Heirloom tomatoes, peaches, and fresh mozzarella are layered and topped with a simple balsamic vinaigrette in this peach Caprese salad.

2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon flaked salt, divided
2 large heirloom tomatoes, thinly sliced
2 ripe peaches - halved, pitted, and sliced into half moons
6 leaves fresh basil
1 (8 ounce) ball fresh mozzarella, thinly sliced

Steps:

  • Whisk olive oil, balsamic vinegar, and 1 pinch flaked salt together in a bowl until dressing is smooth.
  • Alternate tomato slices, peach slices, basil leaves, and mozzarella slices in layers on a platter. Drizzle dressing over salad and sprinkle remaining flaked salt on top.

Tomato and Peach Salad with Lime-Balsamic Dressing image

This salad is overflowing with flavor and color. Best to use in-season tomatoes and peaches.

2 large tomatoes, sliced into rounds
2 large ripe peaches, peeled, pitted and sliced into rounds (see Tip)
1/4 large red onion, very thinly sliced, preferably with a mandolin
2 tablespoons chopped fresh cilantro, or more to taste
Red pepper flakes, to taste
Salt, to taste
Freshly ground black pepper, to taste
1 tablespoon lime olive oil (see Note)
1 tablespoon peach balsamic vinegar (see Note)
Fresh lime juice, to taste
Pinch sugar

Steps:

  • On a serving platter, arrange the tomato and peach slices in a circular pattern, alternating tomato and peach slices. Scatter red onion over the top. Sprinkle with cilantro and red pepper flakes. Season with salt and fresh ground pepper.
  • In a small mixing bowl, whisk together the oil, vinegar, lime juice and sugar. Season to taste with salt and pepper. Add more lime juice and/or sugar as needed.
  • Drizzle dressing evenly over top of salad just before serving.

1 large ripe tomato, peeled and diced
¼ sweet onion, very thinly sliced
1 green onion, chopped
¼ cup balsamic vinegar
2 tablespoons olive oil
2 (1 gram) packets saccharine-based sugar substitute (such as Sweet'N Low®)
salt and ground black pepper to taste

Steps:

  • Place watermelon cubes, tomato, sweet onion, and green onion into a salad bowl. In a separate bowl, whisk together the balsamic vinegar, olive oil, and sweetener until the sweetener has dissolved. Pour the dressing over the salad, and lightly toss; sprinkle with salt and black pepper to taste.

In case you couldn't tell, our farmer's market has had some seriously amazing peaches the last few weeks, so I've been doing a lot of experimenting with them. I made a quick salad dressing for my husband and myself the other day that I really loved. On the flip side, he wasn't a huge fan, but he doesn't like peaches too much so I count my opinion for more and I posted it anyway. (just don't tell him I said that!)

1 peach
1 tablespoon extra virgin olive oil (I have some basil olive oil that worked well for this)
1/2 tablespoon basil (fresh chopped works best but dried will do)
2 tablespoons apple cider vinegar
1 teaspoon celery salt (to taste)
1 teaspoon honey (depending on how sweet the peach is you may not need this. I didn't use it when I made mine, but I k)

Steps:

  • Mix together all of the ingredients except the peach.
  • Peel the skin off the peach by putting it in boiling water for about 30 seconds, then dunk it in cool water.
  • Slice the fruit, and mash it together to make a kind of paste. If you want a less chunky texture you can do this in a food processor or blender. I just squished it with a fork.
  • Mix the vinaigrette mixture into the peach until well combined and use as a salad dressing. :).
