Yield Makes about 1 cup

Number Of Ingredients 7

2 tablespoons canola oil
3 medium yellow onions (about 1 1/2 pounds total), finely chopped (about 2 1/2 cups)
1/3 cup canned diced plum tomatoes with juice
1 teaspoon sugar
3 tablespoons plus 1 teaspoon cider vinegar
2 teaspoons coarse salt
Pinch of cayenne pepper

Steps:

  • Heat the oil in a medium skillet over medium-high heat. Add onions; cook, stirring occasionally, until beginning to soften, about 7 minutes. Reduce heat to medium. Add tomatoes; cook, stirring occasionally, 10 minutes.
  • Stir in sugar, vinegar, salt, and cayenne pepper. Cook, stirring occasionally, until onions are soft and mixture is shiny, about 20 minutes (if the onions begin to brown, reduce heat to medium-low). Serve warm or at room temperature.

In his book, "Koshersoul," the food historian Michael W. Twitty explores the varied cuisines of the global Jewish diaspora. Kachumbari, the Swahili word that means "pickle," can be traced to Kenya and other East African countries where the tomato and onion mix is served as a salad or relish. This dish exemplifies a tradition of hospitality: Appetizers or snacks - salatim in Israel, kemia in North Africa and mezze in the Middle East - are offered to house guests. After tasting the small plates, the visitors then decide if they would like to stay and enjoy the main meal. This deeply flavored kachumbari can be served with nearly any fish or other protein-based dish, and can also be offered alongside plantains, or with hummus and pita.

Number Of Ingredients 9

4 ripe but firm tomatoes, very thinly sliced
2 medium red onions, halved then very thinly sliced
1 carrot, peeled and sliced
1/2 cucumber, peeled and sliced
1 lemon, juiced (4 to 5 tablespoons)
1 tablespoon chrain (beet horseradish) or regular prepared horseradish
1/2 teaspoon red-pepper flakes
1/2 teaspoon garam masala or curry powder
Salt and freshly ground black pepper, to taste

Steps:

  • Place the sliced tomatoes, onions, carrot and cucumber in a bowl. Squeeze lemon juice over the mixture and add the horseradish. Sprinkle with the red-pepper flakes and garam masala, then season with salt and pepper. Toss together to mix.
  • Allow flavors to develop at room temperature for at least 30 minutes or up to 3 hours, then serve as a relish or salad.

8 medium ripe tomatoes, peeled and quartered
4 large yellow or white onions, peeled and quartered
Mix together in a small bowl
3/4 cup apple cider vinegar
3/4 cup hot water
3 tablespoons sugar
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground red pepper

Steps:

  • Add tomatoes and onion to nonreactive pot. Add the liquid with spices. Start cooking and continue over medium heat. Stir as it heats to break up onion slices and to keep from sticking to pan. As it heats, add salt and pepper and stir easily. You can taste the juice and if you want it hotter with pepper, add some. Cook until onions are tender. Don't overcook; it should take about 30 to 35 minutes. As soon as it cools, put in glass jars. Seal and keep in refrigerator.

Number Of Ingredients 9

2 1/2 pounds large unripe (green) tomatoes, cored, cut into 1/4-inch dice
2 red onions (1 pound total), cut into 1/4-inch dice (about 3 cups)
2 red bell peppers, seeded, cut into 1/4-inch dice (about 2 1/2 cups)
1/4 cup plus 1 1/2 teaspoons coarse kosher salt
2 cups distilled white vinegar
1 1/2 cups (packed) golden brown sugar
2 garlic cloves, minced
1 teaspoon whole coriander seeds
3/4 teaspoon whole aniseed

Steps:

  • Combine tomatoes, onions, peppers, and 1/4 cup coarse kosher salt in large glass bowl. Stir to mix. Cover and let stand in cool place at least 12 hours and up to 1 day, stirring occasionally.
  • Drain tomato mixture in large colander. Rinse with cold water; let drain well, at least 30 minutes. Using hands, squeeze any excess liquid from tomato mixture.
  • Combine tomato mixture, 1 1/2 teaspoons coarse salt, and next 5 ingredients in large pot. Stir over medium-high heat until sugar dissolves. Bring to boil. Reduce heat to medium-low; simmer until almost all liquid evaporates, stirring frequently, about 1 hour 10 minutes. Remove from heat.
  • Ladle mixture into 6 hot clean 1/2-pint glass canning jars, leaving 1/2-inch space at top of jars. Remove air bubbles. Wipe jar threads and rims with clean damp cloth. Cover with hot lids; apply screw bands. Process jars in pot of boiling water 10 minutes. Cool jars completely. Store in cool dark place up to 1 year.

This simple recipe makes one jar of fresh relish, which you can serve with steak or white fish

1kg diced, ripe on-the-vine plum tomatoes
2 diced red onions
150ml extra virgin olive oil
2 grated garlic cloves
3 tbsp small capers
3 tbsp chopped parsley
1 tbsp balsamic vinegar

Steps:

  • In a mixing bowl, toss together 1kg diced, ripe on-the-vine plum tomatoes, 2 diced red onions, 150ml extra virgin olive oil and 2 tsp flaky sea salt. Tip onto a baking tray and place under a hot grill for 5-10 mins or until charred.
  • Tip back into the bowl, stir in 2 grated garlic cloves and 3 tbsp small capers and leave to cool for 10 mins. Stir in 3 tbsp chopped parsley and 1 tbsp balsamic vinegar.

1 small red onion, finely chopped
225 g ripe tomatoes
1 small red chile, deseeded and finely chopped
1 garlic clove, crushed
1 tablespoon dark brown sugar
120 ml balsamic vinegar
salt & freshly ground black pepper

Steps:

  • Start off by skinning the tomatoes - put the tomatoes in a bowl and pour boiling water over them and leave for 1 minute and then drain them and slip off the skins.
  • In a food processor, add the onion, tomatoes, chilli and garlic and blend until finely chopped.
  • Place the mixture in a saucepan over low heat and add the sugar and vinegar.
  • Simmer very gently, without the lid on, for 2 hours, by then the mixture will have reduced to a thick sauce.
  • Stir frequently towards the end of cooking time so the sauce doesn't stick to the bottom of the pan.
  • Taste to check the seasoning - serve hot or cold.

1/3 cup red wine vinegar
2 cups red onions, chopped
4 cloves garlic, thinly sliced
1/2 cup fresh basil, chopped
1 tablespoon ground cumin
1 tablespoon coriander powder

2 teaspoons salt
1/4 teaspoon ground black pepper
1/3 cup olive oil

Steps:

  • Use fully ripened fresh tomatoes; core and chop coarsely.
  • In a saucepan, bring vinegar to a simmer.
  • Add onions and garlic; simmer until softened, 3 to 5 minutes; cool.
