TURKEY HASH
A good use for turkey leftovers--I've made this after Thanksgiving for decades. Amounts are approximate estimates. Nowadays I often cut the butter to 1 Tbs or just use nonstick cooking spray in place of butter.

Steps:
- Sauté onion through potatoes in butter about 10 minutes until tender.
- Add turkey through pepper.
- Mix well.
- Cook over low heat 10 minutes.
- Serve hot, sprinkled with parsley.

TURKEY HASH WITH LEMON CHILI MAYONNAISE
Steps:
- To make the mayonnaise, place the egg yolk, mustard and lemon juice in a blender and process to combine. With the motor running, add the oil by drops until the mixture begins to emulsify. Continue by adding the oil slowly in a thin, steady stream, until the mayonnaise is thick. Place in a bowl and stir in the lemon zest, chili powder, salt and pepper. Cover and refrigerate at least 1 hour.
- To make the hash, preheat broiler. Heat a large nonstick skillet over medium heat until hot. Add the bacon and onion, and saute until the onion is translucent, about 5 minutes. Add the garlic and cook, stirring constantly, for 1 minute. Add the potatoes and saute until tender, about 10 minutes. Stir in the thyme, sage, cumin and turkey and cook until the turkey is just heated through. Remove from heat and stir in salt, pepper, lemon juice and parsley.
- Place the hash in a baking dish and place under the broiler until nicely browned, about 2 minutes. Serve with a dollop of the mayonnaise.

- In medium saute pan, add 2 ounces olive oil, onions, peppers and saute until translucent. Add turkey and brown on all sides. Season with salt and pepper.
- In a separate pan, add 2 ounces of oil, and fry potatoes in oil until crispy. On a serving plate layer the turkey mixture on top of the crispy potatoes.
- Top with diced roma tomatoes and fresh squeezed lime juice.

Steps:
- Cook the red onion, red pepper and potatoes in 125ml olive oil in a non-stick frying pan, until tender and lightly browned (about 12 minutes).
- Put the turkey and tarragon into a mixing bowl and season to taste. Add the eggs to the bowl and combine well.
- Heat the 2 tablespoons of olive oil in the non-stick frying pan. Spoon in the mixture to cover the whole pan. Cook for about 5 minutes, then turn and lightly brown the other side.
- Meanwhile, grill the bacon rashers until crisp.
- To serve, cut the hash into wedges. Put dollops of crème frâiche at the side with some crispy bacon.

- Preheat oven to 500*. Simmer potatoes in a pot of boiling salted water until barely tender (5 minutes). Drain and set aside.
- In a heavy skillet,cook the bacon and onion in 1/2 tablespoon oil over medium heat, stirring, for 5 minutes. Add the potatoes and cook, stirring, until crisp and golden (should take about 5 minutes).
- Cool slightly, and stir in turkey, cheese and parsley.
- Put 2 tortillas on a baking sheet and brush with some of the remaining olive oil. Turn tortillas over and top each with half the turkey hash, spreading out evenly. Cover with remaining 2 tortillas and brush tops with remaining oil.
- Bake in a preheated 500* oven until golden, about 8-10 minutes.
- To serve, cut into wedges and top with cranberry sauce.

- Preheat oven to 450-degrees F.
- Lay turkey in a roasting pan.
- Remove leaves from herbs stems. Add sage, thyme, rosemary, and oregano to mayonnaise; combine well. Rub mayonnaise/herb mixture all over outside and interior of bird.
- Liberally salt, and pepper turkey. Add the celery, and onion, inside and out, and tuck the butter in the cavity.
- Roast turkey in 450-degrees F oven for 30 minutes. Then turn the oven down to 350-degrees F, and insert the meat thermometer into the thickest part of the thigh, being careful not to touch bone. Continue roasting, uncovered, until internal thermometer reaches 165-degrees F. Cover legs with foil partway through roasting if desired. Depending on size of turkey, total cook time will be around 1½-2 hours. Once the thermometer reaches 165-degrees F in the thigh, check the internal temperature of the thickest part of the breast to make sure it reads at least 165-degrees F as well.
- Remove from oven. Cover loosely with foil and let rest for at least 20-30 minutes (depending on size) before carving.
- Remember to reserve turkey drippings and juices for gravy.
