CREAMY CHICKEN AND MUSHROOM FRICASSEE

Steps:
- Rub chicken thighs with salt and pepper. In 5-quart Dutch oven, melt 2 tablespoons of the butter over medium-high heat. Cook chicken in butter 2 to 4 minutes on each side or until browned; transfer to plate.
- Melt remaining 1 tablespoon butter in Dutch oven. Cook onions, carrot and celery in butter 4 to 6 minutes, stirring frequently, until vegetables are softened. Add mushrooms; cook 8 to 10 minutes, stirring occasionally, until mushrooms brown.
- Stir in flour; cook 30 seconds to 1 minute or until flour coats vegetables and smells nutty. Stir in wine; simmer 1 to 2 minutes, stirring constantly, until thickened. Add broth and chicken. Heat to boiling. Reduce heat to medium-low; simmer 12 to 15 minutes or until juice of chicken is clear when thickest part is cut (at least 165°F) and sauce thickens. Stir in whipping cream, lemon juice and fresh herbs.

- Heat oil in large frying pan on medium heat. Add chicken and onion; cook until chicken is cooked through and onion is tender, stirring frequently.
- Stir in soup and mushrooms. Add water, wine, thyme and salt; mix well. Bring to boil. Remove from heat.
- Add rice and parsley; stir. Cover and let stand 5 minutes. Sprinkle with bacon.

- Sprinkle chicken with salt and pepper. Melt butter in heavy large skillet over medium-high heat. Add chicken, mushrooms, leek and tarragon. Sauté 8 minutes. Add wine and cream. Reduce heat to medium. Cover skillet; simmer until chicken is cooked through, about 2 minutes. Uncover; simmer until mushrooms and leek are tender and sauce thickens enough to coat spoon, about 2 minutes longer. Season with salt and pepper.
DELICIOUS CHICKEN FRICASSEE
This chicken fricassee recipe has wine and sour cream and mushrooms. I suggest serving this over wild rice. Yummy!

Steps:
- Brown chicken over high heat in a deep saute pan or dutch oven coated with nonstick spray.
- Remove chicken to a platter.
- Add onion, mushrooms, and garlic to same pan and cook for at least 3 minutes, or until vegis are soft.
- If you are using wine, add it now and cook over high heat 1 minute.
- Add 3 cups of broth, and bring to a boil.
- Reduce the heat to a simmer.
- Combine the cornstarch with the remaining cup of broth mixing thoroughly.
- Add to pan and stir until broth thickens slightly.
- Return chicken to pan and cook until chicken is cooked through, about 15 minutes.
- Removed from heat and add the spices and sour cream.
- Sprinkle with parsley.

- Preheat the oven to 425°. Arrange the chicken pieces, skin side up, on a rack set on a large rimmed baking sheet; season generously with salt and pepper. Roast the chicken in the center of the oven for about 45 minutes, until cooked through and the skin is crisp.
- Meanwhile, in a large, deep skillet, heat the olive oil. Add the onion and cook over moderate heat, stirring, until just softened, about 3 minutes. Add the mushrooms, raise the heat to high and cook, stirring occasionally, until softened and lightly browned, about 5 minutes. Add the garlic, bay leaves and thyme and cook until fragrant, about 1 minute. Add the wine and cook until evaporated, scraping up any browned bits, about 5 minutes. - Pat the chicken dry, and lightly pound the chicken breast to an even layer using a meat mallet (or a metal ladle). Season both sides with salt and pepper.
- Heat a medium size skillet over medium high heat. Add the butter and olive oil, and cook the chicken on 4 minutes per side. Remove chicken from skillet and transfer to a plate.
- Add the mushrooms, onions and wine to the skillet and cook for 8-10 minutes, until the liquid has evaporated and the mushrooms are browned, stirring occasionally. Add the garlic and flour, and stir for 1 minute. Add the chicken broth to the mushroom mixture, scraping up the browned bits. Add the chicken back to the skillet, cover with a lid and cook until the chicken is cooked thru to 165 degrees, about 5-10 minutes. Remove the chicken from the pan and tent with foil.
- In a medium size mixing bowl, whisk together the sour cream and egg yolk. Add in a ladle full of the mushroom mixture to the sour cream sauce, and whisk to temper. Then add the sour cream mixture to the pan and stir to combine. Add lemon zest, lemon juice and parsley. Taste for salt and pepper. Pour the mushroom mixture over the chicken.
