Cooking burgers under the broiler is so easy, and they come out wonderfully juicy and flavorful.

1 lb. lean ground beef ((85/15))
1 teaspoon Diamond Crystal kosher salt ((not fine salt))
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/4 cup sauteed onions
4 oz smoked gouda (thinly sliced)

Steps:

  • Preheat your broiler on high. Position an oven rack directly (3-4 inches) below the heating element.
  • Sprinkle the Kosher salt, pepper, garlic powder, onion powder, and smoked paprika on the meat. Work the spices gently and evenly into the meat.
  • Divide the seasoned meat into four equal 4-oz portions and gently shape them into four patties, 3.5 inches in diameter and 1/2 inch thick.
  • Arrange the patties in a cast-iron skillet. Push down on the center of each patty to create a dimple. This will help the burgers stay flat as they cook.
  • Broil the burgers to medium, about 3 minutes per side.
  • Turn the oven off, top each burger patty with sauteed onions and with cheese, and return the pan to the still-warm oven for just a few seconds, until the cheese is melted. Serve immediately.

1/2 green pepper, finely chopped
1 teaspoon paprika
1 teaspoon Worcestershire sauce
1 onion, minced
1 egg, beaten
6 -8 slices bacon
1 (10 3/4 ounce) can beef consomme soup

Steps:

  • Combine ground meat, green pepper, paprika, Worcestershire sauce, minced onion, egg and mix well.
  • Shape into patties about 3 inches across and 1 inch thick.
  • Wrap a strip of bacon around each patty and fasten with a toothpick.
  • Brown well on both sides, either in a skillet on top of the stove or in a baking pan under the broiler.
  • Pour off any excess fat that may accumulate and add the Consommé.
  • Bake the patties at 350 degrees, basting occasionally, for 40 to 60 minutes.

I find that using the broiler is alot faster than using conventional baking. I also use an ingredient called Hazel Hamout, which is a middle eastern blend of curry, cayenne pepper, edible flower petals, and rosemary. I found out about it on one of my trips to the Jean Talon market in Montreal. You're most likely to find it in Arab stores, because thst is where I found mine. You can mix curry and cayenne pepper together to give a similar taste. I'll list it below as optional, even though I use it all the time in this recipe.
