Roasted Butternut Squash Salad with Warm Cider Vinaigrette image

1 (1 1/2-pound) butternut squash, peeled and 3/4-inch) diced
Good olive oil
1 tablespoon pure maple syrup
Kosher salt and freshly ground black pepper
3 tablespoons dried cranberries
3/4 cup apple cider or apple juice
2 tablespoons cider vinegar
2 tablespoons minced shallots
2 teaspoons Dijon mustard
4 ounces baby arugula, washed and spun dry
1/2 cup walnuts halves, toasted
3/4 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the butternut squash on a sheet pan. Add 2 tablespoons olive oil, the maple syrup, 1 teaspoon salt and 1/2 teaspoon pepper and toss. Roast the squash for 15 to 20 minutes, turning once, until tender. Add the cranberries to the pan for the last 5 minutes.
  • While the squash is roasting, combine the apple cider, vinegar, and shallots in a small saucepan and bring to a boil over medium-high heat. Cook for 6 to 8 minutes, until the cider is reduced to about 1/4 cup. Off the heat, whisk in the mustard, 1/2 cup olive oil, 1 teaspoon salt, and 1/2 teaspoon of pepper.
  • Place the arugula in a large salad bowl and add the roasted squash mixture, the walnuts, and the grated Parmesan. Spoon just enough vinaigrette over the salad to moisten and toss well. Sprinkle with salt and pepper and serve immediately.

50g wild and brown rice
50g Puy lentils
1 head broccoli , cut into florets
50g dried cranberries
25g pumpkin seeds

Steps:

  • Heat oven to 200C/180C fan/gas 6. Spread the squash over a large baking sheet, drizzle over the oil and bake for 30 mins or until tender.
  • Meanwhile, cook the rice and lentils in boiling salted water for 20 mins, adding the broccoli for the final 4 mins of cooking. Drain well, then stir in the cranberries and pumpkin seeds with some seasoning. Add the squash, pour over the lemon juice and serve.

1 butternut squash
olive oil
sea salt
freshly ground black pepper
1 small dried red chilli
1 heaped teaspoon coriander seeds
20 slices quality prosciutto or Parma ham
4 handfuls rocket
6 tablespoons extra virgin olive oil
4 tablespoons balsamic vinegar
1 small block pecorino or Parmesan cheese

Steps:

  • This is one of those easy salads with a twist. You may have tried a Parma ham, rocket and Parmesan salad with a little balsamic, but by adding warm roasted squash and trying it with pecorino, which is slightly smoother than Parmesan, it's a real pleasure and even feels a bit posh.
  • Preheat your oven to 190°C/375°F/gas 5. Carefully cut your butternut squash in half, keeping the seeds intact. Remove the two ends and discard them. Cut each half into quarters and lay in a roasting tray. Rub with a little olive oil. In a pestle and mortar pound up a flat teaspoon each of salt, pepper and your chilli and coriander seeds. Scatter this over the squash. Roast the squash for half an hour or until soft and golden. Allow to cool a little.
  • Lay your prosciutto on 4 plates - let it hang over the rim of the plates and encourage it to twist and turn so it doesn't look neat and flat. Tear up your warm squash and put it in and around the ham. Sprinkle over the seeds and the rocket. Drizzle over the olive oil and balsamic, add a tiny pinch of salt and pepper, and use a vegetable peeler to shave over the Pecorino. Easily done.

1 large butternut squash (peeled and diced)
2 Tbsp olive oil
1 tsp. smoked paprika
1 tsp. garlic powder
1/2 tsp. Italian seasoning
generous pinch kosher salt

5 cup mixed greens of choice
3/4 cup feta cheese (or cheese of choice)
3/4 cup walnuts (or nuts of choice)
2 Tbsp. olive oil
2 tsp. Dijon mustard
3 tsp. maple syrup
3 tsp. lemon juice
pinch kosher salt
pinch pepper

Steps:

  • Heat oven to 400 degrees.
  • Peel 1 large butternut squash and cut into small cubes. Place the butternut squash cubes onto a baking sheet.
  • Drizzle the butternut squash with 2 Tbsp. olive oil. Sprinkle 1 tsp. smoked paprika, 1 tsp. garlic powder, 1 tsp. Italian seasonings, and a few generous pinches of salt and pepper on the squash. Toss squash in the oil and spices until evenly coated.
  • Place the pan in the oven and roast the butternut squash for 18-20 minutes. The squash should easily pierce with a fork when finished. Remove the pan from the oven, set aside, and allow to cool.
  • For The Dressing: Add 2 Tbsp. olive oil, 2 tsp. Dijon mustard, 3 tsp. maple syrup, 3 tsp. lemon juice, and a pinch of salt and pepper to a small bowl. Whisk until completely combined.
  • Place 1 package (4-5 cups) of mixed greens, dark leafy greens, or salad greens of your choice in a large bowl or on a serving platter. Drizzle as much or as little of the salad dressing onto the greens. Toss to coat completely.
  • To serve: Place the cooled butternut squash on top of the dressed greens. Sprinkle 3/4 cup (or so) of feta cheese and 3/4 cup (or so) of walnuts on top of the salad. Serve alongside roasted meat, as a side dish for a holiday party, or enjoy on its own.

1 small butternut squash (peeled, seeded, and cubed)
½ to 1 teaspoon extra-virgin olive oil
¼ teaspoon ground cumin
¼ teaspoon ground coriander
¼ teaspoon cinnamon
¼ teaspoon cayenne (less if sensitive to spice)
6 cups loose-packed spring mix greens
2 ounces goat cheese (torn into smaller pieces)
2 Medjool dates (pitted and diced)
¼ cup pomegranate seeds
¼ cup pistachios (crushed and toasted)
sea salt and freshly ground black pepper
5 tablespoons extra-virgin olive oil
2 tablespoons apple cider vinegar
1 tablespoon fresh lemon juice
1 Medjool date (pitted)
½ garlic clove
⅛ teaspoon ground cumin
sea salt
black pepper (to taste)
3 to 5 tablespoons water (as needed to blend)

Steps:

  • Preheat the oven to 425°F and line a large baking sheet with parchment paper. Place the butternut squash cubes on the sheet and drizzle with olive oil and pinches of sea salt and pepper. Toss to coat and spread evenly on the baking sheet. Roast for 30 to 35 minutes, or until tender and browned around the edges.
  • In a small bowl, stir together the cumin, coriander, cinnamon and cayenne. Set aside.
  • Make the Cider Date Dressing: In a blender, combine the olive oil, vinegar, lemon juice, date, garlic, cumin, salt, pepper, and 3 tablespoons of water. Add 1 to 2 more tablespoons of water as needed to blend.
  • Remove the butternut squash from the oven, let cool slightly, and, while warm, toss with the spice mixture.
  • Assemble the salad with the spring mix greens and half of the roasted squash. Drizzle with ⅓ of the dressing, toss lightly, then add the remaining squash, goat cheese, dates, pomegranates, and pistachios. Drizzle with more dressing as desired. Serve immediately.

1 red bell pepper, cut into 3/4-inch pieces
2 tablespoons extra virgin olive oil

1/4 small red onion, chopped
4 cups Baby Spinach
1 gala apples, cored and thinly sliced

I like salads to have a combination of cooked and raw, sweet and salty, soft and crunchy. Judging by the demands for the recipe, I think it was a winner!

3 tablespoons pine nuts
1 medium butternut squash
4 tablespoons (1/2 stick) butter
Kosher salt and freshly ground black pepper
1/4 cup freshly grated Parmesan, plus more if needed
1/4 cup olive oil
1 tablespoon balsamic vinegar
6 cups mixed salad greens

Steps:

  • Preheat the oven to 375 degrees F.
  • Put the pine nuts in a small skillet over low heat and slowly toast them, stirring, until they're golden brown and fragrant, about 2 minutes. Set aside off heat.
  • To prepare the butternut squash, cut off the top and bottom, then use a sharp knife or vegetable peeler to remove the hard skin. Cut the squash in half lengthwise and remove the seeds with a spoon. Slice the squash into sticks and then slice the sticks into cubes.
  • Meanwhile, melt the butter in a small skillet or saucepan over low heat. Skim off as much of the foam as you can. Put the squash in a bowl and pour in the melted butter. Sprinkle with salt and pepper and toss to combine.
  • Spread the squash out on a rimmed baking sheet and roast, shaking the baking sheet once or twice during roasting, 25 to 30 minutes. Crank up the heat to 400 degrees F and roast until the squash is sizzling and golden brown around the edges, another 15 minutes or so. Set aside to cool for 5 minutes, then add the Parmesan and toss together. Toss in the pine nuts.
  • Mix the olive oil with the balsamic in a bowl and sprinkle in a little salt and pepper. Put the salad greens in a serving bowl and toss with half the dressing. Add the squash mixture and lightly toss it in. Serve the extra dressing on the side. Top with additional Parmesan if desired.
