Those times are long gone but the memories are still there, especially on a cold day like this when a good cup of coffee from México with Cinnamon and Piloncillo will warm you up. I love making this coffee when we go camping.

Steps:
- In a Medium saucepan, place the water, cinnamon, and Piloncillo (or brown sugar). Turn heat and simmer until the piloncillo is dissolved. About7 minutes.
- When the water starts boiling, add the coffee, turn the heat off and stir.
- Cover the pot and let steep for 5 minutes. Pour through a strainer to serve.

- In a medium saucepan over medium heat, add the coffee grounds with 1 quart water, the sugar, cinnamon and orange peel. Stir to combine and bring to slow boil, stirring to dissolve sugar. Remove from the heat and let steep, covered for 5 minutes. Strain, through a fine mesh strainer, into cups and serve.

Steps:
- Combine water, piloncillo, cinnamon sticks, anise and cloves in medium saucepan.
- Heat over medium-high heat, stirring occasionally, until boiling.
- Reduce heat to low; cover.
- Cook for 15 minutes.
- Remove from heat; stir in coffee granules. Cover; steep for 5 minutes.
- Heat evaporated milk in small saucepan over medium-high heat.
- Whisk constantly until milk is frothy and just comes to a boil.
- Remove from heat.
- Strain coffee through a fine sieve into individual serving cups.
- Serve immediately with frothed milk on the side.

- COMBINE espresso, cinnamon, and nutmeg in coffee filter in an electric coffee maker.
- POUR water into the water receptacle.
- ADD SPLENDA® No Calorie Sweetener, Granular and orange juice to empty coffee pot; brew.
- Serve immediately; black or with milk and additional SPLENDA® No Calorie Sweetener or Granular if desired.

MEXICAN COFFEE

- Frost rims of 2 cups with sugar. Pass it through the fire, gilding the edge little by little. Add the tequila and the coffee liqueur to them tilting the cup a little towards the fire so that the liqueur begins to flame. Dust with cinnamon. Immediately add hot coffee and a scoop of vanilla ice cream. Top with a cherry.

- Place coffee, cocoa and cinnamon in a filter for coffee brewing. Make 4 cups of brewed mocha-cinnamon coffee. Pour a shot of coffee liquor in the bottom of a coffee mug. Pour in a serving of brewed mocha-cinnamon Mexican coffee. Top off the mug with a generous swirl of whipped cream and garnish with another sprinkle of cinnamon. Repeat for desired number of mugfuls!

- Combine the spices with the coffee beans in a grinder and whirr until the beans are finely ground.
- Bring 4 cups of water to boil.
- Put some milk-a cup or more-in a small saucepan over a low flame to heat. Do not let it come to a boil.
- If you are making the coffee in a filtered maker: Pour the coffee mixture into the paper-lined brewing cup. Pour about 2 ounces of boiling water over the coffee to allow the grounds to "bloom." Then slowly add the rest of the water, allowing it to drip through the grounds into the pot below.
- Or (for Mikekey) if you are using a French press: Put the coffee and spice mixture in the bottom of the press pot. Pour in the requisite amount of boiling water, put the top in place and let the mixture steep for 4 to 5 minutes. Press the plunger down.
- Pour the spiced coffee into cups and add hot milk (and sugar) if desired. Serve at once.
