to the boil and simmer for 1-2 minutes until sticky and syrupy. Brush this over the figs and serve as soon as possible, while the syrup is still glossy on the figs (it will start to seep through into the filling if you leave it too long).

LEMON CROSTATA WITH FRESH FIGS AND GOAT CHEESE

Lemon Crostata with Fresh Figs and Goat Cheese image

Any time a dish -- sweet or savory -- doesn't taste quite perfect, or seems to need a little spark of something, I reach for a lemon. Lemon juice and zest breathe new life into flavors, bring zippy contrast to the sweetness of fruit, and add an element of springy freshness to almost any recipe. Here, I use zest to pick up the flavor of a basic tart crust - and it also perfumes the figs, mild goat cheese, and honey that are dotted on top. Crostata is my favorite quick-trick for making fruit tarts, because you can skip the tart pan altogether. It's an Italian flat-hand formed tart. On top, you can use almost any jam plus soft fruit or berries, as long as it isn't too juicy (orange sections or grapes, for example, would be too juicy).

Categories     dessert

Time 2h

Yield 4 servings

Number Of Ingredients 8

1 cup all-purpose flour
1/4 cup sugar
1/2 lemon, zest freshly grated
8 tablespoons (1 stick) cold unsalted butter, cut into pieces
1 egg, beaten
4 ounces mild, fresh goat cheese (no rind)
10 ripe fresh figs (black or green), stems snipped off with a scissors, figs cut in half lengthwise
2 tablespoons honey

Steps:

  • Make the dough: Blend the flour, sugar, and lemon zest at low speed in a mixer fitted with a paddle attachment. Add the butter and continue blending at low speed until the mixture is coarse and sandy-looking. Add the beaten egg and blend just until the mixture comes together. Form into a ball, wrap with plastic wrap, and refrigerate at least 1 hour.
  • Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.
  • On a floured surface, roll the dough out to a rough circle, about 8 inches in diameter. The dough may seem crumbly but you can just push it back together and make patches if necessary. Transfer to the prepared pan. All around the circle, fold in the outer 1/2-inch of the pastry to form a naturally raised, "rustic" edge to the tart. Don't press the edge down.
  • Using your fingers, break the goat cheese into small pieces, sprinkling it over the bottom of the tart (not the edges). Arrange the fig halves in concentric circles over the goat cheese and drizzle the figs with honey. Bake about 25 to 30 minutes, or until the underside of the tart crust is browned.

RUSTIC BLUEBERRY AND FIG CROSTATA

Rustic Blueberry and Fig Crostata image

An incredibly simple free-form dessert, also know as a galette, that's perfect for new or experienced bakers. The complementary tarragon gives it a little pop of unexpected flavor.

Categories     Desserts     Pies     Tarts     Fruit Tart Recipes

Time 1h5m

Yield 6

Number Of Ingredients 11

1 ready-to-use refrigerated pie crust
3 cups fresh blueberries
2 tablespoons all-purpose flour
1 tablespoon white sugar
1 tablespoon minced fresh tarragon leaves
1 lemon, zested and juiced
½ teaspoon almond extract
2 fresh figs, sliced
1 egg, beaten
1 tablespoon water
1 teaspoon turbinado sugar

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Roll pie crust out on a floured work surface to about 10 inches. Transfer to the prepared baking sheet.
  • Combine blueberries, flour, sugar, tarragon, lemon zest and juice, and almond extract in a medium bowl. Mix well.
  • Spoon blueberry mixture into the center of the pie crust, leaving about a 2-inch border. Place fig slices in the center in a circular pattern. Fold crust up all around the edge of the blueberries, crimping and pinching to create pleats.
  • Whisk egg and water together in a small bowl. Brush edges of crust with mixture and sprinkle with turbinado sugar.
  • Bake in the preheated oven until crust is crispy and golden brown, about 20 minutes. Remove from the oven and set aside to cool and set, 15 to 30 minutes. Serve warm or at room temperature.

SAUTEED FRESH FIG AND ALMOND DESSERT

Sauteed Fresh Fig and Almond Dessert image

Mmmm! I made this over the weekend as a project---I made some energy bars for my fiance and had figs left over. This is wonderful, VERY fast and VERY easy!

Provided by spatchcock

Categories     Dessert

Time 9m

Yield 4-6 serving(s)

Number Of Ingredients 5

2 tablespoons butter
12 ripe fresh figs, halved lengthwise
1/4 cup brown sugar (you might want to add more...I did!)

heavy cream (to garnish, optional, but the best part)

Steps:

  • Melt the butter in a large skillet over high heat.
  • Add the fig halves and sprinkle liberally with brown sugar.
  • Saute, turning the figs gently, until warmed through, about 4 minutes. Be careful not to let the butter/brown sugar burn, just caramelize.
  • Sprinkle with toasted almonds and garnish with heavy cream.
