½ teaspoon salt
3 teaspoons baking powder
1 ½ cups superfine sugar
½ cup milk
½ cup orange juice
½ cup vegetable oil
3 eggs, beaten

6 tablespoons butter, softened
2 cups confectioners' sugar
2 tablespoons orange juice
1 teaspoon vanilla extract
1 teaspoon grated orange zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch round cake pans.
  • In a measuring cup, combine milk, 1/2 cup orange juice, oil, beaten eggs, and 1 1/2 teaspoon orange zest. Set aside.
  • Sift flour, salt and baking powder into a large bowl. Mix in sugar. Make a well in the center and pour in the milk mixture. Stir until thoroughly combined.
  • Divide batter into prepared pans. Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
  • To make Orange Butter Frosting: Cream butter until smooth. Gradually beat in confectioners' sugar. Beat until light and fluffy. Beat in 2 tablespoons orange juice to bring to spreading consistency. Stir in vanilla and 1 teaspoon orange zest.

Bundt cakes are super easy to make. Made this recipe up myself. I used the same ratios of wet to dry ingredients from "Death by Chocolate" recipe. Worked also well with Blueberry, Lemon, and Raspberry variations. Will post those separately if anybody wants them.

4 eggs
1 cup sour cream
2 oranges (zest or grate the Oranges, squeeze the juice)
orange juice (combined with squeezed juice to make 1/2 cup)
1/2 cup canola oil or 1/2 cup vegetable oil
1 (18 ounce) package white cake mix
red food coloring
yellow food coloring (follow package instructions to make orange)
1 (1 ounce) package instant vanilla pudding (small or large size)
1 tablespoon confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F.
  • Beat eggs, sour cream, orange juice, and oil together in a large bowl until thoroughly mixed.
  • Add cake mix, pudding mix, food coloring and orange zest.
  • Beat until smooth.
  • Spray Bundt pan with vegetalbe oil spray (PAM).
  • Pour into Bundt or tube pan and bake for 1 hour.
  • When cool, cover pan with a dinner plate. Invert to remove cake from pan.
  • Sift powdered sugar on top of cake.

1 (15-ounce) can mandarin oranges in light syrup
1 (16-ounce) box angel food cake mix
1 teaspoon orange extract
1 tablespoon orange zest
1 (8-ounce) container whipped topping

Steps:

  • Preheat the oven to 350 degrees F. Move a rack to the bottom position.
  • Drain the mandarin oranges and reserve the liquid. Measure the reserved liquid and add enough water to equal 1 1/4 cups. Measure out 1 cup mandarin oranges, reserving the remaining oranges for garnish.
  • In a large mixing bowl, combine angel food cake mix, mandarin water, orange extract and orange zest. With an electric mixer, beat on low speed for 30 seconds. Scrape down sides of bowl and beat on medium for 1 minute. Pour into angel food tube pan. Carefully place 1 cup of orange segments around top of cake batter. Bake for 35 to 45 minutes, or until top of cake is cracked, dark golden brown, and not sticky.
  • Remove cake from oven and invert onto glass bottle to cool.
  • Frost cake with whipped topping and garnish with reserved orange segments.
  • Cook's Note: Excessive stirring will cause whipped topping to become watery.

I have tried other sponge cake recipes and they always flop for me. My mother use to make this when we were kids. She doubled the ingredients and made it in one of those large oven trays that often come with the oven. It never lasted long enough to come out of the tray! As a variation, you could add lemon or orange rind to the mix, or even granadilla seeds.

300 ml flour
2 teaspoons baking powder (level spoons)

  • Grease 2 16cm tins.
  • Put all ingredients into a bowl and beat slowly for 3 minutes.

3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/4 lb unsalted butter, room temperature
1 1/2 cups granulated sugar
3 eggs, room temperature
1 cup orange juice
2 tablespoons orange zest
4 tablespoons unsalted butter
1/4 cup orange juice
2 tablespoons orange zest
3 cups powdered sugar

Steps:

  • Preheat the oven to 375 degrees F, then grease & flour two 9" round cake pans.
  • Sift or whisk together the flour, baking powder & salt, then set aside.
  • In a large mixing bowl, cream the butter, then slowly add the sugar, blending well.
  • Add the eggs one at a time, beating well after each is added.
  • In another bowl, mix together the orange juice & zest.
  • To this orange mixture, alternate adding 1/2 the dry mixture, then 1/2 the liquid mixture, & repeat, blending well.
  • Add this final orange mixture to the creamed butter mixture & blend well.
  • Pour the batter into the prepared cake pans & bake for 30 minutes.
  • Cool in the pans on a wire rack for 10 minutes, then remove from the pans & cool completely.
  • For the frosting, melt the butter, then combine it with the orange juice & zest, beating well.
  • Slowly add the powdered sugar & beat well.
  • Place one cake layer upside down on a serving plate &, using less than 1/2 of the frosting, frost the first layer, staying at least 1 1/2 inches from the edge.
  • Put the second layer upside right on the bottom layer, pushing down lightly to secure it.
  • Frost the top of the cake, allowing some of the frosting to run down the sides.
