GRANDMA'S VANILLA ICE CREAM



Grandma's Vanilla Ice Cream image

With summer on its way, Grandma's Homemade Ice Cream is a custard-style vanilla frozen treat the entire family will enjoy.

Number Of Ingredients 6

4 Tablespoons flour
3 ½ cups sugar
1 gallon milk
8 to 10 eggs (beaten)
Vanilla (to taste up to one Tablespoon)
1 pint half and half or heavy whipping cream

Steps:

  • Mix flour and sugar.
  • Put 1 quart of whole milk in saucepan on stove to warm.
  • When hot, add sugar mixture, stirring constantly until it starts to thicken.
  • Add beaten eggs to hot milk mixture, tempering the egg mixture first to prevent cooking the beaten eggs.
  • Cook, stirring constantly until mixture thickens like a custard.
  • Remove from heat and cool completely.
  • Once cooled, add vanilla to taste - up to 1 Tablespoon.
  • Add to ice cream freezer insert.
  • Add pint of cream or whole milk to about an inch from the top.
  • Freeze per the instructions for your ice cream freezer.
  • Eat right away or freeze to get a firmer texture.

This vanilla ice cream is everything you would want in a classic-rich and creamy with a pure, balanced flavor that can hold its own whether you serve it in a cone, with pie or as a base for candy or cookie mix-ins.

Number Of Ingredients 6

3 cups heavy cream
1 cup whole milk
3/4 cup sugar
1 tablespoon pure vanilla extract
Kosher salt
5 large egg yolks

Steps:

  • Whisk the cream, milk, sugar, vanilla and 1/2 teaspoon salt in a medium saucepan and bring to a simmer over medium heat. Beat the egg yolks in a medium bowl. Slowly whisk 1 cup of the hot cream mixture into the beaten yolks, then pour back into the saucepan, whisking, and return to medium heat. Cook, stirring constantly with a wooden spoon, until the mixture thickens, coats the spoon and reaches 180 degrees F on a thermometer, 6 to 8 minutes. Remove from the heat and strain the custard through a fine-mesh sieve into a large bowl or measuring cup; discard the solids. Stir often until the mixture cools to room temperature. Lightly press plastic wrap directly against the surface of the custard to prevent a skin from forming. Chill until cold, about 3 hours. (For faster chilling, set the bowl of custard in a bowl of ice water and stir until cold.)
  • Freeze the mixture in an ice cream machine according to the manufacturer's instructions. (Take care not to over-churn the ice cream or it can have a grainy texture.) Place the ice cream in the freezer to set up for at least 1 hour. Serve.

1-1/2 cups sugar
1/4 cup all-purpose flour
1/2 teaspoon salt
4 cups whole milk
4 large eggs, lightly beaten
2 pints heavy whipping cream
3 tablespoons vanilla extract

Steps:

  • In a large heavy saucepan, combine sugar, flour and salt. Gradually add milk until smooth. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from heat., In a small bowl, whisk a small amount of hot mixture into eggs; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Remove from heat immediately., Quickly transfer to a large bowl; place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes. Press plastic wrap onto surface of custard. Refrigerate for several hours or overnight., Stir cream and vanilla into custard. Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions. (Refrigerate remaining mixture until ready to freeze.) Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze 2-4 hours or until firm. Repeat with remaining ice cream mixture.

After the ice cream is made, transfer to an airtight container. Cover tightly and freeze until ready to serve. When ready to serve, make chocolate curls using a vegetable peeler. Serve ice cream garnished with curls.

1 (4.6 ounce) package cook-and-serve vanilla pudding mix
2 cups sugar
3 eggs, beaten
½ teaspoon vanilla extract, or to taste
2 quarts milk

Steps:

  • Combine evaporated milk and pudding mix in a saucepan over medium-low heat. Stir and simmer until thickened, about 10 minutes.
  • Remove saucepan from heat. Stir in sugar, eggs, and vanilla extract and pour mixture into an ice cream maker. Pour milk to the fill line and stir. Freeze according to manufacturer's instructions, about 20 minutes. Transfer to an airtight container and freeze until firm, about 4 hours.

5 eggs
3 cups sugar
2 tablespoons flour
2 (12 ounce) cans evaporated milk
1 tablespoon vanilla
whole milk

Steps:

  • Beat egg yolks with half of sugar and all of flour. Mix until creamy. Add evaporated milk then add rest of sugar and vanilla.
  • Beat egg whites until fairly stiff. Fold into above mixture. Put in ice cream freezer and add whole milk, leaving about 1 1/2 inches at top of freezer.
  • Freeze in ice cream freezer. Makes 1 gallon.

This is our favorite homemade ice cream. From the Rival ice cream manual. Be patient while adding the small bit of milk to the eggs. The slower you can add the eggs to the hot mixture the easier it will be to thicken. Time does NOT include 2 hour chilling time.

3/4 cup sugar
1/8 teaspoon salt
1 1/4 cups whole milk
3 eggs, beaten
1 1/2 cups whipping cream
1 tablespoon pure vanilla extract

Steps:

  • Combine sugar, salt and milk in saucepan and cook over medium heat, stirring occasionally until mixture almost boils.
  • Reduce to low.
  • Gradually stir about 1/2 cup of hot mil into the beaten eggs.
  • Add eggs to remaining hot mixture.
  • Cook over low heat, stirring constantly until slightly thickened, about 5 minute.
  • Remove from heat and refrigerate at least 2 hours.
  • Combine whipping cream, vanilla and chilled mixture, stirring with a wire whisk to combine.
  • Pour into canister and churn.

  • Beat egg yolks and sugar until well blended. Pour mixture into the top of a double boiler over simmering water, and stir in half-and-half. Cook until thickened; if necessary, microwave for 1 minute or until mixture thickens. Remove from heat and cool. Stir in whipping cream and vanilla, and then pour into the bowl of an ice cream freezer. Process according to manufacturer's instructions until firm.
