This is an easy, yet very tasty spaghetti casserole, which reminds me of the spaghetti they used to serve us in elementary school. I loved their spaghetti! I normally only brought my lunch, but not on spaghetti day!

8 ounces uncooked spaghetti
1/2 cup milk
1 egg
1 lb ground beef
1 medium onion, chopped
1 medium green bell pepper, chopped
2 garlic cloves, minced
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon pepper
2 (8 ounce) cans tomato sauce
1/2 cup shredded cheddar cheese
1/2 cup shredded monterey jack cheese

Steps:

  • Cook spaghetti per package direcions.
  • Combine milk and egg, mix well.
  • Combine drained spaghetti, milk and egg; mix well.
  • Pour spaghetti mixture into a buttered 9X13 inch casserole dish.
  • Brown ground beef with onion, bell pepper and garlic in a large skillet; drain.
  • Return drained meat back into the skillet and add seasonings; Cook for 2 minutes.
  • Stir in tomato sauce and cook for 2 more minutes.
  • Spread meat mixture over spaghetti.
  • Sprinkle with cheese.
  • Bake at 425°F for 10 minutes or until cheese melts and is bubbly.
  • Remove from oven and let stand for 10 minutes.

2 teaspoons chili powder

1 package (7 ounces) thin spaghetti, broken into thirds
1 pound zucchini (about 4 small), cut into chunks
1/2 cup shredded cheddar cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Remove beef and set aside. In the same skillet, combine the water, tomato sauce, chili powder, garlic powder, cumin and salt; bring to a boil. Stir in spaghetti; return to a boil. , Boil for 6 minutes., Add the zucchini. Cook 4-5 minutes longer or until spaghetti and zucchini are tender, stirring several times. Stir in beef and heat through. Sprinkle with cheese.

I found this recipe in a potluck cookbook collection. It is so very simple to make, you may all ready have the ingredients on hand! You can use whichever meat you prefer... I made this with the ground turkey and it was yummy!

8 ounces uncooked spaghetti
1/2 cup milk
1 egg
1 lb ground pork or 1 lb ground beef
1 cup onion, chopped
1 green bell pepper, chopped
1 garlic clove, minced
1 tablespoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 (8 ounce) cans tomato sauce
1 (15 ounce) can light kidney beans, rinsed and drained
1 -8 ounce shredded jalapeno monterey jack and cheddar cheese blend
dried cilantro (optional)

Steps:

  • Preheat oven to 425* degrees.
  • Cook spaghetti according to package directions, drain well and return to pot. Mix the milk and egg together thoroughly and then pour into the spaghetti and mix well. Spoon mixture into a buttered 9x13 casserole dish.
  • Meanwhile, in a large saucepan, brown ground meat of choice with the onions, peppers, and garlic until browned and cooked through; drain.
  • Add the chili powder, cumin, oregano, salt, and black pepper, mix thoroughly and cook on low for 2 minutes. Add the tomato sauce and beans and cook for another 2 minutes.
  • Add meat mixture to the casserole dish and spread evenly over the spaghetti. Sprinkle the cheese on top evenly. You may sprinkle some dried cilantro over cheese if desired.
  • Bake in oven for 10 minutes until bubbly. Let stand for 5 minutes. serve!

1-1/2 pounds ground beef
1 small onion, chopped
1 envelope taco seasoning
1 jar (26 ounces) spaghetti sauce

1 can (2-1/4 ounces) sliced ripe olives, drained
2 cups shredded cheddar cheese
Shredded lettuce, diced tomatoes, sour cream, salsa and picante sauce

Steps:

  • Cook spaghetti according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink, breaking it into crumbles; drain. , Stir in the taco seasoning, spaghetti sauce, mushrooms and olives. Drain spaghetti; stir into the beef mixture., Transfer to a greased 13x9-in. or 3-qt. baking dish; sprinkle with cheese. Bake, uncovered, at 350° until heated through, 25-30 minutes. 1 serving cooking spray (such as Pam®)
1 (2 pound) spaghetti squash, halved and seeded
1 (15 ounce) can Mexican-style diced tomatoes, undrained
1 (15 ounce) can black beans, rinsed and drained
¾ cup shredded reduced-fat Monterey Jack cheese
¼ cup minced fresh cilantro
1 teaspoon ground cumin
¼ teaspoon garlic salt
¼ teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray.
  • Place spaghetti squash, cut-side down, on the baking sheet.
  • Bake squash in the preheated oven until skin can easily be pierced with a fork and insides are tender, 30 to 40 minutes. Remove from the oven (leave oven on) and allow to rest until cool enough to handle, about 10 minutes. Scrape out flesh with a fork and transfer to a large bowl; discard skins.
  • Spray a 1 1/2 quart casserole dish with cooking spray.

Steps:

  • Pierce squash in several places with fork or sharp knife; place in shallow microwaveable dish. Microwave on HIGH 10 to 15 min. or until squash is softened, turning every 5 min. Cool slightly.
  • Heat oven to 375°F. Cut squash in half; remove and discard seeds. Use fork to scrape insides of squash into strands; place strands in large bowl. Place squash shells, cut sides up, in shallow baking dish.
  • Slice onions, keeping white and green pieces separated. Add white onion slices to squash strands in bowl along with the beans, corn, salsa and half the cheese; mix lightly. Spoon into squash shells; top with remaining cheese.

1 spaghetti squash, roasted and flesh scraped out with a fork into spaghetti-like strands
2 teaspoons olive oil
1/4 cup finely chopped green onions
1 jalapeño, seeds removed and finely chopped
3/4 cup black beans (canned), rinsed and drained
1/2 cup frozen corn, defrosted
1/2 pound boneless skinless chicken breasts, cooked and shredded
1 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon granulated garlic
Kosher salt and fresh ground black pepper to taste
1 cup red enchilada sauce
1/2 cup shredded Monterey Jack cheese
Chopped tomatoes, cilantro and green onions for toppings (optional)

Steps:

  • Preheat oven to 375° F.
  • In a large oven safe skillet, heat the olive oil over medium-high heat. When the skillet is hot add in the green onion and jalapeño. This casserole is one of our family's favorite ways to eat spaghetti squash. It's so easy to make ahead, it freezes well, the leftovers taste great, and it requires very few side dishes to "round out" the meal.

olive oil
1 large bell pepper; diced
1 medium red onion; diced
3 c. spaghetti squash; roasted and shredded
3 green onions; diced
1.5 c. black beans (or a 14.5 oz can)
1.5 c. frozen or fresh corn (or a 14.5 oz can)
2 c. cooked chicken, turkey, or ground beef (or just add more beans and veggies)
1.5 c. salsa (however spicey you want to make it!)
1 tsp. cumin
1 tsp. chili powder
1/2 tsp. salt
2 c. shredded cheese (we like using a mix of cheddar and pepper jack)
1/2 c. fresh cilantro; roughly chopped
OPTIONAL GARNISH: avocado, onions, tomatoes, salsa, sour cream, and cilantro

Steps:

  • Heat oil in a large skillet, add diced peppers and onions and sauté until soft (5-7 minutes)
  • While the veggies are cooking, preheat oven to 375ºF. Grease a 9" x 13" baking dish (or 2 smaller dishes) and set aside.
  • Mix the rest of the ingredients (except cheese and garnishes) in a large bowl -- adding more salsa if necessary.
  • Add cooked veggies to squash mixture and dump into prepared pan(s).
  • Top with shredded cheese, cover with foil, and bake in preheated oven for 20 minutes, or until heated through.
  • Remove foil and bake for 5-10 minutes or until cheese is very melty (but not brown).
  • Serve with optional garnishes, chips and salsa, and a salad.

1 1/2 cups diced tomatoes
3/4 cup corn kernel, fresh or frozen

Steps:

  • Peel sweet onions and cut into slices about 1/4-inch thick; separate slices into rings.

1 teaspoon onion flakes
1/2 teaspoon garlic powder
1 low-sodium vegetable bouillon cube, broken up
2 pickled jalapenos, seeded and chopped
Salt and freshly ground black pepper
1/4 cup grated Parmesan

Steps:

  • Cook spaghetti according to package directions. Drain and set aside.
  • In a blender, combine tomatoes, onion flakes, garlic powder, bouillon cube, and jalapeno. Process until smooth. Transfer mixture to a saucepan and set pan over medium-high heat. Simmer for 5 minutes. Season, to taste, with salt and black pepper.

  • Preheat oven to 400°F. Carefully cut your spaghetti squash in half with a large, sharp knife. Remove seeds and stringy guts, and brush the cut sides of the squash with 1 tablespoon of olive oil. Season with Kosher salt and freshly ground black pepper. Place spaghetti squash, cut side down, on an aluminum-lined baking sheet and roast until tender, about 45-60 minutes.
  • To test if your squash is done, scrap the flesh with a fork. If the strands come off easily, it’s done. Let the cooked spaghetti squash cool for about 5 minutes, then scrape all the flesh into a beautiful pile of spaghetti strands. Taste and season with some more Kosher salt and pepper if needed.
  • Meanwhile, heat remaining 2 tablespoons of olive oil in a skillet over medium heat. Add onion, red bell pepper, and jalapeno. Season with Kosher salt and cook for about 4 minutes, stirring occasionally. Add garlic, cumin, paprika, and Mexican oregano, and cook for 1 more minute, stirring to avoid burning garlic. Add beans, corn, and edamame. Season with Kosher salt and freshly ground pepper, stir to combine, and cook until heated through. Squeeze in the juice of the lime and give it one last quick stir.
