2 lbs ground beef
1 medium onion, small dice
diced tomato (2 - 14.5 oz cans)
tomato sauce (1 - 14.5 oz can)
pinto beans, drained (1 - 14.5 oz can)
1 (12 ounce) bottle beer
2 tablespoons chili powder
1 teaspoon garlic powder
1/2 teaspoon cumin
2 teaspoons salt
2 tablespoons olive oil

Steps:

  • Saute onion in olive oil until translucent. Add to slow cooker, along with tomatoes and beans.
  • Brown beef in same pan, adding a little salt to season.
  • Drain beef and add to slow cooker. Add a little beer to the pan to deglaze and get all the good crispy bits. Pour into slow cooker and add rest of the beer.
  • Stir in seasonings and cook.
  • An hour before serving, taste and adjust seasoning as desired. Add a little flour if it is too thin.

This is an easy to throw together chili. I know there are a gazillion chili recipe's out there, but this my family's fave. Usually I just make this for me and my DF, but if you double the recipe its great for the whole family. (note the ounces on the can are guess, just use whatever size can is common at the grocery store)

1 lb ground beef
1 (12 ounce) can diced tomatoes, juice included
1 (12 ounce) can kidney beans, drained
1 cup beef broth
2 teaspoons salt
1 teaspoon pepper
1 teaspoon oregano
1 teaspoon crushed red pepper flakes
water, as needed
cheddar cheese, shredded (optional)
saltine crackers (optional)

Steps:

  • Brown beef, drain fat.
  • Add rest of ingredients through red pepper flakes.
  • Bring to a boil, then reduce heat to medium low and simmer for 15-20 minutes or until beans and tomatoes are tender, and chili has desired consistency. If chili cooks down too much, or you enjoy your chili a little thinner, add water as needed and bring chili back to a simmer until you reach desired consistency.
  • Top with cheese and crackers.

1 lb ground beef (or chuck or sirloin)
1 lb ground sausage (mild, don't use hot unless you like el scorcho chili)
6 tablespoons extra virgin olive oil
2 medium onions
3 large green peppers
3 stalks celery
3 tablespoons roasted garlic, puree
4 tablespoons chili powder
1 tablespoon flour
2 tablespoons Worcestershire sauce
2 (28 ounce) cans diced tomatoes
1 (40 ounce) can red kidney beans
1 teaspoon salt
1 tablespoon oregano
1 tablespoon red wine vinegar
2 tablespoons brown sugar

Steps:

  • Coarse chop onions and sauté in 4 tbs olive oil until caramelized in a 6 quart cooking pot.
  • While onions are cooking coarse chop peppers and celery and place in bowl.
  • Remove onions from pot (leaving oil) to bowl with peppers/celery; set aside.
  • Add 2 tbs olive oil to pot.
  • Combine chili powder and flour in small bowl and once well blended add to oil in pot.
  • Add 2 tbs Worcestershire sauce and stir until smooth.
  • Add Beef and Sausage to pot and stir until combined and well coated with sauce.
  • Continue cooking over medium heat until browned.
  • Add both cans of tomatoes to meat in pot and bring to light boil over medium heat.
  • Add beans, pepper/celery/onion mixture, garlic, and all seasonings to pot and stir.
  • Cover and reduce heat to lowest setting.
  • Cook over low heat for at least four hours or up to 8 hours.
  • In final hour of cooking remove cover and increase heat slightly to reduce liquid.
  • Once chili reaches desired consistency replace cover and reduce heat back to low.
  • Serve with side bowls of sour cream and shredded cheese (cheddar, or a good mix) and crackers.

1 tablespoon vegetable oil
2 pounds ground chicken
3 (15 ounce) cans pinto beans, rinsed and drained
2 onions, halved and thinly sliced
1 (14.5 ounce) can diced tomatoes with juice
1 (14.5 ounce) can Mexican-style stewed tomatoes with chiles, undrained
½ cup water
2 tablespoons brown sugar
2 tablespoons chili powder
2 tablespoons vinegar
2 tablespoons prepared mustard
2 teaspoons salt
¼ teaspoon ground black pepper

Steps:

  • Heat vegetable oil in a soup pot over medium heat. Cook and stir ground chicken in the hot oil until no longer pink and the chicken is crumbly, about 10 minutes. Drain.
  • Stir in pinto beans, onions, diced tomatoes, Mexican-style stewed tomatoes, water, brown sugar, chili powder, vinegar, mustard, salt, and black pepper; bring to a boil. 1 green bell pepper, chopped
1 tablespoon vegetable oil
2 lbs lean ground beef

  • Ingredients. Oil. 1 to 2 medium Onions, finely chopped. 1 medium Bell Peppers, chopped. 1 to 2 Celery Stalks, sliced thin. 2 lbs. fresh Ground Beef or Chuck, coarse grind.
  • Cook the Sausage. Crumble and fry sausage in a skillet, drain and set aside. It is important to mention here for food safety you DO NOT want to cook raw pork and raw beef together in the same pan.
  • Saute Onions, Celery and Bell Peppers. Brush bottom of a large heavy pot with oil. Saut� the onions, bell pepper and celery for a few minutes until onion has turned almost clear.
  • Add Ground Beef. Crumble and add ground beef and cook until meat is just browned. DO NOT drain.
  • Add Remaining Ingredients, Except ... Add remaining ingredients except chili powder. Season to taste with salt and pepper.
