- Place the potatoes and onion into a bowl, and stir in eggs, salt, and flour as needed to make the mixture hold together. With wet hands, scoop up about 1/3 cup of the mixture per patty, and form into flat round or oval shapes.
- Heat the vegetable oil in a large skillet over medium heat until it shimmers, and gently place the patties into the hot oil. Fry until the bottoms are golden brown and crisp, 5 to 8 minutes, then flip with a spatula and fry the other side until golden.
- Line a colander or strainer with 2 paper towels, and drain the cooked latkes in the colander. Serve hot.

LATKES
Whip these potato cakes up in the food processor, fry them and then freeze ahead for super easy food on the day you need them.

Steps:
- Push the potatoes through the fine grater disc of the food processor.
- Remove and drain in a sieve, pushing well to get out as much liquid as you can.
- Fit the double-bladed knife to the processor and put in the onion, eggs, salt, pepper and 2 tbsp flour.
- Process briefly, add the grated potatoes and give another pulse or two until the mixture is pulpy but not puréed.
- Add more flour if it's at all runny as opposed to just a sticky, thick mess.
- Fry the latkes in lumps of about 1 tbsp each in a heavy frying pan with hot oil.
- The oil should be about 1 cm deep and it should take 3-5 minutes a side or even less.
- Flatten them slightly when you turn them over.
- If making ahead, at this point you can spread the latkes out on a baking sheet and let cool.
- Keep overnight in the fridge or freeze and when you are ready to eat them cook in a 200 C oven.
- It will take 5-7 minutes if they're from the fridge or a bit longer if they're frozen.
- When ready to serve, top with a little smoked salmon and a dollop of creme fraiche and a sprig of dill.

LAURA'S POTATO LATKES RECIPE BY TASTY
Matt's mom, Laura, shows him how to make their family's most cherished recipe: latkes. She teaches him that just 4 simple ingredients can transform into a lacy, crispy and delicious side dish. Her secret is incorporating the leftover potato starch that remains in the bottom of the bowl after grating the potatoes.

- Peel the potatoes, adding them to a large bowl filled with water as you work to prevent browning.
- Dry the potatoes, then shred on the large holes of a box grater into a large. Shred the onion into the same bowl on the small holes of the box grater.
- Transfer the potato mixture to a nut milk bag or a clean kitchen towel and squeeze tightly over the bowl to wring out any excess liquid. Set the liquid aside to let the starch settle to the bottom of the bowl, then carefully pour off the liquid on top, leaving the potato starch in the bottom of the bowl.
- In a clean large bowl, combine the shredded potatoes and onions, potato starch, 1 egg, salt, and pepper and gently mix to combine. If the mixture seems too dry and crumbly, add another egg. Add 1 tablespoon matzo ball mix and stir to incorporate, adding up to 1 tablespoon more matzo ball mix if the mixture isn't holding together.
- Pour the oil into a large pan to reach a depth of ¼ inch. Heat over medium heat. Using a 2-tablespoon cookie scoop, add the potato mixture to the pan, gently pressing down to the desired thickness. Add another scoop or two of the potato mixture, being careful not to overcrowd the pan. Cook for 3-4 minutes until the edges begin to crisp and the bottom is golden brown. Carefully flip the latkes and cook for another 3-4 minutes, until golden brown on the other side. Transfer to a wire rack and season with salt. Repeat with the remaining latkes.
- Serve with applesauce and sour cream.

CLASSIC POTATO LATKES
Serve these potato latkes with apple sauce, or smoked salmon with a dollop of soured cream. Traditionally made for Hanukkah, they're great all year round

- Coarsley grate the potatoes and onion into a large bowl, or use a food processor with a coarse grating blade. Leave the mixture to rest for about 15 mins so the liquid releases from the onions and potatoes. Carefully drain off the liquid for about 30 mins until the mixture is dry, then put in a cheese cloth and squeeze out the remaining liquid.
- Add the eggs, flour, 1 tsp sea salt and pepper, and mix well. Pour the oil into the pan so that it is 2-3cm deep. Set over a medium heat for a few minutes until it ripples.
- Carefully spoon in the mixture to the size you want - 2 tbsp for large latkes or 1 tbsp for small. Fry them in batches to avoid overcrowding the pan, and cook on each side until browned for 2 mins. Remove to a plate lined with kitchen paper, then season with a sprinkling of salt. Serve with the soured cream and smoked salmon, finished with a sprinkling of chives, or just apple sauce - both are traditional.

PERFECT POTATO LATKES

- In a food processor or through a salad shooter, finely grate peeled potatoes and onion. The faster the grating the less liquid that will come out.
- Add flour and mix well.
- Line a sieve with cheesecloth and transfer potatoes and onion to the sieve.
- Set sieve over a bowl, twist the cheesecloth into a pouch, and squeeze out as much moisture as you can.
- Let the mixture drain at least 15 minutes.
- After 15 minutes, pour off liquid from the bowl, but leave the white potato starch that settles on the bottom of the bowl.
- To the starch, add the eggs.
- Return drained potato-and-onion mixture and combine well.
- Return this entire mixture to the sieve and set the sieve over a bowl. Your latke mixture will continue to weep while you're cooking. This is normal, but you don't want any of this moisture; it'll turn your potatoes red.
- Preheat oven to 200 degrees. Line a baking sheet with paper towels.
- In a large skillet, heat 1/4 inch of oil over medium-high heat until hot.
- Take about 2 tablespoons worth of the mixture into your hands and press them together to make a thin cake.
- Pat lightly in flour.
- Drop this pressed cake into the oil and fry until brown on both sides, 3 to 4 minutes per side; latkes should be golden and crisp on both sides.
- Eat right away or keep warm in oven.
- Serve with apple sauce or sour cream.

LATKES (POTATO PANCAKES)
An adaptation of my mother's recipe, with techniques from Cook's Illustrated. Serve with applesauce or sour cream

Steps:
- Shred potatoes, using coarse shredder blade of food processor. Transfer half the potatoes to a mesh sieve set over a medium bowl.
- Change food processor to steel chopping blade. Add onions to potatoes and process until coarsely chopped (about 1/8" chunks), 5-6 one-second pulses.
- Move potato-onion mixture to sieve and combine with shredded potato. Squeeze fistfuls of this mixture to remove as much liquid as possible; transfer to a dry bowl. Let remaining liquid sit in bowl until starch settles to bottom, then drain off the clear liquid, leaving the starch behind.
- Beat eggs, salt and pepper into starch, then add dry potato-onion mixture and fold together thoroughly. Add matzo meal until mixture is stiff enough to form patties.
- Pour oil into 12" saute pan until it is 1/4" deep and heat over medium-high heat until shimmering but not smoking. Take 1/4 cup of potato mixture, press into 1/2"-thick disc and place in oil; press gently with spatula. Repeat until there are 5 latkes in pan.
- Adjust heat to keep edges of pancakes bubbling; fry until golden brown, about 3 minutes. Turn over and fry until golden brown all over, about 3 minutes more. Transfer to a triple layer of paper towels on a sheet pan. When oil is shimmering again, repeat. After every two batches, discard the oil and start over with fresh oil; continue this cycle until all the latkes are cooked.
- Serve hot with sour cream or applesauce. Latkes may be cooled to room temperature and held up to four hours; to reheat place on a hot cookie sheet in a 375F oven for about 10 minutes, turning once, until hot and crisp. To freeze, place in a single layer on a cookie sheet and freeze until solid, then transfer to a zip-top freezer bag; reheat in a 375F oven until hot and crisp, about 8-10 minutes per side.
