2 1/2 tablespoons cornstarch, divided
1/4 teaspoon salt
3/4 lb lean trimmed beef strip sirloin (thinly sliced against the grain)
2 teaspoons canola oil
1 cup reduced-sodium chicken broth, divided
5 cups broccoli florets (about a 12 oz. bag)
1 tablespoon fresh minced gingerroot
2 teaspoons minced garlic
1/4 teaspoon red pepper flakes (to taste)
1/4 cup low sodium soy sauce
1/2 cup water

Steps:

  • Combine 2 tablespoons cornstarch with the salt. Add beef and toss to coat.
  • Heat oil in a wok or skillet over medium-high heat and add beef. Stir-fry about 4 minutes until lightly browned and cooked through. Transfer to bowl with slotted spoon and keep warm.
  • Add 1/2 cup broth to the pan and stir to loosen any bits of food on bottom. Add broccoli, cover and cook. Toss occasionally and sprinkle with water if necessary until broccoli is crisp-tender (about 3 minutes).
  • Add ginger, garlic and red pepper flakes and stir-fry for about 1 minute; until fragrant.
  • Stir together soy sauce, 1/2 cup broth, 1/2 tablespoon cornstarch and water in a cup until blended and then stir into pan.
  • Reduce heat to medium-low and bring to a simmer. Simmer about 1 minute until slightly thickened.
  • Return beef and juices to pan, toss to coat.
  • Serve over rice.

This classic Chinese recipe can be made in less time than it takes to order take-out. Stir-frying is all about layering flavor. Cooking the broccoli in the pan after browning the beef coats it with the flavorful caramelized bits from the pan bottom as it steams. Adding aromatics like ginger, garlic, red pepper flakes to the pan just before tossing all the ingredients together allows the flavors to really bloom and come together. Serve this stir-fry over rice or rice noodles, or spoon it inside large Bibb lettuce leaves for savory lettuce wraps. Leftovers are a next-day gift!

2 teaspoons fresh ginger, minced
2 scallions, minced
2 garlic cloves, minced
1/4 teaspoon red pepper flakes, crushed
2 tablespoons orange zest
1/2 lb sirloin steak, boneless and thinly sliced with no fat
2 cups broccoli, fresh
1 red bell pepper, chopped
2 tablespoons soy sauce, reduced sodium
2 tablespoons rice wine vinegar or 2 tablespoons white wine vinegar
1 teaspoon cornstarch
1 tablespoon water

Steps:

  • Heat oil in a large nonstick wok, set over medium-high heat. Add the ginger, scallions, and garlic; cook, tossing and stirring, until fragrant, about 30 seconds. Add red-pepper flakes and orange zest, cook 20 seconds longer.
  • Slip the sirloin strips in the pan and cook, stirring and tossing, until lightly browned, about 2 minutes. Add the broccoli and bell pepper; continue tossing and stirring until slightly softened but still crunchy, about 1 minute.
  • Pour in the soy sauce and vinegar and bring to a boil, stirring constantly. Add roux and cook, stirring, until thickened, about 15 seconds. Immediately remove from heat. Let stand 1 minute before serving.

I clipped this recipe from Taste of Home magazine several years ago and have found it to be the best-tasting easy beef and broccoli stir-fry. It is credited to Ruth Stahl. I often use charcoal chuck steak, which is very tender and lean. I also like that it doesn't call for any unusual ingredients.

3 tablespoons cornstarch, divided
1/2 cup water, plus
2 tablespoons water, divided
1/2 teaspoon garlic powder
1 lb boneless round steak or 1 lb charcoal chuck steak, cut into thin 3-inch strips
2 tablespoons vegetable oil, divided
4 cups broccoli florets
1 small onion, cut into wedges
1/3 cup reduced sodium soy sauce
2 tablespoons brown sugar
1 teaspoon ground ginger
hot cooked rice, for serving
toasted sesame seeds, for serving (optional)

Steps:

  • In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.
  • Add beef and toss.
  • In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm.
  • Stir-fry onion in remaining oil for 4-5 minutes until softened. Add the broccoli and cook for 3 minutes until the broccoli is tender but still crisp. Return beef to pan.
  • Combine soy sauce, brown sugar, ginger and remaining 1 tablespoon cornstarch and 1/2 cup water until smooth; add to the pan.
  • Cook and stir for 2 minutes.
  • Serve over rice and garnish with toasted sesame seeds (optional).

Beef and Broccoli is a favorite of mine. It's important to take your time, mix well and marinate for the full 3 hours. You wont be sorry!

Number Of Ingredients 11

3/4 lb beef, cut into very thin strips, pencil thin and no longer that 2 inches in length
3 cups broccoli florets, bite sized
2 garlic cloves, minced
2 tablespoons soy sauce (not lite)
2 1/2 tablespoons white sugar
1/2 teaspoon black pepper
1 egg white, beaten until frothy
1 tablespoon cornstarch
2 tablespoons sherry wine
1/4 cup oyster sauce
3 -4 tablespoons vegetable oil

Steps:

  • In a medium mixing bowl add together the beef strips and soy sauce.
  • Mix to be sure all the beef is coated.
  • Add the sugar and pepper, stirring for 3 minutes to be sure each piece is evenly coated and sugar is dissolving.
  • Add the whipped egg white and slowly stir in the cornstarch, again stirring for 3 minutes to make sure the beef is evenly coated.
  • You DO NOT want to see any sugar or cornstarch.
  • Cover and let stand in the fridge for 3 hours, stirring well after 1 and 1/2 hours.
  • Bring a large pot of water to boil.
  • Bring a wok to medium high heat.
  • Par boil the broccoli for 1 minute.
  • Drain in colander in sink.
  • Add 2 T. oil and garlic to wok and quickly"mush" around.
  • Stir fry the broccoli until tender crisp, around 5-6 minutes tops.
  • Remove broccoli to a bowl.
  • Add the remaining oil if needed and stir fry the meat until just under done.
  • Return broccoli to wok and stir.
  • Add the sherry and oyster sauce.
  • Stir fry for 1 minute making sure broccoli and beef is thoroughly coated with sauce.
  • Serve over hot white rice.

165 g beef steaks
1/4 onion
1/4 teaspoon dried ginger
1 tablespoon hoisin sauce
1 teaspoon soy sauce
1 tablespoon lemon juice
1 cup broccoli floret
3/4 cup rice (about 0.25 cup uncooked is 0.75 cup cooked)

Steps:

  • 1. Cook broccoli until tender.
  • 2. Cook rice.
  • 3. Cut steak into strips and stir fry using either a squirt of non-stick spray or else just enough water in the pan to stop the beef sticking.
  • 4. Add onion and ginger then cook for another minute or so.
  • 5. Add everything else (except the rice) and keep stirring until it is hot.
  • 6. Serve over rice.
