Pasta with Fresh Tomato Sauce image

Time 25m

Number Of Ingredients 8

2 1/4 pounds unrefrigerated ripe tomatoes (preferably plum)

1 tablespoon flat-leaf parsley
1 tablespoon chopped garlic (from 2 garlic cloves), plus more if desired

SPAGHETTI WITH FRESH TOMATO AND BASIL SAUCE

Spaghetti With Fresh Tomato and Basil Sauce image

This recipe came to The Times in 2003 from the chef Scott Conant, who was then cooking at his restaurant L'Impero in Manhattan. It is simple, classic Italian fare that makes the most of summer's tomatoes, but you can also make it with hothouse offerings and it will be delicious.

Provided by The New York Times

Categories     dinner, weekday, pastas, main course

Time 40m

Yield 4 servings

Number Of Ingredients 9

3 pounds fresh plum tomatoes, blanched, peeled, seeded and quartered
3 ounces olive oil
Salt and freshly ground pepper to taste
1 pinch crushed red-pepper flakes
1 pound dry spaghetti
2 ounces extra-virgin olive oil
1 tablespoon butter
6 leaves fresh basil, shredded
2 tablespoons freshly grated Parmigiano-Reggiano cheese

Steps:

  • Blanch the tomatoes and remove the skins. Cut in half lengthwise and scoop out the seeds. Cut the tomatoes crosswise. Set aside in a bowl.
  • Heat 3 ounces olive oil in a large, deep skillet over medium-high heat until it smokes slightly. Add tomatoes, salt, pepper and crushed red pepper. Since the tomatoes will reduce and the salt will be concentrated, it is better to season initially with a lighter hand.
  • Chop the tomatoes with a potato masher until they are in fine chunks and all their liquid is released. Be sure they are chopped and crushed fine, for a semichunky sauce. Simmer for 25 minutes over medium heat.
  • While the sauce simmers, heat the water for the pasta. Cook the spaghetti in salted water about half of the way cooked. Drain, reserving some of the water.
  • Taste the sauce and adjust the seasoning if necessary. Add the pasta to the sauce and cook over medium-high heat until all the liquid is absorbed and the pasta is al dente. If the sauce is over-reduced, use the pasta cooking liquid to adjust it.
  • At the last moment, remove the pan from the heat; add the extra-virgin olive oil, butter, basil and cheese. Mix thoroughly until the pasta is an orangy color. Taste again and adjust the salt if necessary. Remove to a platter. Serve.

FRESH TOMATO, BASIL, AND GARLIC SAUCE OVER ANGEL HAIR PASTA

Fresh Tomato, Basil, and Garlic Sauce over Angel Hair Pasta image

Provided by Food Network

Categories     main-dish

Time 48m

Yield 4 to 6 servings

Number Of Ingredients 11

2 pounds ripe tomatoes
3 tablespoons extra-virgin olive oil
1 red onion, finely chopped
3 garlic cloves, thinly sliced
1 tablespoon fresh thyme leaves
1 oregano sprig
Pinch chili flakes
1 teaspoon sugar
1 pound dried angel hair pasta
1/4 cup grated Parmesan, plus more for garnish
1/4 cup chiffonade basil, plus whole sprigs for garnish

Steps:

  • Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
  • Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
  • Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

CLASSIC TOMATO SPAGHETTI

Classic tomato spaghetti image

A great introduction to pasta for kids - loads of fun to eat, and a brilliant base for adding all kinds of other fresh ingredients.

Provided by Jamie Oliver

Categories     Cheap & cheerful     Dinner Party     Father's day     Italian     Tomato     Cheap & cheerful     Lunch & dinner recipes

Time 1h15m

Yield 8

Number Of Ingredients 8

1 bunch of fresh basil
1 medium onion
2 cloves of garlic
1 kg ripe tomatoes, or 2 x 400g tins of quality chopped tomatoes
olive oil
1 tablespoon red wine or balsamic vinegar
480 g dried wholewheat spaghetti
15 g Parmesan cheese

Steps:

  • Pick the basil leaves onto a chopping board (reserving a few baby leaves to garnish), then roughly chop the remaining leaves and finely chop the stalks.
  • Peel and finely slice the onion and garlic. If using fresh, cut the tomatoes in half, then roughly chop them or carefully open the tins of tomatoes.
  • Put a saucepan on a medium heat and add 1 tablespoon of olive oil and the onion, then cook for around 7 minutes, or until soft and lightly golden.
  • Stir in the garlic and basil stalks for a few minutes, then add the fresh or tinned tomatoes and the vinegar.
  • Season with a tiny pinch of salt and pepper, then continue cooking for around 15 minutes, stirring occasionally.
  • Stir in the chopped basil leaves, then reduce to low and leave to tick away. Meanwhile...
  • Carefully fill a large pot three-quarters of the way up with boiling water, add a tiny pinch of salt and bring back to the boil.
  • Add the spaghetti and cook according to packet instructions - you want to cook your pasta until it is al dente. This translates as 'to the tooth' and means that it should be soft enough to eat, but still have a bit of a bite and firmness to it. Use the timings on the packet instructions as a guide, but try some just before the time is up to make sure it's perfectly cooked.
  • Once the pasta is done, ladle out and reserve a cup of the cooking water and keep it to one side, then drain in a colander over the sink and tip the spaghetti back into the pot.
  • Stir the spaghetti into the sauce, adding a splash of the pasta water to loosen, if needed.
  • Serve with the reserved basil leaves sprinkled over the top and use a microplane to finely grate the Parmesan cheese, then sprinkle over.

1.5 lb boneless chicken breast pieces
Kosher salt
3/4 tsp black pepper
1 tsp dry oregano
1/2 tsp ground corinader
1/2 tsp paprika
1/4 tsp ground nutmeg
Extra virgin olive oil (see our olive oil options here)
1/4 cup water
1 lemon, juice of
1 lb spaghetti
1/2 tsp crushed red pepper flakes
Extra virgin olive oil (see our olive oil options here)
2.5 lb grape or cherry tomatoes, halved (you can leave some whole)
7 garlic cloves, minced
7-8 green onions (both white and green parts), trimmed and finely chopped
1/2 cup dry white wine
1 lemon, juice of
salt and pepper, to taste
20 large basil leaves, roughly torn
Freshly grated Parmesan
2 tbsp toasted pine nuts, for garnish (optional)

Steps:

  • Preheat oven to 400 degrees F.
  • Pat chicken breasts dry and season with kosher salt and black pepper. In a small bowl, mix together the oregano, coriander, paprika and nutmeg. Apply the spice mixture to chicken breasts on both sides.
  • In an oven-safe skillet, heat 2 tbsp extra virgin olive oil until shimmering but not smoking. Add chicken and brown deeply on both sides (about 4 to 5 minutes in total) Turn heat off. Add 1/4 cup water and lemon juice.
  • Transfer chicken to the 400 degrees F-heated oven. Bake for 20 to 25 minutes, turning over once. (Chicken is ready when internal temperature in its thickest part reads 165 degrees F. )
  • While chicken is baking, cook spaghetti according to package. Mine took about 9 minutes in boiling water with a dash of salt. Drain in a large colander. Set aside briefly.
  • In a large heavy cooking skillet, heat 1/2 cup olive oil. Stir in crushed red pepper flakes, tomatoes, garlic, and chopped green onions. Season with kosher salt and pepper. Cook for 5 to 7 minutes on medium-high. Now add white wine and lemon juice. Bring to a boil, allowing the sauce to reduce a little, then reduce heat to medium, cover and let simmer for 7-10 minutes or until tomatoes sofetn and turn a nice rusty orange.
  • Now, add cooked spaghetti to the tomato mixture and stir to combine. When pasta heats through, toss in the basil leaves, Parmesigiano Reggiano, and pine nuts (if you choose).
  • Transfer spaghetti to serving bowls and top with the baked chicken breasts. Enjoy!

SPAGHETTI WITH FRESH TOMATO-BASIL SAUCE

Spaghetti with Fresh Tomato-Basil Sauce image

Making marinara sauce with fresh tomatoes is a game-changer. Our secret to infusing it with big flavor? Simmering with sprigs of basil, then finishing with Parmesan and pasta water.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains

Time 30m

Yield Serves 4 to 6

Number Of Ingredients 7

Kosher salt and freshly ground pepper
12 ounces long pasta, such as spaghetti or linguine
1/4 cup extra-virgin olive oil, plus more for serving
4 cloves garlic, minced (2 tablespoons)
2 pounds beefsteak tomatoes, or a combination of beefsteak, heirloom, and Campari tomatoes, grated on a box grater (3 cups)
2 basil sprigs, plus fresh leaves for serving
1 ounce Parmigiano-Reggiano, grated (1/2 cup packed), plus more for serving

Steps:

  • Bring a large pot of salted water to a boil. Add pasta and cook until slightly less than al dente, about 2 minutes less than package directions. Reserve 1 cup pasta water, then drain.
  • Meanwhile, heat oil and garlic in a large straight-sided skillet over medium-high until just sizzling, about 30 seconds. Add tomatoes and basil sprigs; season with salt and pepper. Bring to a boil, then reduce heat to medium and simmer until reduced to about 2 cups, 8 to 10 minutes. Discard basil.
  • Add pasta and 1/4 cup pasta water; cook, stirring, until pasta is cooked through, 1 to 2 minutes. Remove from heat. Add cheese and continue stirring and shaking pan, adding more pasta water as needed to create a creamy sauce. Serve, sprinkled with more cheese, basil leaves, and pepper, and drizzled with oil.

SPAGHETTI WITH TOMATO AND BASIL

Spaghetti with Tomato and Basil image

Provided by Scott Conant

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 8

1/3 cup extra-virgin olive oil
20 ripe plum tomatoes, peeled and seeded
Pinch crushed red pepper
Kosher salt and freshly ground black pepper
6 fresh basil leaves, chiffonade
1 pound spaghetti
1 tablespoon unsalted butter
1-ounce freshly grated Parmigiano-Reggiano, (about 2 tablespoons)

Steps:

  • In a wide pan over medium-high heat, heat 1/3 cup of olive oil until quite hot. Add the tomatoes, red pepper flakes, and season lightly with the salt and pepper. (I always start with a light hand with the salt and pepper because as the tomatoes reduce, the salt will become concentrated.) Using a potato masher, mash the tomatoes finely. (This will be easier to do as the tomatoes begin to heat up.) Cook the tomatoes for 20 to 25 minutes, until the tomatoes are tender and the sauce has thickened.
  • Meanwhile, stack and roll the basil leaves into a cylinder and cut thinly crosswise into a chiffonade.
  • Bring a large pot of amply salted water to a boil. Cook the spaghetti until just shy of al dente. Reserve a little of the pasta cooking water. Add the pasta to the sauce and cook over medium-high heat, gently tossing the pasta and the sauce together with a couple of wooden spoons and a lot of exaggerated movement (you can even shake the pan) until the pasta is just tender and the sauce, if any oil had separated from it, now looks cohesive. (If the sauce seems too thick, add a little pasta cooking liquid to adjust it.) Take the pan off of the heat and toss the butter, basil and cheese with the pasta in the same manner (the pasta should take on an orange hue) and serve immediately.
  • Cook's Note: Here is a good tip for peeling and seeding tomatoes: Bring a large pot of water to a boil. Have a large bowl of ice water nearby. Cut a small shallow X on the bottom of each tomato. Ease about 5 tomatoes into the pot and cook for about 15 seconds, and then promptly move them to the ice water. (Do this with the remaining tomatoes.) Pull off the skin with the tip of a paring knife. If the skin sticks, try a vegetable peeler using a gentle sawing motion. Cut the tomatoes in half and use your finger to flick out the seeds.

SPAGHETTI WITH FRESH TOMATO SAUCE

Spaghetti with Fresh Tomato Sauce image

The freshest of tomato sauce recipes, made with barely cooked tomatoes, basil and seasonings. This simple weeknight meal comes together in no time! Recipe yields 2 large (as in, restaurant-sized) portions or 4 more reasonable servings.

Provided by Cookie and Kate

Categories     Entree

Time 25m

Number Of Ingredients 10

1 1/2 pounds ripe tomatoes
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon sugar, optional
Freshly ground black pepper, to taste
1 very small garlic clove (or 1/2 medium clove), pressed or minced
1/2 pound whole grain thin spaghetti or angel-hair pasta or rotini/fusilli or penne
Optional but recommended: 1/2 cup freshly grated Parmesan
1/4 cup chopped fresh basil

Steps:

  • Core and coarsely chop two-thirds of the tomatoes. Halve the remaining tomatoes down the middle and discard the tough top part where the tomatoes met the stem, if it exists. Rub the cut sides of the tomatoes against the large holes of a box grater set in a large bowl. Leave the tomato pulp in the bowl and discard the skin.
  • Add the chopped tomatoes, olive oil, lemon juice, salt, sugar, several twists of freshly ground black pepper and the pressed garlic to the bowl. Mix well. Let the mixture marinate while you cook the pasta.
  • Bring a large pot of salted water to boil and then cook the pasta just until al dente, according to package directions. Reserve about a cup of the pasta cooking water before draining the pasta.
  • Drain the pasta, then immediately return it to the pot. Pour in all of the tomato sauce and a small splash (about 1/4 cup) of the pasta cooking water. Cook over medium-low heat for about 1 to 2 minutes, tossing often (gentle now!), just long enough for the tomatoes to soften a bit and for the starchy tomato water to coat the pasta.
  • Remove from heat and toss with (optional) Parmesan and (mandatory) basil. Serve immediately.

PASTA WITH FRESH CHERRY TOMATO, GARLIC, AND BASIL SAUCE

Pasta with Fresh Cherry Tomato, Garlic, and Basil Sauce image

This fresh and light entrée is surprisingly satisfying thanks to fiber-filled gluten-free pasta and the delicious combination of juicy, ripe tomatoes, herbs, and salty cheese. Tossing the hot pasta with some of the cheese before topping it with sauce is the key to ensuring as many noodles as possible are coated with cheesy goodness throughout.

Provided by Marianne Williams

Time 15m

Yield Serves 6 (serving size: about 1 1/2 cups pasta, 3/4 cup tomato mixture)

Number Of Ingredients 9

1 pound uncooked chickpea cavatappi pasta (such as Banza)
2 ounces Parmesan cheese, grated (about 1/2 cup), divided
1/3 cup olive oil
3 pt. multi-colored cherry tomatoes
4 garlic cloves, thinly sliced
4 basil sprigs, plus 2 Tbsp. torn leaves for garnish
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon granulated sugar

Steps:

  • Cook pasta according to package directions, omitting salt and fat; drain, reserving 1/2 cup cooking water. Add pasta to a large bowl, and toss with 2 tablespoons of the Parmesan cheese. Set aside.
  • Heat olive oil in a large high-sided skillet over medium-high. Add tomatoes, garlic, basil sprigs, salt, and pepper; cook, stirring occasionally, until tomatoes have started to burst and release their juices, 6 to 8 minutes. Remove and discard basil sprigs. Reduce heat to medium-low, and stir in sugar and 1/4 cup pasta water (Add up to 1/4 cup more cooking water to reach desired consistency; sauce should be loose enough to cover the pasta, but thick enough to cling a bit.) Serve warm pasta topped with tomato sauce, and sprinkle each serving with 1 tablespoon Parmesan cheese. Garnish with torn basil.

Swapping spaghetti squash for pasta is a great way to cut back on carbs and calories in this saucy vegan dinner. Here, we have tossed the squash with a simple fresh tomato sauce. Jazz up the sauce with crushed red pepper flakes, Kalamata olives and/or capers, if you like.

Time 1h

Number Of Ingredients 9

1 medium spaghetti squash (4-5 pounds), cut in half, seeds removed
3 tablespoons extra-virgin olive oil
⅔ cup chopped onion
4 garlic cloves, minced
2 pounds ripe tomatoes, diced (about 4 cups; save juices)
¼ cup vermouth, dry red wine or dry white wine
½ teaspoon ground pepper
¼ teaspoon salt
8-10 fresh basil leaves, torn

Steps:

  • Preheat oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
  • Place spaghetti squash halves, cut-side down, on the prepared baking sheet. Bake until the squash is tender when pierced with a knife, 40 to 50 minutes.
  • Meanwhile, heat oil in a large skillet over medium-high heat. Add onion and cook, stirring often, until fragrant and starting to soften, 2 to 3 minutes. Reduce heat to medium. Add garlic and continue cooking until golden, about 2 minutes. Add tomatoes and their juices. Increase heat to medium-high. Add vermouth (or wine) and cook, stirring occasionally, until the tomatoes begin to break down, 4 to 5 minutes. Stir in pepper and salt. Reduce heat to low and simmer for 5 minutes. Remove from heat and cover.
  • When the squash is cool enough to handle, use a fork to scrape the flesh from the shell; add it to the tomato sauce. Stir in basil.

  • Place a large pot of water over high heat and bring to a boil. Prepare an ice bath. Core the tomatoes with a paring knife and score the bottom of each tomato with an “X”. When the water is boiling, place the tomatoes in the pot and leave for 15 to 30 seconds, until the skins begin to pull away from the flesh. Remove from the water and transfer to the ice bath. When cool, peel the skin with a paring knife.
  • Cut the tomatoes in half and remove the seeds with your fingers, reserving the juice and seeds.
  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the seeded tomatoes to the pot with a pinch of salt and red pepper flakes. Cook the tomatoes for about 5 minutes, until they begin to soften. When tender, begin smashing with a potato masher. Strain the reserved juices into the pot, discarding the seeds. Add the canned tomato puree and fresh basil leaves and cook, stirring occasionally, for 30 to 45 minutes. Taste for seasonings and adjust as necessary.
  • Also, prepare the basil-garlic oil: Heat the olive oil with the garlic cloves, basil and red pepper flakes over medium-low heat. Cook for 6 to 8 minutes, until the garlic begins to turn lightly golden. Strain the oil and add to the tomato mixture at the end of the cooking time.

  • Use a sharp vegetable peeler and with a gentle, back and forth sawing motion, peel the tomato skin. Tip: the sawing motion should be very slight, just a quick back and forth motion moving along tomato. Cut the tomatoes in half and use your finger to flick out the seeds.
  • Heat 2 tablespoons olive oil in a wide pan over medium-high heat until quite hot. Add the fresh and canned tomatoes, red pepper flakes, and season lightly with the salt and pepper. (I always start with a light hand with the salt and pepper because as the tomatoes reduce, the salt will become concentrated.) Cook tomatoes for a few minutes so soften.Crush tomatoes in the pan using a potato masher. Continue cooking until tomatoes are tender and sauce has thickened, 20 to 25 minutes.
  • Taste and season lightly with salt again, keeping in mind the pasta will be plenty salty. If the sauce is too tart because your fresh tomatoes were not super ripe, add a 1/2 teaspoon of sugar.(You can make the sauce, which yields about 2-3 cups, ahead of time. Refrigerate it for up to two days or freeze it for longer storage.)
  • While the tomatoes are cooking, make the basil-garlic oil. Heat a small saucepan over low heat with 1/4 cup olive oil, garlic cloves, basil leaves and pepper flakes until the garlic is lightly browned. Keep the heat on low to allow the ingredients to warm slowly and release their flavors. Turn heat off and let cool for 10 minutes. The longer you let the oil sit, the more infused the oil. Strain the oil, discarding the solids.
