SMOKY VEGGIE BURGERS

Steps:
- Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the walnuts, shallot and garlic and cook, stirring, until softened, about 1 minute. Add the mushrooms and season with salt and pepper. Cook, stirring occasionally, until lightly browned and tender, about 5 minutes. Add the Worcestershire sauce and paprika and cook, tossing to coat, until reduced, about 10 seconds. Remove from the heat and stir in the mustard. Transfer the mixture to a large bowl.
- Meanwhile, microwave the sweet potato until tender, 8 to 10 minutes. Let cool, then peel and transfer to a large bowl. Add the quinoa and beat with a mixer on medium-high speed until combined. Beat in the breadcrumbs, 1/2 teaspoon salt and a few grinds of pepper. Form into four 4-inch-wide patties and freeze until firm, 20 minutes.
- Preheat a grill to medium high. Oil the grates. Grill the patties until marked, about 3 minutes per side. Grill the buns. Serve the burgers on the buns with onion and sprouts.
BIG SMOKEY BURGERS
I created this recipe while trying to recreate the best burger I had ever tasted at a restaurant in the Great Smoky Mountains of North Carolina. My family and I think these burgers are better! They are packed with flavor!

- Preheat an outdoor grill for medium-high heat.
- Combine ground sirloin, onion, grill seasoning, liquid smoke, Worcestershire sauce, garlic, adobo sauce, and chipotle pepper in a large bowl. Form the mixture into 6 patties. Season with salt and pepper.
- Place burgers on preheated grill and cook until no longer pink in the center. Place a slice of Cheddar cheese on top of each burger one minute before they are ready. Place burgers on buns to serve.

SMOKY BACON BURGERS
This one's for the guys or for you ladies who want to really make the men in your lives happy! The burgers are seasoned with liquid smoke and spices and grilled with a slice of thick-cut smoky bacon wrapped around each one. Have fun building these big boys any way you like! I find these taste their best served poolside after a good game of water basketball or volleyball with some chips and cold soda or beer.

- Combine the ground beef, onion, egg yolk, salt, pepper, and liquid smoke in a medium bowl and mix well.
- The mixture should be soft, yet hold its shape.
- Add up to 1/2 cup bread crumbs if mixture will not come together.
- Mix with your hands-- like a man should!
- Feel free to add small amounts of any other seasonings you think would add to the flavor.
- I like to add a bit of minced garlic, seasoned salt, cayenne, etc.
- Have fun with it.
- Divide the mixture into four equal portions and form into patties that are about the diameter of the buns you'll be using.
- This should make them fairly thin and large.
- Wrap a slice of bacon around the center of each patty and secure with toothpicks.
- Chill in refrigerator at least 1 hour or up to 8 hours to chill and firm up the patties.
- Bring patties up to room temperature while preparing a hot fire in grill.
- Throw on a few water-logged mesquite wood chunks and grill the burgers to your liking, removing the toothpicks before turning over.
- While the burgers are on the grill, lightly toast the buns under the broiler or on the grill.
- Be sure you have the large hamburger buns, not those puny ones like you see in McDonald's happy meals.
- You're making man-sized burgers here!
- Place the hamburger patties, buns, tomatoes, lettuce, and anything else you want to use to build your burger, on individual plates and let each person make their own.
- These burgers go great with potato chips, macaroni salad, baked beans, and corn on the cob for a fantastic Summer meal.
- A chocolate pudding or slice of cream pie makes a great dessert.
- This recipe can be doubled or tripled or whatever to serve as many as you need.

SMOKY BEER BURGERS WITH CREAMY MUSTARD SAUCE
Anyone can cook up some ground meat on a grill, but, like Arthur and his sword, only a true King can bring this much flavor from the grill to the table. Conquer friends and family for the night with this smoky, spicy champion.

- Preheat grill over medium-high heat.
- Place the meat in a bowl and add the cheese. Peel the onion and halve it, if using the medium onion. Grate about 3 to 4 tablespoons of onion directly over the meat into the bowl. Finely chop the remaining onion and reserve for topping. Add spices to meat: paprika, cumin and about 1 tablespoon of grill seasoning and/or some salt and pepper. Add garlic, parsley and Worcestershire and beer then form 4 large patties making them a little thinner at the center than at edges. Burgers plump when you cook them so this will prevent burger bulge. Drizzle a little olive oil over the burgers then grill about 4 minutes on each side for medium rare, 5 minutes on each side for medium and 6 to 7 minutes on each side for well done.
- Mix mustard and sour cream with dill.
- Serve patties on bun bottoms and top with lettuce, pickles, chopped raw onion. Slather bun tops with sauce and serve.
SMOKY MUSHROOM BURGERS WITH ROASTED GARLIC MAYO
Top mushrooms with sundried tomato breadcrumbs and serve with melted cheese and aioli for the ultimate veggie burger

- Heat up the barbecue. To make the garlic mayo, wrap the garlic cloves in a foil parcel, position on a hot spot of the barbecue and cook for 20 mins until really soft. Alternatively, bake in a hot oven for 20-30 mins. Leave to cool, then squeeze the cloves out of their skins and mash with a fork. Mix the garlic purée with the mayonnaise, then chill until ready to serve.
- Remove the stalks from the middle of the mushrooms and finely chop them. Heat a drizzle of oil in a pan (on the barbecue or hob), add the stalks and fry for a few mins until golden and soft. Add the peppers, thyme, breadcrumbs, tomato paste, paprika and some seasoning. Cook for 5 mins more, then set aside to cool a little. Rub the mushroom caps with a little oil, season, then top each one with ¼ of the mixture. Can be chilled for up to 1 day.
- Meanwhile, heat a little oil in another frying pan (on the barbecue or hob), and add the onions. Cook for 15 mins until soft and golden, then add the sugar, vinegar and some seasoning. Cook for 5 mins more until caramelised and sticky. Can be chilled for up to 2 days.
- Put the mushrooms on the barbecue (stuffed side up), close the lid or cover with foil, and cook for 20 mins until soft and cooked through. Be sure to keep an eye on the heat and move to the upper shelf if the bottoms of the mushrooms start to burn. Split the rolls and heat these on the barbecue, too. Spread each roll with some garlic mayo, top with salad leaves, a filled mushroom, some sticky onions and a grating of cheese.

- MIX ground beef and Seasoning Mix until well blended. Shape into 4 patties.
- GRILL over medium heat 4 to 6 minutes per side or until burgers are cooked through (internal temperature of 160ºF). Grill onion in grill basket or grill rack 3 minutes or until tender and lightly browned, stirring frequently. Add cheese slices to burgers 1 minute before cooking is completed. Toast rolls on the grill, open-side down, about 30 seconds or until golden.
